2 lbs boneless chicken breasts, cut into chunks
1 lb medium or large shrimp, shelled & deveined
2 yellow bell peppers, seeded & cut into strips
2 broccoli crowns, cut into florets
2 cups chicken broth (or 14 oz can)
2 tbsp brown sugar
1 tbsp cider vinegar
3 tbsp soy sauce
2 tbsp sesame oil
3, 4 garlic cloves, finely minced (or garlic powder)
1/4 cup cornstarch + 1/4 cup water
sesame seeds (garnish)
1 tbsp ginger (optional)

Steps:

  • Cut chicken breasts into about 1-inch chunks or flat pieces. Heat olive oil in a large non-stick skillet or wok if available. Saute chicken pieces for about 5 minutes or until slightly browned. Then add the shrimp, cooking another few minutes until cooked through. Add broccoli and bell pepper, saute a few minutes enough to retain crispness. In a saucepan, mix together chicken broth, cider vinegar, soy sauce, sesame oil, and minced garlic. Bring to a boil over high heat, stirring constantly, a few minutes and then reduce to low. Add cornstarch/water mixture, simmer and stir vigorously to avoid clumping. Pour sauce into the skillet and mix ingredients together until thoroughly coated. Cook for another few minutes until ready to plate. Garnish with sesame seeds and serve with rice . *Just a reminder to continually taste-test your sauces (especially when making them separately) throughout the cooking process. Even the most exact measurements of ingredients usually do not produce the same results. What's spicy, salty, bland, sweet, and sour to me will most likely be different than your taste profile. This helpful tidbit works well with all recipes and it's something I remind myself while cooking.

1-inch piece peeled fresh ginger, minced
1 tablespoon soy sauce
2 tablespoons sugar
1 tablespoon, plus 1 teaspoon cornstarch
1 1/4 teaspoons kosher salt and freshly ground black pepper
1 tablespoon dry sherry
1 tablespoon dark sesame oil
About 1/3 cup chicken broth or water
3 tablespoons vegetable oil
5 cups broccoli, trimmed sliced stalks (about 1/4-inch thick) and medium florets (keep the 2 cuts separate)

Steps:

  • Toss the chicken with about half the garlic and ginger, the soy sauce, sugar, 1 teaspoon of the cornstarch, 1 teaspoon of the salt, the sherry, and the sesame oil in a bowl. Marinate at room temperature for 15 minutes. Mix the remaining cornstarch with the 1/3 cup broth or water.
  • Heat a large nonstick skillet over high heat. Add 1 tablespoon of the oil and heat. Add the broccoli stems, and stir-fry for 1 minute. Add the florets and the remaining garlic, ginger, 2 tablespoons of water, and season with 1/4 teaspoon salt, and pepper, to taste. Stir-fry until the broccoli is bright green but still crisp, about 2 minutes. Transfer to a plate.
  • Get the skillet good and hot again, and then heat 2 more tablespoons oil. Add the chicken and stir-fry until the chicken loses its raw color and gets a little brown, 3 to 4 minutes. Return the broccoli to the pan and toss to heat through. Stir in the reserved cornstarch mixture and bring to a boil to thicken. Add more water if need to thin the sauce, if necessary. Taste and season with salt and pepper, if you like. Mound the stir-fry on a serving platter or divide among 4 plates; serve with rice.

2 tablespoons sugar

1 tablespoon, plus 1 teaspoon cornstarch

Steps:

  • In a medium bowl, toss the chicken with the scallion whites, sugar, sesame oil, sherry, soy sauce, about half the garlic, half the ginger, 1 teaspoon of the cornstarch and 1 teaspoon salt. Marinate at room temperature for 15 minutes. Mix the remaining 1 tablespoon cornstarch with 1/3 cup water in a small bowl and reserve.

250 g pork loin
12 -18 prawns or 12 -18 shrimp, raw
1 tablespoon oil
1 tablespoon light soya sauce
2 teaspoons sherry wine, dry
1/2 teaspoon pepper, fresh ground
3 teaspoons oyster sauce
1 teaspoon sesame oil
1 garlic clove, crushed
1 teaspoon gingerroot, grated, fresh
1/4 teaspoon chili flakes
1/2 cup chicken stock
1 tablespoon light soya sauce, with a dash of dark soya in it
3 cups vegetables, of your own choice
1 teaspoon cornflour, heaped

Steps:

  • Cut pork into thin strips and add the Soya Sauce, Sherry, half the garlic and ginger to the pork, plus the black pepper mix and leave for at least half an hour for the flavors to merge. set to one side while you shell the Prawns if necessary (cooked prawns do not really give the same flavor as raw ones).
  • Prepare vegetables, of your own choice, i.e. bok choy, bean sprouts, capsicum, onion, broccoli, asparagus, Chinese leaf, baby corn--a mixture is great. Add the chili, crushed, place to one side.
  • Blanche asparagus and broccoli for 2 minutes then add to the other vegetables - this ensures that all the vegetables will cook at the same time.
  • In a cup place the stock, sesame oil and oyster sauce together mixing the corn flour with enough water to mix then add to the sauce.
  • Drain the marinade off the pork into the stock.
  • Heat wok and add half of the oil. Stir fry the vegetables adding the remaining garlic and ginger, plus the chilli flakes - place in warm oven. Add remainder of the oil to wok and quickly stir fry the meat for just a minute or two, adding the prawns for just another few minutes until they change colour, this does not take long add the stock having stirred it first as the cornflour will settle to the bottom and stir until it thickens.
  • Toss the vegetables in and quickly stir.
  • Serve separately with cooked noodles of your choice.
