CHICKEN AND BROCCOLI ROLL-UPS



Chicken and Broccoli Roll-Ups image

We've turned a classic frozen dinner that you'd find at your local supermarket into an easy, healthy option.

Number Of Ingredients 8

1 tablespoon unsalted butter
1 tablespoon gluten-free flour blend
1 cup unsweetened almond milk, warmed
2 cloves garlic, smashed
4 ounces Swiss cheese, shredded
Kosher salt and freshly ground black pepper
16 broccoli florets, halved and blanched
4 boneless, skinless chicken breasts, flattened to about 1/8-inch thick

Steps:

  • In a small saucepan, melt the butter over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the warmed almond milk and cook, whisking, until steaming hot and thick, about 6 minutes. Remove from the heat and stir in the garlic and cheese until the cheese is melted, then season to taste with salt and pepper. Stir in half of the broccoli florets until coated.
  • Meanwhile, preheat the oven to 375 degrees F. Place 2 (uncoated) broccoli florets in the center of each chicken piece and roll up to seal. Transfer half of the cheese sauce to a 6-cup glass baking dish and arrange the chicken roll-ups, seam-side down, on top. Cover with the remaining cheese sauce and bake until cooked through, about 30 minutes.
  • To eat now: Slice each chicken roll-up crosswise, arrange on 4 plates and drizzle with cheese sauce.
  • To freeze and eat later: Cover the glass baking dish with a tight-fitting lid and freeze up to 1 month. To thaw, place in the fridge overnight. Cover with foil and bake in a 400 degree F oven until heated through, about 20 minutes.

This simple weeknight stir-fry is comforting and satisfying. The broccoli stems are used to add textural contrast and also to help bulk up the dish, and why waste them?

1 pound chicken breast (about 2 breasts), cubed
3 scallions, whites only, thinly sliced on a bias
2 tablespoons sugar
1 tablespoon dark sesame oil
1 tablespoon dry sherry
1 tablespoon soy sauce
2 cloves garlic, minced
1-inch piece peeled fresh ginger, minced
1 tablespoon, plus 1 teaspoon cornstarch
Kosher salt and freshly ground black pepper
About 1/3 cup water
3 tablespoons vegetable oil
5 to 6 cups broccoli florets and sliced stalks (keep the 2 cuts separate)
3/4 to 1 teaspoon red chili flakes, optional
1 tablespoon hoisin sauce
Ttoasted sesame seeds, for serving, optional
Jasmine rice, for serving, optional

Steps:

  • In a medium bowl, toss the chicken with the scallion whites, sugar, sesame oil, sherry, soy sauce, about half the garlic, half the ginger, 1 teaspoon of the cornstarch and 1 teaspoon salt. Marinate at room temperature for 15 minutes. Mix the remaining 1 tablespoon cornstarch with 1/3 cup water in a small bowl and reserve.
  • Heat a large nonstick skillet over high heat. Add 1 tablespoon of the vegetable oil and heat. Add the broccoli stems and stir-fry for 30 seconds. Add the florets and the remaining garlic and ginger, 2 tablespoons water, 1/4 teaspoon salt and some black pepper. Stir-fry until the broccoli is bright green but still crisp, about 2 minutes. Transfer to a plate.
  • Get the skillet good and hot again, and then heat the remaining 2 tablespoons vegetable oil. Add the chicken and red pepper flakes if using. Stir-fry until the chicken loses its raw color and gets a little brown, about 3 minutes. Add the hoisin sauce, return the broccoli to the pan and toss to heat through. Stir in the reserved cornstarch mixture and bring to a boil to thicken. Add more water if need to thin the sauce, if necessary. Taste and season with salt and pepper, if you like.
  • Mound the stir-fry on a serving platter or divide among 4 plates and garnish with sesame seeds; serve with rice.

2 cups chopped, cooked chicken meat
2 cups fresh chopped broccoli
½ cup chopped onion
½ cup chopped green bell pepper
1 ½ cups shredded Cheddar cheese
½ cup mayonnaise
2 tablespoons Dijon-style prepared mustard
salt and pepper to taste
1 tablespoon minced garlic
1 (8 ounce) package refrigerated crescent rolls

Steps:

  • In a large bowl, combine the chicken, broccoli, onions, bell pepper, cheese, mayonnaise, mustard, salt, pepper and garlic. Mix all together.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Cover a cookie sheet with aluminum foil. Place a glass upside down in the center of the cookie sheet. Roll out crescent rolls around the base of the glass, with pointy ends away from the glass; when you're finished, the arrangement will look like the sun. Spoon some of the chicken mixture onto the thick part of each crescent roll. Fold the pointy end of each roll over the top of the mixture and tuck in the middle. Remove glass from cookie sheet. Arrangement of rolls will now look like a fluted tube cake.
  • Bake in preheated oven for 25 to 30 minutes, or until rolls are golden brown.

2 cups shredded monterey jack cheese
1 (10 ounce) container refrigerated four cheese sauce or 1 (10 ounce) container alfredo sauce
1 lb frozen broccoli cuts, thawed
8 flour tortillas (7 or 8 inch)
paprika

Steps:

  • Heat oven to 350.
  • Spray 13X9 inch (3 qt) baking dish.
  • In lge bowl combine chicken, 1 cup of the cheese, cheese sauce and broccoli; mix well.
  • Spoon generous 1/2 cup chicken mixture on each tortilla; roll up, enclosing filling.
  • Place in coated baking dish; cover with foil.
  • Bake for 30 minutes; remove foil, sprinkle with remaining cheese; bake an additional 3 minutes to melt cheese.
  • Sprinkle with paprika.
