My grandma's recipe for beef rolls is easy to change up. Load them with ham, veggies, even olives. While they bake, I whip up au jus for dipping. -Kent Call, Riverside, Utah

1/2 pound lean ground beef (90% lean)
2 cups chopped fresh broccoli
1 small onion, chopped
1/2 teaspoon salt
1/4 teaspoon pepper
6 hard rolls
2 cups shredded cheddar cheese, divided

Steps:

  • Preheat to 325°. In a large skillet, cook and crumble beef with broccoli and onion over medium heat until no longer pink, 4-6 minutes. Stir in salt and pepper., Cut one-third off the top of each roll; discard or save for another use. Hollow out bottoms, leaving 1/2-in.-thick shells; place on a baking sheet., Tear bread removed from centers into 1/2-in. pieces and place in a bowl. Stir in 1-1/2 cups cheese and beef mixture. Spoon into bread shells. Sprinkle with remaining cheese. Bake until heated through and cheese is melted, 10-15 minutes.

4 cups finely chopped broccoli florets (about 13 ounces)
2 tablespoons olive oil
1/4 teaspoon crushed red pepper flakes
1 clove garlic, finely chopped
Kosher salt and freshly ground black pepper
6 ounces cream cheese, diced
Nonstick cooking spray, for greasing the pan
Two 8-ounce tubes refrigerated crescent roll dough
5 slices Cheddar, cut in half (about 5 ounces)
Ranch dressing, for serving

Steps:

  • Preheat the oven to 375 degrees F. Add the broccoli, oil, crushed red pepper, garlic and 2/3 cup water to a large skillet and stir until combined. Cover and bring to a boil. Let the broccoli steam until bright green and just crisp tender, about 3 minutes. Remove the lid and let the water continue to boil until it is completely evaporated, 3 to 4 minutes. Stir in 1/2 teaspoon salt and a few grinds of pepper and transfer to a medium bowl. Let cool slightly, about 15 minutes. Stir the cream cheese.
  • Coat the back of a baking sheet with cooking spray. Unroll both cans of crescent dough and separate unto 16 triangles. Put a 5-inch ramekin in the center of the prepared baking sheet. Arrange the triangles in a ring around the ramekin so the short sides of the dough are touching the ramekin, overlapping slightly, and the pointed ends are facing outward (it should look like a giant sun).
  • Spoon the broccoli mixture over the short ends of the triangles closest to the ramekin. Cover the broccoli with the cheese slices and remove the ramekin. Take hold of the pointed end of one of the triangles and fold it up and over the filling, tucking the tip under the bottom edge of dough to secure (the dough will not cover the filling completely). Repeat with the remaining triangles (there will be some gaps where you can see the broccoli mixture).
  • Bake until the dough is golden brown and the cheese is melted, about 25 minutes. Let cool for 15 minutes. Use a spatula to slide the ring off the baking sheet onto a platter. Serve with Ranch dressing for dipping.

1 lb fresh broccoli
4 ounces mozzarella cheese (sub fat free) or 4 ounces cheddar cheese (sub fat free)
1/2 cup chopped onion
1/2 cup sour cream (sub fat free)
1/4 teaspoon salt and pepper
2 (8 ounce) packages crescent rolls (sub reduced fat rolls)

Steps:

  • Brown ground beef or turkey and drain.
  • Add cut up broccoli, cheese (mozzarella for beef, cheddar for turkey), onion, sour cream, salt and pepper.
  • Mix well and simmer 10 minutes.
  • Preheat oven to 375 degrees.
  • Roll out one package of c resent rolls on a ungreased cookie sheet.
  • Add filling.
  • Roll out the other package of crescent rolls on top of mixture, pinching the sides so mixture stays inside.
  • Bake 18 to 22 minutes.
  • This is one of my all time favorites. I really love the turkey and cheddar one. I sub fat-free when ever I can.

1 tub (8 oz.) PHILADELPHIA Spicy Jalapeño Cream Cheese Spread
1 pkg. (10 oz.) frozen chopped broccoli, cooked, well drained and cooled
1-1/2 cups KRAFT Finely Shredded Sharp Cheddar Cheese
24 sheets frozen phyllo dough, thawed

Steps:

  • Heat oven to 375ºF.
  • Combine first 3 ingredients. Stack 4 phyllo sheets, spraying each layer with cooking spray before covering with next sheet. Cover remaining phyllo sheets and set aside until ready to use.
  • Spread about 1/3 cup broccoli mixture onto one short side of phyllo stack. Fold in long sides of stack, then roll up starting at topped short side. Place, seam side down, on parchment-covered baking sheets; spray lightly with cooking spray. Cover loosely until ready to bake.
  • Repeat with remaining phyllo sheets and filling.
  • Bake 14 to 16 min. or until golden brown. Cool slightly. Transfer to cutting board. Use serrated knife to cut each log into 6 slices.

1 1/2 lbs ground beef
1/4 cup dry breadcrumbs
2 tablespoons barbecue sauce
1 egg
1 teaspoon salt
1 cup shredded cheddar cheese

2 tablespoons water

Steps:

  • Combine all the ingredients listed for the meat mixture.
  • Mix well.
  • Shape into an 8x14 rectangle on foil or a piece of plastic wrap.
  • Combine all the ingredients listed for the filling mixture.
  • Pat cheese mixture over meat.
  • Roll up in jellyroll fashion and chill overnight or for several hours.
  • Preheat oven to 350 degrees.
  • Slice meat roll into 6 rolls.
  • Bake in a shallow pan for 25 to 30 minutes.

Comfort food that is well worth the effort! These delicious rolls contain a filling made with bacon, mushrooms, and FRESH bread slices crumbled-- NO pickle so DH appreciates that. I use sandwich steak, round steak or sirloin and cut into 8 THIN pieces. Serve it with mashed potatoes. Sometimes sirloin is already cut thin which works great! Notice how it is in the oven for 2 hours so you can do something else. Set out your lemon to get it to room temperature. You will need string, cut about 5 inches in length to keep these together. I appreciate puppitypup for noticing that the onions needed explaining.

2 tablespoons butter
3 slices bacon, finely chopped
4 ounces mushrooms, chopped
1 tablespoon fresh parsley, chopped
1/2-1 lemon, zest and juice
2 cups fresh breadcrumbs
2 teaspoons dill weed
salt, to taste
1/4 teaspoon pepper
1 1/2 lbs sandwich steaks, cut into 8 THIN pieces
3 tablespoons flour
1/2 teaspoon paprika
3 tablespoons oil
2 onions, sliced
1 3/4 cups beef stock
salt
pepper

Steps:

  • Preheat oven to 325 degrees.
  • Melt the butter in a large saute pan and fry the bacon and mushrooms for 3 minutes; put into medium size bowl; do not wash saute pan as you will use it again for Step 7.
  • Add to mushroom mixture, the chopped parsley, lemon rind and juice, bread crumbs, and seasoning.
  • Spread an equal amount of the bread crumb mixture evenly over the beef slices, leaving a narrow border clear around the edges.
  • Put flour onto dinner size plate and mix paprika into flour.
  • Roll up the slices and tie securely with fine string, then dip the beef rolls in the flour/paprika mixture to coat lightly, shaking off any excess flour into a small bowl and RESERVE for thickening later.
  • Heat the oil in the frying pan that you used earlier, saute the beef rolls until lightly browned and set rolls in casserole (that has a lid).
  • Pour into frying pan the beef stock, onions, reserved flour; stir constantly, bring to a boil, stirring, and simmer for 2-3 minutes.
  • Taste test the sauce, add more salt and pepper if needed.
  • Pour the sauce over beef rolls, then cover with tight fitting lid and bake in the oven for 2 hours.
  • Lift out the "rolls" using a slotted spoon and remove the string.
  • Return beef to the sauce and serve hot.

1 1/2 lbs lean hamburger
1/2 cup old-fashioned oatmeal, can sub dried bread crumbs
1/4 cup milk
1/4 cup finely chopped onion
1 teaspoon seasoning salt
1 teaspoon Worcestershire sauce
1 egg
4 -6 slices deli ham (thin slices)
1 (10 ounce) package frozen chopped broccoli, thawed and drained
10 slices American cheese, can sub cheddar or 10 slices colby-monterey jack cheese, divided

Steps:

  • In large bowl combine first 7 ingredients til very well mixed.
  • Place mixture onto a sheet of foil.
  • Press out to a flat, even 8"x10" rectangle.
  • Top evenly with 6 slices ham to within 1/2" of edges.
  • Top with 6 slices american cheese.
  • Sprinkle cheese layer with chopped broccoli evenly. Chop any big pieces smaller.
  • Roll up starting from long side, lifting and using the foil to help you roll it all up.
  • Roll up tightly.
  • Pinch ends and seam closed VERY well. Place seam side down onto cookie sheet, or keep on the foil (seam side down)and place onto cookie sheet, that's what I did. Easier clean up!
  • Sprinkle with a little coarse ground pepper.
  • Bake in 350º oven for 55 minutes.
  • Cut remaining 4 slices cheese in half corner to corner. Place on top of meatloaf nicely, overlapping slices slightly, showing pointed sides.
  • Bake 5 minutes longer or til cheese is just melted.
  • Let rest 15-20 minutes before slicing.
  • Good served with mashed potatoes, baby carrots and fresh rolls.
  • *Some hams can turn ground beef slightly pink. It is done in 1 hour. Just check juices to see if they are running clear.
  • **"Do-ahead" Tip:This can be rolled up and refrigerated (covered)for up to 24 hours before baking.
