Growing up I always loved my mom's broccoli and cauliflower soup! Now that I'm an adult, I've created my own version suited to my personal tastes. This is a vegetarian soup and can easily be made vegan with dairy substitutes (I use soy milk). My fiance likes reduced-fat sharp Cheddar and crackers with his soup. Enjoy!

1 teaspoon extra-virgin olive oil, or as needed
½ yellow onion, chopped
1 leek, diced
3 cloves garlic, minced
1 head cauliflower, cut into florets
½ head broccoli, cut into florets
3 red potatoes, cut into bite-size pieces
1 (32 ounce) carton low-sodium vegetable broth
water to cover
1 tablespoon nutritional yeast, or more to taste
½ teaspoon ground turmeric
1 bay leaf
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
1 (12 fluid ounce) can fat-free evaporated milk
3 tablespoons whole wheat flour, or as needed
1 tablespoon curry powder

Steps:

  • Heat olive oil in a stockpot over medium-low heat; cook and stir onion, leek, and garlic until fragrant, 3 to 5 minutes. Add cauliflower, broccoli, and potatoes to onion mixture; cook and stir until potatoes are lightly browned, about 5 minutes.
  • Increase heat to medium-high; stir broth and enough water to cover vegetables into mixture. Stir curry powder, turmeric, bay leaf, salt, black pepper, and cayenne pepper into broth-vegetable mixture. Loosely cover pot with a lid and bring soup to a boil; reduce heat and simmer until vegetables are softened, 20 to 25 minutes.
  • Whisk milk and flour together in a bowl until smooth and thickened; stir into soup along with nutritional yeast until soup is slightly thickened, about 5 minutes. Remove soup from heat and allow to slightly cool and thicken.

My boss brought this soup to the office one fine day and I was hooked on it from the first taste. It is a snap to make and the flavors are mild, yet very distinct. My kids loved it the first time I made it at home and it instantly became known as 'Tim Perry's Soup.' You might like a stronger curry flavour or a creamier soup, so adjust the seasonings to your taste. It's ready within the hour, but the longer it simmers the better the flavor. Serve with crusty bread and butter.

Steps:

  • In a stockpot, combine chicken broth, onion, cauliflower, and broccoli. Bring to a boil and reduce heat to low. Continue to simmer until vegetables are tender. Season with curry powder, chicken bouillon, salt, and pepper.
  • In a bowl, combine flour and 1/2 cup of the milk. Whisk briskly until there are no lumps. Add mixture to soup, stirring continuously as soup thickens. Stir in Cheddar cheese until completely melted.

8 ounces chopped frozen cauliflower
2 tablespoons minced garlic
1/2 cup chopped onion
1/2 cup chopped celery
4 cups chicken broth
1 tablespoon butter
1 tablespoon flour
1 cup whole milk
salt and pepper

Steps:

  • Melt butter in a large saucepan, and saute the celery, onions, and garlic until browned.
  • Add flour, stirring for one minute before adding chicken broth.
  • Add broccoli and cauliflower. Boil until soft.
  • Add salt, pepper and milk. Let boil lightly for a few more minutes. Put half in a blender, blending until smooth. Add back to pot.

3 cups fresh broccoli florets
3 cups fresh cauliflower florets
3 celery ribs, sliced
1 small vidalia onion, chopped fine
2 cups water (or vegetable stock is fine too)
3 tablespoons butter
3 tablespoons flour
2 1/3 cups milk
1 lb process cheese, cubed (Velveeta)

Steps:

  • In a large saucepan, combine the broccoli, cauliflower, celery, onion, and water (or veggie) stock.
  • Bring to a boil then reduce heat and cover to simmer for 10-12 minutes or until vegetables are tender.
  • While vegetables are simmering, in a small saucepan, melt butter.
  • Stir the flour into the butter until smooth.
  • Gradually stir in milk to the flour mixture and bring this to a boil then cook and stir for 2 minutes or until thickened.
  • Reduce heat to the milk mixture and add the cheese then cook and stir until cheese is melted.
  • Drain vegetables and place back into their saucepan.
  • Add cheese sauce to the vegetables and heat through.

3 Tablespoon unsalted butter
1 1/2 cups yellow onion (diced (1 small onion))
4 garlic cloves (finely chopped)
Salt (to taste)
3 Tablespoon all-purpose flour
2 1/2 cups vegetable stock
2 cups half-and-half (room temperature)
Black pepper (to taste)
1/8 tsp white pepper
2 cups broccoli florets (chopped)
2 cups cauliflower florets (chopped )
1 large carrot (shredded*)
8 oz. cheddar cheese (shredded* (2 cups once shredded))

Steps:

  • In a dutch oven or stockpot, melt butter over medium heat and add diced onion. Sautee for a minute, then add garlic with a pinch of salt; continue sauteing for 2 minutes.
  • Whisk in flour, continuing to whisk for 1-2 minutes to cook the flour down. Whisk in vegetable stock, incorporating with the flour mixture. Add half-and-half, salt, and pepper (to taste), and white pepper. Then add broccoli, cauliflower, and carrot. Simmer - do not boil - for 15-20 minutes until vegetables are just tender enough to be pierced with a fork.
  • Remove from heat, and stir in shredded cheese in batches. Adjust salt and pepper as your taste desires, and serve!
  • Using the sautee function of your Instant Pot, melt butter and add diced onion. Sautee for a minute, and add garlic with a pinch of salt. Whisk in flour, continuing to whisk for 1-2 minutes to cook the flour down. Add white and black pepper, and an additional pinch of salt. Whisk in 2 cups vegetable stock, incorporating with the flour mixture. Add broccoli, cauliflower, and carrot.
  • Put the lid on the Instant Pot, making it is sealed. Set to high pressure for zero minutes. Once it's come to pressure, carefully quick release the pressure.
  • While the Instant Pot is working its magic, warm the half-and-half in a small saucepan on the stove. Once you've released the pressure after cooking, stir in half-and-half. Add shredded cheese in batches, stirring to melt in between each addition. Adjust salt level according to taste (since you weren't able to while cooking).

1/2 head cauliflower, cut into florets
1/2 head broccoli, cut into florets
1 tablespoon extra virgin olive oil
salt and pepper
1 tablespoon butter
1 onion, chopped
4 cups water
2 cups chicken broth
parsley
thyme
oregano
garlic
creole seasoning (I use this on everything!)
1/4 cup shredded cheese
2 green onions

Steps:

  • Preheat oven to 450 degrees. Toss cauliflower and broccoli on baking sheet with the EVOO, salt, pepper and garlic. Roast approx 25 minutes or until spotted with brown.
  • Melt butter in soup-sized pan over medium-high heat. Saute onions until soft. Add cauliflower, broccoli, water, broth, seasonings and bring to boil. Reduce heat and simmer for 5 minutes.
  • Puree large pieces of soup and return to pan. Depending on what consistency you want, you may decide to just puree half of the veggies and leave the others. Reheat if necessary. Top soup with shredded cheese and green onions.

1 teaspoon salt
1/2 teaspoon dry mustard powder
1/2 teaspoon red pepper flakes

½ cup heavy whipping cream
2 cups shredded cheddar
12 ounces broccoli florets

Steps:

  • Dice the onion and mince the garlic.
  • Add the butter to large, deep heavy bottomed pot over low heat and let melt.
  • Add the onion and garlic to the pot and cook, stirring often, for 5 minutes to soften.
  • Add the cauliflower, salt, mustard powder, red pepper flakes, and chicken broth to the pot and increase heat to medium.
  • Bring to a boil and reduce to a simmer, stirring occasionally.
  • Simmer for 15 minutes.
  • Use an immersion blender to blend the soup until smooth and creamy. Alternately, carefully transfer the hot soup to a blender and blend.
  • Add the cream and cheddar to the soup and stir well to combine.
  • When the cheese has fully melted, add the broccoli to the soup and cook for 5-10 minutes or until broccoli is as soft as you'd like, stirring occasionally.

Steps:

  • Roughly chop the onion, garlic, broccoli and cauliflower. Firstly add the onion, garlic and cooking oil to a large cooking pot (for a healthier option try sunflower fry spray).
  • Once the onion and garlic has softened (this will only take a couple of minutes) add the chopped broccoli and cauliflower. Then add the stock, this should cover approx. half the ingredients. For more broth type soup add approx. another 100-200ml of water
  • Add a pinch of salt and pepper and then bring the stock to a simmer and cover with lid. Once the ingredients have become soft (after approx. 20 mins) pour the ingredients into a blender or use a hand blender.
  • Tip - For a creamer soup add cream or a couple of potatoes (bear in mind, potatoes will take longer to cook, so consider part boiling them before adding into the soup pot). This soup can also be frozen.

4 stalks celery, chopped
2 medium onions, chopped
1 head cauliflower, core removed and rough chopped
6 cups broccoli florets
1 (18 1/2 ounce) can chicken broth or 1 (18 1/2 ounce) can vegetable broth
1 (12 ounce) can evaporated milk
1 teaspoon kosher salt or 1/2 teaspoon table salt
1/2 teaspoon ground black pepper

  • Heat oil in a large soup pot Add onions and celery and cook until tender Add cauliflower and broccoli and cook for five minutes stirring occasionally S& P to taste Add 3 cans of broth and cook for 15 minutes until veggies are cooked through Do not cover (and your cauliflower won't have a strong "cabbagey" smell) Mash veggies with a potato masher until in small pieces Add thyme, last can of broth and one can evaporated milk This soup may be made "richer" by omitting the last can of broth and adding two cans of evaporated milk. If you do, be sure not to boil. Treat as you would any cream soup/stew/chowder.

1 large head cauliflower
4 large head of broccoli
1 small onion, diced (optional)
1 stalk celery, diced (optional)
equivalent of 2 tablespoons chicken bouillon
2 (10 1/2 ounce) cans cream of chicken soup
2 (10 1/2 ounce) cans cream of mushroom soup
1 (10 1/2 ounce) can cream of celery soup
finely grated cheese (optional)
seasoned croutons (optional)
salt & pepper

Steps:

  • In a large pot sauté, Onion & Celery if used, when translucent, place 2-3 cups of water in pot and bring to a boil. Add Cauliflower & Broccoli, cover and cook over medium heat, until just before tender, about 5 minutes. Do not drain water. Add bouillon ( I use a soup base, not the cubes) to water and then add all the soups. Mix and add additional water to the desired thickness. I also use a Stick Blender at this time to chop up some of the larger chunks of the Broccoli & Cauliflower, be careful not to pulverize all of the chunks. Leave some of the chunks to give it texture. I then add some fine grated cheese to the top of the bowls and some flavored croutons.
