ROASTED BROCCOLI WITH GARLIC



Roasted Broccoli with Garlic image

Roasting broccoli until it is tender and lightly browned will quickly become your favorite way to enjoy it. Simply toss with a few seasonings and pop into a super-hot oven for great results every time.

1 bunch broccoli (about 1 1/2 pounds), cut into florets, stems peeled and sliced or diced
2 tablespoons extra-virgin olive oil
3 cloves garlic, sliced
Kosher salt and freshly ground pepper

Steps:

  • Preheat oven to 450 degrees F.
  • Toss the broccoli florets with the olive oil, garlic, salt, and pepper on a baking sheet. Spread them out and then roast, without stirring, until the edges are crispy and the stems are crisp tender, about 20 minutes.
  • Serve warm.

Brighten up basic boiled broccoli with lemon wedges.

1 bunch broccoli (about 1 pound)
Kosher salt and freshly ground black pepper
Lemon wedges, for serving

Steps:

  • Wash the broccoli in cold water and pat dry. Peel the stem and trim right where the florets branch off. Break apart the florets.
  • Bring a pot of salted water to a boil. Add the broccoli florets and cook, uncovered, until tender, 2 to 3 minutes depending on the size of the florets. Drain into a colander, transfer to a plate, sprinkle with salt and pepper and serve with lemon wedges.

SAUTEED BROCCOLI

1 pound broccoli
3 tablespoons extra-virgin olive oil
1 large clove garlic, chopped
1 large pinch dried red chili flakes, or to taste
Kosher salt to taste

Steps:

  • Cut the broccoli into 1 1/2-inch florets and reserve the stalks. Peel the stalks and cut them into 1/4-inch-thick slices. In a large pot of salted water, cook the broccoli until crisp-tender. Drain and refresh the broccoli under cold running water.
  • When ready to serve, heat the oil in a large skillet over medium heat. Add the garlic and saute until golden, about 3 minutes. Add the chili flakes and saute for 30 seconds more. Add the broccoli and saute over high heat, tossing until heated through, about 2 to 3 minutes. Season with salt. Serve immediately.
