A riff on a simple Italian dish, except made with broccoli instead of pasta.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Bring a large pot of salted water to a boil. Quarter broccoli heads lengthwise and add to the boiling water; simmer for 3 minutes. Drain.
- Melt butter in a medium pot over medium heat. Stir in flour and cook for 1 minute. Whisk in milk. Bring to a simmer; cook until thickened, about 5 minutes. Remove from heat and stir in Parmesan cheese, pepper, and salt.
- Transfer drained broccoli to a 9x13-inch baking dish. Pour sauce on top.
- Bake in the preheated oven until hot and bubbly, about 15 minutes. Broil until top starts to brown, 2 to 3 minutes.

- In a pan just wide enough to hold the pasta, place enough water to fill the pan 1 inch from the bottom. Season the water with a pinch of salt and bring to a boil. Spread the pasta in the pan and cook over medium-high heat, stirring occasionally to prevent the pasta from sticking together. Allow the pasta water to reduce; do not add more, as you want the starchy water to be minimal when the remaining ingredients are added.
- Meanwhile, add the coarse black pepper to a separate small pan over medium heat. Toast a minute or two until fragrant.
- Once the pasta is al dente and the pasta water has reduced so only a slight coating remains at the bottom of the pan, turn off the heat and add the toasted ground black pepper and Pecorino-Romano. Stir and toss vigorously until both ingredients are well incorporated into the pasta. Toss in the olive oil and season with salt.
- Transfer the pasta to a large bowl and garnish with more black pepper, Pecorino-Romano and extra-virgin olive oil.

Don't let the ridiculously short ingredient list fool you -- this pasta is incredibly flavorful and oh-so-comforting. That, and the fact that you can throw it together in about 20 minutes just might make it your new favorite weeknight meal.

- Bring a large pot of salted water to a boil. Cook the pasta according to the package directions, reserving 1 cup of the cooking liquid before draining.
- Heat the butter and oil in a large skillet over medium-high heat until the foam from the butter subsides. Add the pepper and cook, stirring, until lightly toasted, about 1 minute. Add the pasta and up to 3/4 cup of the reserved cooking liquid, tossing to coat. Sprinkle the Parmesan on top and continue to cook, tossing, until the cheese is melted and the pasta is well coated, about 2 minutes. Add a little more of the cooking liquid to loosen, if necessary. Season with salt and divide among 4 bowls. Serve with additional Parmesan and pepper.
LEMONY SALMON & CACIO E PEPE LINGUINE
Cacio e Pepe means salt and pepper in Italian, and usually refers to a simple pasta dish consisting of just Parmesan, salt, and freshly cracked black pepper. We're adding tender broccoli, burst tomatoes, and a few other twists to the mix for an unbeatable pasta dinner.

- Prep the ingredients: Preheat the oven to 400 degrees. Bring a large pot of water with a large pinch of salt to a boil. Zest and halve the lemon. Slice one half into rounds for garnish, if desired. Mince or grate the garlic.
- Add the broccoli to the boiling water and cook for 4-5 minutes, until tender. Remove with a slotted spoon and set aside. TIP: To preserve its bright green color, place the broccoli in a bowl of ice water after cooking.
- Cook the pasta: Add the linguine to the boiling water you cooked the broccoli in and cook for 8-10 minutes, until al dente. Drain, reserving ¼ cup pasta water.
- Roast the tomatoes: Toss the tomatoes on a baking sheet with a drizzle of oil and a pinch of salt and pepper. Place in the oven for 10-12 minutes, until they burst.
- Cook the salmon: While the tomatoes roast, heat a drizzle of oil in a large pan over medium-high heat. Pat the salmon dry with paper towels and season on all sides with salt and pepper. Add the salmon to the pan and cook for 3-4 minutes per side, until just opaque in the middle. Set aside.
- In the same pan, heat 2 Tablespoons butter, the garlic, and chili flakes (to taste, we used 1/4 teaspoon) over medium heat. Cook for 30 seconds, until fragrant. Toss the drained pasta, lemon zest, Parmesan, broccoli, burst tomatoes, and ¼ cup pasta water into the pan and toss to combine. Cook, tossing, for 1-2 minutes, until the sauce thickens. Season generously with salt and freshly cracked black pepper.
- Serve the linguine with the salmon on top and finish with a squeeze of lemon. Garnish with a lemon round, if desired, and enjoy!

- Heat the olive oil and 1 tsp [5 ml] coarsely ground black pepper in a 10 inch [25 cm] pan over medium-low heat until the oil shimmers, the peppercorns are fragrant and just starting to sizzle. Add the butter and use a spatula to move and melt it into the oil. Add the dried spaghetti pasta and 2 cups [500 ml] water, making sure the water completely covers the pasta. Crank up the heat to high and start a timer for 10 minutes (if you’re not using Barilla’s Pronto pasta, refer to the manufacturer’s cooking instructions). Let the pasta boil, moving it around from time to time using a spatula so it cooks evenly. Two minutes before the end of the cooking time, lower the heat to medium and keep an eye on the quantity of water leftover in the pan. You don’t want it to evaporate completely, so add up to ¼ cup [60 ml] water if the pan seems dry, tossing the pasta so the additional water distributes evenly and heats up as quickly as possible.
- When the cooking time is done, lower the heat to the minimum, and add the grated cheese. Quickly toss and turn the pasta so the cheese melts into the sauce and coats the spaghetti strands. Remove from the heat and add a generous pinch or two of freshly ground black pepper. Divide between two warm serving bowls and serve immediately, sprinkled with additional cheese, black pepper, if desired.

- Heat a large skillet over medium-high until very hot, 4 to 5 minutes. Toss together Broccolini and 3 tablespoons oil in a large bowl until coated. Add half of Broccolini to skillet, and spread in an even layer. Cook until slightly charred and crisp-tender, 2 to 3 minutes per side. Transfer to a large bowl, and repeat with remaining Broccolini. - Bring about 1cm (1/2 in) salted water to the boil in a medium saucepan. Meanwhile, chop your broccoli into bite sized little trees and slice the stems. When the water is boiling add the broccoli to the pot and cover. Simmer for 4 minutes or until the broccoli is no longer crunchy, drain into a bowl to keep the cooking water.
- Place drained broccoli in a warm serving bowl. Top with cheese. Add 2 tablespoons of the reserved cooking water and stir until the cheese melts to coat the broccoli. If it isn’t melting add another tablespoon of cooking water. But don’t be tempted to add too much or you will end up with a watery puddle.
- Taste broccoli and season with lashing of black pepper. It probably won’t need salt with all the cheese.
