FESTIVE CORN 'N' BROCCOLI



Festive Corn 'n' Broccoli image

This recipe is delicious and versatile. I often substitute a tablespoon of minced fresh basil for the dried, and two to three ears of sweet corn (about a cup cut fresh from the cob) for the Mexicorn. -Lucile Throgmorton, Clovis, New Mexico

1 package (16 ounces) frozen chopped broccoli, thawed
1 can (7 ounces) Mexicorn, drained
1/4 cup butter, cubed
1 teaspoon dried basil
1/2 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper

Steps:

  • In a large cast-iron or other heavy skillet, combine the broccoli, corn and butter; cook over medium heat until butter is melted. Stir in the basil, salt, garlic powder and pepper. Cover and cook until vegetables are tender, 8-10 minutes, stirring occasionally.

  • Wash lettuce.
  • Add to bowl.

  • Add to bowl.
  • Then add corn (water drained).
  • Use dressing of choice.
  • Serve.

8 ears fresh corn
1 small zucchini, diced
1 green pepper, diced (red is fine, too)
1/2 cup chopped red onion
16 sweet pickles, minced
1 cup fresh basil leaf
1/2 cup mayonnaise (light is fine)
1/3 cup beef broth (can use vegetable broth)
1/4 cup sour cream (light is fine)
salt and pepper, totaste

Steps:

  • Remove kernals from cobs, blanch in boiling water for 5 minutes.
  • Drain, rinse and place in a bowl.
  • Add zucchini, peppers, onion and pickles.
  • Toss.
  • In a food processor or blender, whirl basil leaves, mayonnaise, broth and sour cream.
  • Toss with salad.
  • Refrigerate for at least 2 hours.

1 (15 ounce) can black beans, rinsed and drained
2 cups fresh corn, cooked and taken off the cob
2 cups fresh cooked broccoli, cut up small
1 large tomatoes, diced
1/4 cup sweet onion, chopped
1/2 cup green pepper, diced
1/2 cup fresh parsley, chopped
1 fresh lemon
1 tablespoon extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • In a large bowl, combine black beans, corn, broccoli, tomato, onion, pepper and parsley.
  • Juice the lemon and put juice in a samll bowl.
  • Add olive oil, salt and pepper and wisk together.
  • Add to vegetables and stir.
  • Let sit at room temperature for 30 minutes.
  • Stir again and serve.

  • Stir in the broccoli and cook for about 2 minutes, or until broccoli is bright green. Stir in the corn and chili powder. Continue cooking for 3 minutes or until the vegetables are tender, and then remove from heat and set aside to cool to room temperature.
  • After the broccoli and corn have cooled, toss with the vinaigrette and taste for seasoning. Season with additional salt and pepper if desired and serve.
