SPINACH BROCCOLI ALFREDO PIZZA
Fresh vegetables cut through the richness of an alfredo based pizza.

- To make the sauce, melt the butter in a medium saucepan over medium heat.
- Add the nutmeg and cream to the butter. Whisk to combine. Simmer until the cream is heated through.
- Turn the heat down to medium low. Add the Parmesan cheese. Stir occasionally until the cheese is melted. You do not want the heat too hot as it will cause the cheese to break and get lumpy.
- When melted, add salt and pepper to taste. The sauce should be rather thick, much thicker than a normal pasta sauce. Set aside.
- Prepare the pizza dough if not completed already. If following one of our recipes, follow instructions until the crust is par-baked (just barely cooked) and set aside.
- Preheat oven to 450F. Place your pizza stone or baking sheet in the oven to heat.
- Place your pizza crust on a peel or another surface that will allow you to easily transfer it to the oven. Something like a thin and flexible cutting board should work.
- Season the crust edge if desired by lightly brushing the crust with a little olive oil and sprinkling with some Parmesan, garlic salt, or black pepper.
- Spread out the alfredo sauce across the pizza to taste. The sauce should be pretty thick in texture.
- Spread the mozzarella out across the pizza, with more or less to taste.
- Spread your spinach, broccoli, and tomatoes (or vegetables of choice) over the pizza. Sprinkle with the fresh Parmesan.
- When the oven is finished preheating, transfer the pizza to your pizza stone or baking sheet.
- Cook until the cheese has started to turn brown, approximately 10-12 minutes (or to your desired doneness).
- Remove the pizza from the oven. Sprinkle the fresh basil on top and some red pepper flakes if desired for an extra kick. Serve warm.
WHITE PIZZA WITH BROCCOLI
This delicious vegetarian pizza features steamed broccoli, creamy ricotta, mozzarella, red pepper flakes, lemon zest, and garlic.

- Preheat the oven to 450 degrees F. Place the pizza stone on the center rack of the oven while the oven preheats. If you don't have a pizza stone, you can still preheat the pan or baking sheet you are using to cook the pizza.
- Meanwhile, steam the broccoli by placing the florets in a large skillet. Cover them with water, bring to a boil, cover, and cook for 3 to 5 minutes until bright green and crisp-tender. (Be careful not to make the broccoli mushy.) You can also steam the broccoli in a vegetable steamer basket if you have one or use roasted broccoli instead. Drain the broccoli, transfer to a mixing bowl, and toss in about 1 tbsp olive oil and the red pepper flakes. Season with salt and pepper.
- Prepare the pizza dough by pulling/rolling it into a ~12-inch flat circle on a floured surface. Set aside. In a small bowl, mix together the ricotta cheese, minced garlic, salt, and pepper.
- When you are ready to make the pizza, remove the pizza stone from the oven. Spray with nonstick cooking spray if needed (some pizza stones are inherently nonstick). Carefully slide the pizza dough onto the stone. You should hear it sizzle slightly; this is a good sign and means that you will have crispy crust! Brush the dough with a little bit of olive oil, then sprinkle with about half of the mozzarella cheese (~3/4 cup).
- Place the steamed broccoli florets on top of the pizza, followed by dollops of the ricotta cheese and garlic mixture. Sprinkle the rest of the mozzarella cheese and lemon zest on the pizza. I like to finish the process by adding some more freshly ground black pepper and a drizzle of olive oil on top.
- Place the pizza stone on the center rack of the oven, and cook for 15 to 20 minutes until the cheese bubbles and the crust is slightly browned. Remove from oven, let cool for a few minutes, and cut into slices. Enjoy!

CHICKEN ALFREDO PIZZA WITH BROCCOLI
Steps:
- Prepare pizza dough according to the recipe directions, but don't forget to add garlic powder, rosemary, and basil when mixing the dough.
- While the pizza crust is baking, I make the Alfredo sauce and prepare the other ingredients.
- After removing pizza crust from oven top with Alfredo sauce and chicken
- Place broccoli and onions over chicken
- Top with cheese
- Place pizza back in the oven on a middle rack. Bake at 450 degrees for 8 -10 minutes or until cheese is melted and just begins to turn brown.

- Place the salt in a large pot of water and bring to a boil; add fettuccine and cook according to package directions for al dente; during the last 3 minutes of cooking, add the broccoli.
- Drain in a colander, RESERVING 1 cup of the WATER; set aside.
- Place the butter in the pot, reduce heat to medium-low ,and stir until melted; add 1/2 cup of the reserved pasta water, then stir in 1/3 cup of the Parmesan cheese. Add the fettuccine and broccoli and the cayenne and nutmeg, if desired; toss.
- Remove from heat and sprinkle with another 1/3 cup of the Parmesan cheese and the pepper, toss again. Adding more pasta water if the fettuccine is too sticky; serve in bowls and sprinkle with the remaining Parmesan cheese, enjoy.

- Preheat oven to 500 degrees F.
- On a 12-inch nonstick pizza pan, stretch out your dough and form the pizza crust. Drizzle 2 teaspoons extra virgin olive oil on crust and spread it with a pastry brush over the dough to the edges. Sprinkle crust with 2 tablespoons grated Parmigiano-Reggiano.
- In a small covered saucepan, bring 2 inches water to a boil. Separate broccoli tops into florets, discarding lower stalks or reserving for soup. Salt water and add broccoli florets. Cook covered 3 to 5 minutes. Drain broccoli and set on cutting board. Chop broccoli florets into small pieces.
- Heat a small nonstick pan over medium high to high heat. Add oil, cracked garlic and chicken. Season with salt and pepper. Brown chicken breast cut for stir-fry or tenders until lightly golden all over, 3 to 5 minutes. Chop sauteed chicken and garlic on a cutting board into small pieces.
- To assemble pizza, dot crust with chopped broccoli bits and cooked chopped chicken. Dot crust with spoonfuls of ricotta and spread ricotta gently with the back of your spoon. Add sliced sun-dried tomatoes, scattering them around the pizza to the edges. Complete the assembly with a thin layer of shredded mozzarella, about 1 cup. Place pizza in oven on middle rack and lower heat to 450 degrees F. Bake 12 minutes, until cheese is deep golden in color and crust is brown and crisp at the edges. Remove pizza from the oven and let stand 5 minutes. Top with lots of torn or shredded basil. Cut pizza into 8 slices using pizza wheel and serve.
CHICKEN ALFREDO PIZZA

- Preheat the oven to 375 degrees F. Adjust racks to the middle of the oven. Put pizza stone in the oven to preheat while you begin the sauce.
- Preheat a grill pan over medium heat.
- Season the chicken with salt and pepper, to taste. Put the chicken on the grill pan and grill until cooked through. Remove to a cutting board and dice. Set aside.
- Melt the butter in a medium-sized saucepan over medium heat. Add the garlic and red pepper flakes and cook until fragrant. Add the flour and cook until light blonde in color. Whisk in the cream, reduce the heat to low, and let simmer until thickened, about 2 minutes. Stir in Parmesan and season lightly with salt and pepper, to taste.
- Flour your work surface and roll the pizza dough into a 13-inch diameter. Carefully remove the pizza stone from the oven and put the dough on top. Ladle the sauce to cover the bottom of the pizza. Evenly top with the baby spinach, grape tomatoes, grilled chicken and the mozzarella. Brush the edge of the crust with olive oil and season with salt and pepper, to taste. Bake the pizza until crisp and golden, about 25 minutes. Remove from oven and immediately top with another handful of spinach. Slice and serve.
CHICKEN BROCCOLI ALFREDO PIZZA
My teenage sons favorite pizza! I make this for him and his friends every weekend along with a meat lovers with bacon. This is always the first to go! It's so easy too, since I buy the dough and a precooked small chicken at the deli, and the alfredo sauce is just from a jar.

- 1. place broccoli in a pot of boiling water to cook till tender. (10-15 min. ) preheat oven to 425 degrees.
- 2. while broccoli is cooking, flour your surface and roll out the dough one at a time to fit your pans. I use 2 medium cookie sheets since they fit side by side in the oven. stretch the dough over the pans to over hang.
- 3. Let the dough rest while you shred the mozzarella cheese. Divide the cheese in half.
- 4. roll the over hanging dough to make the crust. pour some alfredo sauce on the dough and spread with a spoon.
- 5. sprinkle mozzarella on top of alfredo sauce.
- 6. add the toppings: drain broccoli. arrange florets across pizza. cut or tear pieces of chicken and arrange across pizza. ( I have used left over chicken cutlets as well as baked chicken. I have even purchased an already cooked small chicken at the deli when I buy the pizza dough.
- 7. combine the melted butter with the garlic powder. use a brush to speed the mix on the crust. This makes a garlic bread stick crust.
- 8. sprinkle the toppings with a handful or two of parmesean cheese.
- 9. bake in 425 degree oven till the cheese bubbles and has spots of golden brown. Approx. 15 min. may be more. when done slide out of pan onto table and cut into 8 pieces each pizza. enjoy
