About a week ago I found a really good quality imported "extra mature farmhouse cheddar" cheese from the UK and decided to test it in this recipe which was recently featured on thekitchn.com. Use the best ingredients you can if at all possible: homemade bread and mayonnaise, etc. Q: I don't intend to step on any toes (especially British ones) but don't you think bacon/rashers would be delicious in this sandwich? A. yes. The bacon is optional of course. The husband discovered my secret stash of the farmhouse cheddar cheese and now most of it is gone! :/ Serving suggestion that we enjoyed with our sandwiches: Recipe #272915, hard boiled eggs and fresh fruit. I believe this is my first English recipe posted here but the fine English people have no cause for concern.

4 ounces cheese (such as Cheddar, Double Gloucester, Cotswold, or Red Leicester, for example)
2 tablespoons finely chopped sweet white onions
2 tablespoons finely sliced scallions (I used a combination of scallions and chives)
2 tablespoons mayonnaise
salt and pepper
4 slices bread (toasted or untoasted)
2 -3 slices bacon, crisply cooked
butter (leftover Irish butter from St. Patrick's Day...)

Steps:

  • Grate the cheese. Combine in a bowl with the onions and mayonnaise. Add salt and pepper to taste.
  • Spread the mixture between slices of buttered bread.
  • If adding the optional bacon, arrange the slices on the bread.
  • The filling also makes an excellent topping for baked potatoes (with the bacon crumbled).

Tuck into a British classic for brunch or lunch - this version of cheese on toast is taken to the next level with stout, mustard and Worcestershire sauce

3 red onions
1½ tbsp butter
big pinch of salt
1 tsp dark brown sugar
1 tbsp butter
50ml stout
1 tsp English mustard
75g grated cheddar
splash of Worcestershire sauce
1 small egg
2 slices of toast

Steps:

  • Finely slice the red onions, then tip them into a large frying pan with the butter and a big pinch of salt. Cover and cook on a low-medium heat for 30 mins, stirring regularly. Take off the lid, then scatter with the sugar, season well and cook for 5 more mins until caramelised.
  • Meanwhile, melt the butter in a pan, then whisk in the stout and the English mustard. Stir in the grated cheddar and whisk until melted, then season and add a splash of Worcestershire sauce. Take off the heat, then whisk in the egg. Divide the onions between two toasts, top with dollops of the cheesy sauce, then grill for 2-3 mins until browning and bubbling.

1 cup grated Cheddar Cheese
1 cup grated Red Leicester Cheese
½ cup Red Onion, diced very fine
2 large Spring Onions, diced very fine
⅔ cup Mayonnaise
1 pinch Black Pepper
butter as needed
bread slices, soft

Steps:

  • Grate cheese and dice onion as finely as possible. In a medium mixing bowl add cheese, onion, mayonnaise and a good pinch of black pepper. Mix well then taste test and adjust seasoning as necessary.
  • Butter one side of each slice of bread. Divide filling among 4 slices of bread and spread the filling all the way to the edges. Top with the second slice of buttered bread. Cut in half and enjoy!

2 slices bread, your choice
2 -3 slices sweet onions, very thin slices (walla walla type, more if you wish)
2 -3 ounces of aged sharp cheddar cheese, sliced
butter or margarine, to spread
fresh ground pepper

Steps:

  • Toast bread slices fairly crisp.
  • Butter toast on both sides, lay cheese slices on toast, add onion slices over cheese, grind pepper over onions.
  • Lay more cheese slices over onion.
  • Place second piece of toast on top and squish down.
  • Place on a cookie sheet under oven broiler, about 5 or 6 inches from heat.
  • Turn over when that side is golden and the cheese has started to melt.
  • Leave under broiler until the second side is golden and the cheese is ooozing out of sides.
  • Place on a luncheon plate, cut in two and enjoy!

I made this sandwich up the other day - low calorie, *very low* in fat (1 gram), very rich tasting (really!), and tons of great taste! If you love onions, this is for you!

2 slices light whole wheat bread
3 slices butterball fat free turkey
1/4 cup shredded fat free mozzarella cheese, the kroger store brand is great
1/2 cup white onion, chopped
1/2 cup shredded romaine lettuce
2 teaspoons fat-free Miracle Whip
1 teaspoon plain mustard
I Can't Believe It's Not Butter! Spray

Steps:

  • Place the onions in a bowl and add a couple of teaspoons of water- I also like to add a boullion cube for extra flavor (+5 calories), but be careful with this if you're watching sodium.
  • Cover with plastic wrap and nuke onions for about 3-5 minutes or until floppy.
  • Meanwhile, spray one side of each slice of bread with the butter spray.
  • Lay one piece spray-side down in a skillet and top with the cheese.
  • You might want to add a squirt of spray over the cheese if the kind you use doesn't melt well.
  • When the onions are done, take them out and spoon them over the cheese on the bread.
  • Next, add the 3 slices of turkey.
  • Spread the unsprayed side of the other slice of bread with the Miracle Whip (or fat free mayo) and the mustard.
  • Place this slice on top- spray side up!
  • Heat the skillet over medium heat, toasting the sandwich a couple of minutes on either side or until golden brown.
  • When done, remove the sandwich, peel apart, stuff in the lettuce, smoosh back together, and CHOW DOWN!
  • I included calorie and fat counts for every ingredient so that it will be easy to make substitutions and still know the exact nutritional information- I realize that not everyone loves onions as much as I do!
  • Some other good ingredients are roasted bell peppers, mushrooms, tomato, or anything else you love!

250g plain flour, plus extra for dusting
50g rye flour (or make up the weight with plain flour)
large pinch of cayenne pepper
1 tsp onion seeds
25g parmesan or vegetarian alternative, finely grated
125g cold butter, cubed
1 egg, beaten
40g butter
3 large onions, finely sliced
2 bay leaves
1 tbsp thyme leaves
1 medium potato (about 350g), halved lengthways and sliced
100ml double cream
150g extra mature cheddar, ½ grated, ½ chopped into small chunks

Steps:

  • First, make the pastry. Tip the flours into a medium bowl with the cayenne, onion seeds, parmesan and a generous pinch of salt. Rub in the butter until the mixture resembles breadcrumbs, then pour in half the egg and 2 tbsp cold water and bring everything together using your hands. Knead a couple of times until smooth. Flatten a third of the dough into a disc, then do the same with the remaining dough. Wrap both pastry discs and chill in the fridge for at least 30 mins. Will keep chilled for up to two days.
  • Meanwhile, make the filling. Heat the butter in a saucepan over a medium heat until sizzling, then scatter in the onions, bay, thyme, a large pinch of salt and good grinding of black pepper. Stir, then cook slowly for 10 mins until the onions have cooked down and started to caramelise. Stir in the sliced potatoes, cover and cook for 8-10 mins more, stirring occasionally until the potatoes are soft and starting to break down. Stir in the cream, remove the pan from the heat and leave to cool. Once cool, remove and discard the bay, then fold in the cheese.
  • Roll the smaller pastry disc out on a lightly floured surface to the size of a dinner plate and lift onto a baking sheet lined with baking parchment. Roll out the remaining pastry disc along with any offcuts to a circle about 5cm wider than the first. Spoon the filling into the middle of the smaller circle on the baking sheet, leaving a 4cm border. Brush the exposed border with some of the remaining beaten egg, then drape over the larger pastry circle. Tuck the edge around the filling to enclose it, as if making a giant ravioli. Trim the edge to neaten, then crimp with a cutlery knife handle or fork to seal. Brush the pie all over with most of the remaining beaten egg, and use any trimmings to make decorations, if you like.
  • Heat the oven to 210C/190C fan/gas 7. Bake the pie for 35-40 mins until deeply golden, brushing with the rest of the beaten egg halfway through. Leave to cool on the baking sheet for at least 20 mins before cutting into wedges, or leave to cool completely and serve cold.
