These delicious and cheesy beef brisket quesadillas are super easy to make using leftover brisket, sharp cheddar cheese, fried onion strings is a flour tortilla, and served with a side of BBQ sauce.

3 cups leftover beef brisket
½ cup barbecue sauce
¼ cup beef broth
3 cups sharp cheddar cheese, (shredded, add more if desired)
6 flour tortillas
Crispy onion strings, (if desired)
Additional BBQ sauce

Steps:

  • In a small saucepan, add shredded brisket, barbecue sauce and beef broth. Cook over medium heat until heated through, stirring frequently.
  • In a frying pan over medium heat, place a flour tortilla into the pan.
  • Spread brisket on one half of the tortilla followed by shredded cheese and top with crispy onion strings, if desired. Fold tortilla in half and cook until tortilla starts to brown then flip over and continue cooking until the cheese is melted.
  • *Or spread brisket over the entire surface of the tortilla, top with cheese, onion strings and the top tortilla. Cook and then cut into desired size.

Brisket quesadillas are easy and great to make with leftover brisket. Perfect for busy weeknight dinner and your entire family will enjoy them.

Number Of Ingredients 5

4 Flour tortillas
1 cups Shredded beef brisket
1 cup Cheddar Cheese, shredded
1/4 cup Red Onion, diced
1/4 cup BBQ Sauce

Steps:

  • Place a large skillet on medium heat and spritz with cooking spray.
  • Place tortilla on the pan and add 1/4 cup shredded cheese over the tortilla.
  • Top with 1/4 cup shredded brisket. Them sprinkle on cilantro and diced jalapeño peppers.
  • Fold the tortilla in half and press down with a spatula. This will seal the two sides together.
  • Cook until golden brown or crispy, then flip and cook for additional 3 minutes.
  • Remove from skillet, place on cutting board and half each tortilla.
  • Repeat steps with remaining tortillas and ingredients.

Made these on a whim for a Super Bowl party and they were a huge hit. These are served cold or room temp so it really makes them easy.

Number Of Ingredients 10

1 lb chopped beef brisket (no sauce)
black pepper (to taste)
6 green onions (chopped)
4 roma tomatoes (chopped)
1/2 bunch cilantro (chopped)
16 flour tortillas (I used small ones)
1/4 cup cream cheese (softened)
1/4 cup mayonnaise (real)
1/8 cup minced garlic
2 teaspoons chipotle hot sauce

Steps:

  • Spread the spread (lol) on 2 tortillas.
  • The following amounts will be to your liking.
  • Top one tortilla with filling in the order listed.
  • Place the other tortilla with the spread on it spread side down onto the filling and lghtly mash.
  • Cut into 4 pie shaped pieces.
  • Repeat.

1 cup grated white Cheddar cheese
1 cup grated Monterey Jack cheese
1 cup grated pepper jack cheese
6 tablespoons salted butter
Six 8-inch flour tortillas
Pinch of kosher salt
Pinch of freshly ground black pepper
2 Roma tomatoes, diced
One 4-ounce can diced green chiles, drained
9 fresh cilantro sprigs, for garnish

Steps:

  • Toss together the Cheddar, Monterey Jack and pepper jack in a bowl; set aside.
  • Heat 2 tablespoons of the butter in large skillet over medium heat. Place a single tortilla in the skillet. Sprinkle a little less than a third of the cheese blend over the tortilla. Sprinkle with salt and pepper. Add about a third of the diced tomato and a third of the chiles. Sprinkle a touch more cheese over the whole thing and gently top and press with a second tortilla. Cook until golden on the bottom, about 3 minutes.
  • Carefully flip the quesadilla to the other side. Continue cooking until the second side is golden, 3 to 4 minutes more. Repeat with the remaining ingredients. Slice each quesadilla into wedges and garnish with cilantro sprigs.

This brisket quesadilla is the ultimate way to use up brisket leftovers. Melted cheddar, red onions and smoky BBQ sauce are stuffed in a brisket filled tortilla with crispy edges and a gooey delicious center.

4 flour tortillas
1 cup leftover shredded beef brisket
1 cup shredded cheddar cheese
1/4 cup thinly sliced red onion
1/4 cup BBQ sauce
chopped cilantro
sliced green onion
sliced avocado
additional BBQ sauce

Steps:

  • Place a large skillet over medium heat.
  • Once hot, lay a tortilla in the pan, sprinkle 1/4 cup of the cheese over the entire surface of the tortilla.
  • Lay 1/4 cup of shredded brisket on top of the cheese and place a few onion slices on top of the brisket.
  • Spoon the BBQ sauce on top then fold the tortilla in half pressing down on the top with a spatula to "seal" the two halves together.
  • Cook until golden and crispy on the bottom then flip and cook for another 2-3 minutes until golden brown and edges become crispy.
  • Remove to a cutting board, cut into thirds and garnish as desired.
  • Repeat with remaining 3 tortillas and ingredients.

**hickory smoked brisket slices
**grated cheddar or asadero cheese
**cilantro, fresh
**thai chili paste
**flour tortillas

Steps:

  • 1. Have your brisket slices ready.
  • 2. Grate your cheese.
