The brine recipe is posted in my recipe that I have posted. Brine Turkey for 8 hours.

12 lb whole turkey
1 1/2 c brine mixture
1/4 c firmly packed brown sugar
2 Tbsp coarse sea salt
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp ground allspice
1/2 tsp ground cloves
1/2 tsp ground mace
1 large onion quartered

Steps:

  • 1. Mix up your brine mixture pour over Turkey, making sure Turkey is submerge ' refrigerate for 8 to 10 hour. after 10 hour rinse off the turkey with cold water and pat dry.
  • 2. Tuck wing tips under. Tie legs together with string. Combine: brown sugar and next 6 ingredients. rub over turkey. Cover and chill 8 hours.
  • 3. Place turkey, breast side up on a rack in a roasting pan. Arrange onion quarters around turkey. Pour 2 can of broth in pan, NOT ON TURKEY.....
  • 4. Bake loosely covered with foil, at 325 for l 1/2 hours. Uncover and bake remaining hours. Or until into meat thermometer inserted into thigh registers 180 degree. Cover with foil to prevent excessing browning, if necessary.

1 cup kosher salt, plus more for seasoning
3/4 cup packed light brown sugar
2 heads garlic, halved
20 sprigs fresh thyme
3 quarts buttermilk
3/4 cup hot sauce (such as Cholula)
1/4 cup spicy brown mustard
2 onions (1 sliced, 1 quartered)
1 12- to 14-pound turkey, thawed if frozen, neck and giblets removed
3 tablespoons paprika
1 tablespoon onion powder
1 tablespoon granulated garlic
1/4 teaspoon cayenne pepper
Freshly ground black pepper
4 tablespoons unsalted butter, melted

Steps:

  • Brine the turkey: Bring 2 cups water, the salt, brown sugar, 1 halved garlic head and 10 thyme sprigs to a boil in a medium saucepan over medium-high heat, stirring to dissolve the salt and sugar. Remove from the heat and add 6 cups cold water; let cool to room temperature. Whisk the buttermilk, hot sauce, mustard and sliced onion in a large bowl, then whisk in the salt-sugar mixture. Place the turkey in a brining bag or extra-large pot. Pour the brine over the turkey, seal or cover and refrigerate overnight.
  • Position a rack in the lowest part of the oven; remove the other racks and preheat to 350˚. Set a rack in a large roasting pan. Remove the turkey from the brine, letting the excess drip off as much as possible, and transfer, breast-side up, to the rack. Pat the turkey dry. Let sit at room temperature 30 minutes.
  • Combine the paprika, onion powder, granulated garlic, cayenne and 1 teaspoon black pepper in a small bowl. Stuff the turkey cavity with the remaining 1 halved garlic head and 10 thyme sprigs and the quartered onion; tie the legs together with kitchen twine. Tuck the wings under the body. Season the turkey all over with salt and brush with the melted butter. Coat the turkey with the spice mixture.
  • Roast the turkey 1 1/2 hours, then baste with the pan drippings. (Add 1/4 cup water to the roasting pan if it's too dry.) Continue to roast, basting every 30 minutes, until the skin is crisp and a thermometer inserted into the thigh registers 165˚, 45 minutes to 1 1/2 hours. Transfer the turkey to a cutting board and let rest 30 minutes before carving.

2 quarts cold water
1/2 cup kosher salt
1/2 cup granulated sugar
1 boneless turkey breast, 4 to 5 pounds
Spanish Spice Rub, recipe follows
Vegetable oil
4 oranges, halved
Sour Orange Sauce, recipe follows
Flat-leaf parsley leaves
2 tablespoons olive oil
1 medium Spanish onion, chopped
4 cloves garlic, coarsely chopped
2 cups fresh orange juice
2 teaspoons grated orange zest
1/4 cup fresh lime juice
2 tablespoons honey
4 cups homemade chicken stock
Salt and freshly ground black pepper
2 tablespoons cold unsalted butter, cut into pieces
2 teaspoons chopped fresh thyme
2 tablespoons chopped fresh flat-leaf parsley

Steps:

  • Place water in a large bowl or plastic container. Whisk in salt and sugar and let sit 5 minutes to dissolve. Add the turkey breast, cover, and let sit in the refrigerator for 45 minutes.
  • Heat grill to medium-high. Remove turkey from the brining solution, rinse well under cold water and pat dry with paper towels. Rub the skin side of the turkey with the rub. Using tongs, dip paper towels into the oil and oil the grates of the grill. Place the turkey on the grill, rub side down and grill until slightly charred and a crust has formed, about 4 to 5 minutes. Reduce the heat of the grill to medium, turn the turkey over and continue cooking, with the lid closed for 30 to 40 minutes or until an instant-read thermometer inserted into the center of the breast registers 155 degrees F (the temperature will continue to rise off the heat). Remove from the heat, loosely tent with foil and let rest 10 minutes before slicing. Slice into 1/2-inch thick slices.
  • While turkey is resting, brush the cut side of oranges with oil and place cut side down on the grill and grill until slightly charred. Ladle sour orange sauce onto a platter and top with the sliced turkey. Garnish with grilled oranges and parsley leaves.
  • 6 tablespoons Spanish paprika
  • 2 tablespoons cumin seeds, ground
  • 1 tablespoon mustard seeds, ground
  • 4 teaspoons fennel seeds, ground
  • 4 teaspoons coarsely ground black pepper
  • 2 teaspoons kosher salt
  • Whisk together in a bowl.
  • Sour Orange Sauce:
  • Heat the oil in a medium saucepan over medium-high heat on the grates of the grill. Add the onions and cook until soft. Add the garlic and cook for 1 minute. Add the orange juice, zest, and lime juice and cook until the mixture is reduced to about 1/2 cup. Stir in the honey. Add the chicken stock and cook until it's reduced to a sauce consistency, about 2 cups.
  • Strain the sauce into a bowl, whisk in the butter, and season with salt and pepper. Stir in the thyme and parsley and serve hot.

This is the recipe I developed for a turkey breast destined for my stove-top smoker. I'll never make another turkey breast without using this method. It was so moist and flavorful! UPDATE: Just smoked a large turkey breast on the stove top using an enamel roasting pan, with lid. I made a small tray of aluminum foil for the wood chips and placed at one end on the bottom of the roaster . Placed a sheet of heavy duty foil on top of wood chips as a drip tray (turned up corners to catch juices). Then placed a small rack (I used a collapsible steam basket) on top of the foil to hold the meat. Once smoke started, I placed the roaster lid on top and then crimped heavy duty foil over the top. Worked perfectly! Besure to run the vent on the stove or open a window slightly. The smell within the house was heavenly!

2 cups water
1/2 cup light brown sugar, packed
1/2 cup kosher salt
4 -6 garlic cloves, sliced
2 bay leaves
2 sprigs fresh thyme
1 sprig rosemary

Steps:

  • In saucpan stir together, apple cider, brown sugar, salt, garlic, bay leaves, thyme, rosemary and pepper.
  • Bring to a boil and stir until sugar is dissolved.
  • Remove from heat and add water and allow to cool.
  • Place poultry in a container large enough to hold the poultry (I used plastic container for a turkey breast).
  • Pour cooled brine over poultry and seal. (If using a ziplock bag, squeeze out as much as possible before sealing).
  • Refrigerate for 3-4 hours.
  • PREPARE STOVE-TOP SMOKER:.
  • Add 2 tablespoon Alder wood to bottom of stove-top smoker.
  • Line drip tray with foil and spray.
  • Remove turkey from brine and place on rack.
  • Use closing lid if possible, otherwise fashion an aluminum tent for the cover.
  • Follow stove-smokers manufacture instructions for smoking poultry.

This brine is enough for up to a 20-pound whole turkey and will produce the most juiciest and delicious bird you will ever have, with this brine you will taste only the turkey not any extra herbs or flavorings that are added in to some brines --- I use my food-safe picnic cooler to brine my turkey in it works quite well, you might want to purchase one if you plan on brining your turkey on a regular basis, and you will once you have tried this method just make certain to purchase one that is food-safe --- you may omit the garlic but I strongly suggest to add it --- you must use only kosher salt not regular table salt --- if desired after brining continue with my recipe#199612

1 cup kosher salt (must use kosher salt ONLY)
1 1/2 cups light brown sugar (well-packed)
2 tablespoons black peppercorns (can use 1 tablespoon coarse ground black pepper)
3 -4 tablespoons fresh coarsely chopped garlic (or slice the cloves into thirds)
2 tablespoons Worcestershire sauce (optional)
1 whole turkey (up to 20 pounds)

Steps:

  • In a large bucket or container mix together the warm water with brown sugar and salt; stir until NO kosher salt and sugar granules remain in the water (make certain to use very warm water so that the salt and suagr will dissolve easily and completely).
  • Add in Worcestershire sauce, peppercorns, and garlic; stir until the Worcestershire sauce is combined.
  • Cool the water until almost room temperature.
  • Wash the turkey inside and out with cold water, then place in the brine (if the brine does not quite cover the turkey, then place it breast-side up to start, then turn it over after a couple of hours later).
  • Place in refrigerator for 24 hours,.
  • Remove the turkey from the brine and rinse the turkey THOROUGHLY under cold running water.
  • Pat dry with paper towels then cover and refrigerate if not preparing right away or continue with my turkey recipe (#199612).

2 tablespoons hot smoked paprika
1 tablespoon dried savory
1 tablespoon ground cumin
1 tablespoon mustard powder
1 teaspoon cayenne pepper
1/4 cup (packed) plus 3 tablespoons light brown sugar
1/2 cup kosher salt
1 (12-14 pound) turkey, halved (backbone removed, breastbone split)
Vegetable oil (for grill)
Special equipment:
A disposable foil pan and 1 cup wood chips soaked in water at least 1 hour (optional); oven thermometer

Steps:

  • Mix paprika, savory, cumin, mustard powder, cayenne, and 1/4 cup brown sugar in a small bowl. Transfer 3 Tbsp. spice mixture to a medium bowl; mix in salt and remaining 3 Tbsp. brown sugar. Set remaining mixture aside for the next day. Cover turkey with dry brine, packing on until you've used it all. Chill on a rimmed baking sheet uncovered 8-12 hours.
  • Thoroughly rinse turkey to remove brine; pat dry. Rub with reserved spice mixture and let sit 2 hours to bring to room temperature.
  • Prepare grill for medium-high, indirect heat (for a charcoal grill, bank coals on one side of grill; for a gas grill, leave one or two burners off) and lightly oil grates. If using wood chips: Scatter over coals, if using a charcoal grill; place in a disposable foil pan and set over lit burner, if using a gas grill.
  • Place turkey, skin side up, over indirect heat, breast halves facing each other, with legs closest to direct heat. Place oven thermometer in center of indirect heat zone; cover. Grill 20 minutes, then rotate halves so neck end is closest to coals. Check temperature inside grill; thermometer should register 325ºF (open or close vents as needed). Continue to grill turkey, checking for doneness after 20 minutes, then again every 10 minutes, until an instant-read thermometer inserted into thickest part of breast registers 150ºF, about 1 hour total.
  • If desired, carefully move turkey over direct heat and turn skin side down. Grill to lightly char skin, about 2 minutes. Transfer to a platter and let rest at least 30 minutes before carving.

This turkey brine will impart incredible flavor to your bird and keep it moist no matter how long you cook it. The allspice berries give this recipe a unique and wonderful flavor, so depending on how much of this flavor you want, you can add more or less berries. Kosher salt is the best option for any brine, but if you don't have any on hand, substitute the 1 1/4 cup of kosher salt for 1 cup of table salt. I once used this to brine a turkey that took 7 hours to cook, and it was still one of the most moist and juicy turkeys I ever made. This recipe will make enough to cover up to a 17 pound turkey.

1 gallon chicken stock
1 cup kosher salt
½ cup light brown sugar
2 tablespoons dried minced onion
2 tablespoons red pepper flakes
3 whole cinnamon sticks
1 tablespoon cracked black peppercorns

½ tablespoon chopped candied ginger
1 gallon ice water
1 (14 pound) thawed whole turkey, neck and giblets removed

Steps:

  • Combine chicken stock, salt, brown sugar, onion, pepper flakes, cinnamon sticks, peppercorns, allspice berries, and candied ginger in a large stockpot over medium-high heat; bring to a boil. Stir until sugar and salt have dissolved, 3 to 5 minutes. Remove from the heat, cool to room temperature, and refrigerate brine until thoroughly chilled.
  • Combine brine and ice water in a clean, food-grade, 5-gallon bucket. Place turkey in the brine, breast-side down. Cover and refrigerate (or set in a cool area like a basement) for 6 hours, turning turkey once halfway through.
  • Set an oven rack to the lowest level and preheat the oven to 500 degrees F (260 degrees C). Place a roasting rack inside a wide, low pan.
  • Remove turkey from brine and rinse inside and out with cold water. Discard brine. Place turkey on the roasting rack and pat dry with paper towels. Tuck back the wings and rub butter liberally over the entire bird.
  • Roast turkey in the preheated oven for 30 minutes. Remove from the oven, insert a probe thermometer into the thickest part of the breast, and cover the breast with a double layer of aluminum foil.
  • Return to the oven, reduce temperature to 350 degrees F (175 degrees C), and cook until no longer pink at the bone and the juices run clear, 3 to 3 1/2 hours longer. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove from the oven, keep loosely covered, and allow to rest in a warm area for 15 minutes before slicing.
