FOR THE BRINE, WHISK:
2 cups cold water
1 Tbsp. each kosher salt and sugar
4 boneless country-style pork ribs (about 1 lb.)
FOR THE RUB, COMBINE:
1 Tbsp. each minced fresh garlic and rosemary
1 Tbsp. granulated garlic
1 tsp. dried Italian seasoning
1/2 tsp. black pepper

Steps:

  • For the brine, whisk together
  • water, salt, and sugar in a bowl
  • until salt and sugar dissolve.
  • Submerge ribs in brine; cover and
  • chill at least 4 hours, or overnight.
  • For the rub, combine minced
  • garlic, rosemary, granulated garlic,
  • Italian seasoning, and pepper.
  • Remove ribs from brine, pat dry
  • with paper towels, then coat with
  • rub; let stand at room temperature
  • 1 hour before grilling.
  • Preheat grill to medium-high.
  • Brush grill grate with oil.
  • Arrange ribs, flat sides down, on
  • grill. Grill ribs, covered, until edges
  • are browned, 5-7 minutes. Flip
  • ribs and cook until a thermometer
  • inserted into the thickest part
  • registers 145°, 3-5 minutes more.
  • Transfer ribs to a serving platter;
  • tent loosely with foil and let rest
  • 5 minutes before serving.

The country-style pork ribs are rubbed with a dry rub, grilled over a two-zone fire, and finished in BBQ sauce. An inexpensive weeknight grilling recipe!

6 country-style pork ribs ((about 3-5 pounds)
6 tablespoons pork dry rub
1 cup barbecue sauce

Steps:

  • Rinse the ribs gently under cool running water in the sink and pat dry with paper towels. (See Notes)
  • Rub the country-style ribs with a dry rub of your choice, using your hands to press it onto the meat so it will adhere. Let them sit out on the counter while preheating the grill or for best results, cover the ribs with plastic wrap refrigerate for two hours or overnight.
  • Light a chimney full of charcoal. When the coals are lit and gray with ash, pour out the coal into the grill and set up the coals for a two-zone fire for indirect heat. Preheat to 350 degrees F.
  • Place the ribs over direct heat on a clean and oiled grate. Grill until golden brown with a slight char on them, about 3 to 5 minutes (depending on size), then flip the ribs and char the other side for an additional 3 to 5 minutes.
  • When both sides of the ribs are charred, move them over to the cooler (indirect) side of the grill. Close the lid and allow the ribs to cook for about 20 to 30 minutes at 350 degrees F. Add charcoal and adjust the vents of the grill to maintain temperature.
  • After 20 minutes, check the temperature of the ribs with an instant-read thermometer. The thickest part of the ribs should read somewhere around 135 to 140 degrees F.
  • At this point, move the ribs back over direct heat and baste with warm barbecue sauce to caramelize the sauce. It's important to pay close attention not to let the ribs get to charred and black.
  • Double-check the temperature which should be at 145 to 150 degrees F before removing from the grill. Remove them and allow the ribs to rest at least 10 minutes before serving.

1/4 cup kc masterpeice original barbecue sauce
2 lbs country-style pork ribs

Steps:

  • Wisk together the Brown Sugar, Pepper, Garlic Powder, Onion Powder, Water, Worcesteshire Sauce and Soy Sauce. Then wisk in the Mustard. Reserve 1/4 cup of the marinade.
  • Trim the pork ribs and place in a sealable plastic bag in a large bowl.
  • Pour in the marinade remove the excess air and seal the bag. Let the ribs marinade at room temerature for 30 minutes.
  • Heat up the grill and clean the grates.
  • Mix the reserve marinade with the barbecue sauce.
  • Remove the meat from the marinade and discard the remaining marinade.
  • Brush the meat with the marinade & Barbecue sauce and grill over direct high heat with the grill covered turning every 10-15 minutes. When meat temp reaches 155° remove from grill and enjoy.

½ cup Burgundy wine
¼ cup barbeque sauce, plus more for basting
¼ cup cider vinegar
¼ cup hot pepper sauce
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow mustard
4 pounds country-style pork ribs
1 tablespoon onion powder
1 tablespoon garlic powder

Steps:

  • Stir wine, barbeque sauce, cider vinegar, hot pepper sauce, Worcestershire sauce, and mustard together in bowl until well mixed. Place ribs in a baking dish; pour Burgundy wine mixture over ribs and coat completely.
  • Mix onion powder and garlic powder together in a bowl. Dust ribs with powder mixture; let marinate 2 hours, turning once.
  • Preheat grill for medium-low heat and lightly oil the grate.

2 cups water
1/2 cup firmly packed brown sugar
1/4 cup kosher salt
1 Tablespoon whole peppercorns
1 teaspoon garlic powder
4 cups ice
1 1/4 pounds country style pork ribs
Barbecue sauce:
1 (6-oz) can tomato paste
1/4 cup firmly packed brown sugar
Juice of 1/2 lemon
1/2 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon ground dry ginger
1/4 teaspoon ground cumin
1/4 teaspoon dry mustard
1 Tablespoon honey
1 Tablespoon sesame oil
2 Tablespoons water
Sesame seeds for garnish

Steps:

  • Brine: In a medium saucepan over medium-high heat, combine water, brown sugar, salt peppercorns and garlic powder. Bring to a simmer, stirring until the sugar and salt have dissolved. Add ice and stir until completely cooled. Transfer brine to a large sealable plastic bag. Add ribs. Seal the bag and refriderate at least 1 hour, or up to 8 hours. Barbecue sauce: In a small bowl, whisk together tomato paste, brown sugar, lemon juice, salt, garlic powder, ginger, cumin, mustard powder, honey, sesame oil and water. Cooking: When ready to cook, heat a grill to medium high. Coat the grate with oil or cooking spray. Drain and discard the brine. Place ribs on the grill. Brush tops of the ribs with the barbecue sauce, then cover the grill and cook 5 minutes. Use tongs, flip the ribs, then brush the tops with additional barbecue sauce. Reduce heat to medium-low, cover and cook for another 5 to 8 minutes, or until an instant read thermometer inserted at the thickest part of the rib reads 160 degrees. 1 cup apple cider vinegar
4 cups water
2 tablespoons kosher salt
2 tablespoons freshly cracked black pepper
10 garlic cloves, smashed
3 pounds baby back ribs, silver skin removed, racks cut in 1/2
1/2 bottle beer
1 yellow onion, peeled and quartered
BBQ sauce, recipe follows
1 tablespoon olive oil
1/2 cup yellow onion
1 tablespoon minced serrano pepper
1 tablespoon minced garlic
1 tablespoon minced ginger
2 tablespoons apple cider vinegar
2 cups raspberries, frozen
1/3 cup seedless raspberry jam
3 tablespoons molasses

Steps:

  • Preheat an indoor or outdoor grill to high.
  • Preheat the oven to 400 degrees F.
  • In a large resealable bag or nonreactive container; combine the vinegar, water, 1 tablespoon of the salt and 1 tablespoon of the pepper, 4 of the garlic cloves and the ribs. Let sit at room temperature for 15 minutes only.
  • Remove the ribs from the brine and season both sides with the remaining salt and pepper. Sear the ribs on an indoor grill or outdoor if available, until lightly browned.
  • In a large roasting pan, fitted with a rack, arrange the ribs on the rack and pour in half of the beer. Drink or discard the remaining beer. Add the onion and remaining garlic cloves. Cover the pan tightly with aluminum foil and put into the hot oven. Reduce the heat to 300 and roast for 1 1/2 hours. Remove the foil and baste the ribs with the BBQ Sauce. Roast for 7 minutes, then turn the ribs over, baste again and roast for another 7 minutes.
  • Remove the ribs from the oven to a cutting board and slice between the ribs. Arrange on a serving platter and serve.
  • In a medium saucepan over medium-high heat, add the olive oil. When the oil is hot, add the onion and serrano and cook until the onion is translucent. Stir in the garlic and the ginger and cook for 1 to 2 minutes longer, being cautious not to burn the mixture. Deglaze the pan with the vinegar and then add the raspberries, jam and molasses. Stir to combine, then lower heat and simmer for 15 minutes. Puree with an immersion blender, then strain through a sieve into a bowl or jar, to remove the seeds, pushing the sauce through as much as possible. Can be stored, covered, in the refrigerator for up to a week.

3 tablespoons extra-virgin olive oil
3 medium onions, peeled and cut into wedges
1 12-ounce bottle amber ale
1 1/2 cups low-sodium chicken broth
2 bay leaves
6 sprigs thyme
2/3 cup apple cider vinegar
3 tablespoons honey

Steps:

  • Preheat the oven to 425 degrees F. Pat the ribs dry, season with salt and sprinkle with 1/2 teaspoon paprika. Heat the olive oil in a large Dutch oven over medium heat. Add the ribs in batches and cook until browned, about 8 minutes per side. Remove to a plate. Add the onions and cook until browned, about 10 minutes. Add the remaining 1 teaspoon paprika and season with salt.
  • Add the beer; bring to a boil and cook until the liquid is reduced by half, about 8 minutes, scraping up the bottom of the pot with a wooden spoon. Add the chicken broth, bay leaves and thyme; when the liquid begins to simmer, return the ribs to the pot and transfer to the oven. Cook, uncovered, turning the ribs once or twice, until the meat is almost tender, about 1 hour.
  • Mix the vinegar and honey in a measuring cup. Remove the pot from the oven and place on the stovetop; bring to a simmer over medium heat. Add the vinegar mixture and bring to a boil, then return the pot to the oven. Continue to braise, uncovered, until the ribs are tender, 15 to 20 more minutes. Return the pot to the stovetop and transfer the ribs to a plate. Bring the sauce to a boil over medium heat; skim off the fat and cook until thickened, 10 to 15 minutes. 3 tablespoons vegetable oil
1 carrot, chopped
1 stalk celery, chopped
1 onion, chopped
4 cloves garlic, minced
2 tablespoons tomato paste
1/4 cup apple cider vinegar
1 teaspoon crushed red pepper flakes
2 bay leaves
2 1/2 cups chicken stock
Creamy Polenta, recipe follows
2 tablespoons chopped fresh parsley, for garnish
Vegetable cooking spray
1 1/3 cups half-and-half
1 cup milk
2 tablespoons butter
1/3 cup coarse polenta, or corn grits
Kosher salt
1/2 cup grated Parmesan
Freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Pat the ribs dry and sprinkle with salt and pepper. Heat 2
  • tablespoons of the oil in a Dutch oven over medium-high heat and brown the ribs
  • on all sides, working in batches if needed. Remove the ribs and set aside. Add
  • the remaining 1 tablespoon of oil to the Dutch oven and reduce the heat to medium.
  • Add the carrots, celery, onions and some salt and pepper and cook until soft,
  • about 5 minutes. Add the garlic and cook until fragrant, about 1 minute. Add
  • the tomato paste and cook, stirring, to remove the raw flavor, about 3 minutes.
  • Deglaze the pan with the vinegar, and then add the red pepper flakes and bay
  • leaves.
  • Add the ribs back to the pan and add enough stock to reach
  • halfway up the sides of the ribs. Bring the pan to a simmer, cover and place in
  • the oven. Braise until the meat is tender, about 1 1/2 hours. During the last
  • half hour, uncover to allow the liquid to reduce and the pork to brown.
  • Serve the ribs with Creamy Polenta, spooning the sauce on
  • top, and garnishing with parsley.
  • Spray the insert of a slow cooker with cooking spray (for easier clean up) and preheat on high.
  • In a medium saucepan, add 1 cup of the half-and-half, the milk, 1 tablespoon of the butter and the polenta. Season with salt and bring to a boil over medium-high heat, whisking constantly to keep the mixture lump-free. Boil for 2 to 3 minutes. Pour the mixture into the slow cooker and cook on high for 2 hours, stirring once or twice per hour.
  • Once you are ready to serve, open the slow cooker and whisk in the remaining 1 tablespoon butter, the remaining 1/3 cup half-and-half and the Parmesan. Salt and pepper conservatively since the polenta will be served with a robustly salted dish.
