Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Arrange Brie slices on pizza crust; cover with sliced almonds. Bake until cheese is melted and almonds are toasted, about 10 minutes. Slice into small wedges to serve.

3 whole garlic bulbs
2 tablespoons olive oil
12 ounces Brie cheese
1 prebaked 12-inch pizza crust
1/2 cup sliced almonds, toasted

Steps:

  • Remove papery outer skin from garlic (do not peel or separate cloves). Cut the top off each garlic bulb. Brush with oil. Wrap each bulb in heavy-duty foil; place on a baking sheet. Bake at 425° for 30-35 minutes or until softened. Cool for 10-15 minutes. Squeeze softened garlic into a small bowl and mash., Remove rind from Brie and discard. Cut Brie into 1/4-in. slices. Place crust on a 12-in. pizza pan. Spread with garlic. Arrange cheese slices over garlic; sprinkle with almonds. Bake at 450° for 8-10 minutes or until cheese is melted.

200g salad potato , sliced
200g brie
290g pack Sara Lee ready rolled pizza base
10 pitted black olives
1 tbsp chopped fresh rosemary , or 1 tsp dried
a good drizzle of olive oil

Steps:

  • Cook them in a pan of boiling salted water until tender, 5-7 minutes. Take care not to overcook them or they will start to break up. Meanwhile, preheat the oven to fan 180C/conventional 200C/gas 6 and cut the cheese into thin slices.
  • Unroll the pizza dough and its baking parchment on to a baking sheet and scatter over the potato and cheese slices.
  • Dot the olives all over the pizza, then sprinkle with the rosemary. Drizzle generously with olive oil, grind sea salt and black pepper over the whole thing and bake for 15 minutes. Serve hot, with a tomato and onion or peppery rocket salad.

14 ounces San Marzano tomatoes (825 ml)
1 Tablespoon olive oil
1/4 teaspoon salt (15 ml)
1 clove garlic (crushed)
1 teaspoon dried oregano
2.5 cups white flour (625 ml)
2 teaspoons instant yeast (8 grams or one package)
1 teaspoon salt (5 ml)
1 teaspoon sugar (15 ml)
1 cup very warm craft beer (not too hot or you will kill the yeast - 100 F) (250 ml)
1 Tablespoon olive oil (30 ml)
4 ounces prosciutto (or salami or pepperoni )
4 ounces brie cheese (or fresh mozzarella)
1/4 cup parmesan (grated )
1/2 cup fresh basil (packed )

Steps:

  • In a bowl add tomatoes and using a spoon or your hands, squish the tomatoes so they are almost crushed but still have meaty pieces intact.
  • Add the rest of the ingredients (oregano, olive oil, salt and crushed garlic) and set aside for the flavours to develop while you are making the dough. Note: The sauce is enough for 2 pizzas.
  • Place yeast, sugar and beer in a bowl and mix together, let sit until it starts to foam about 5 mins. Add the olive oil.
  • Mix flour and salt together, then stir in beer mixture .
  • Mix together until the dough forms a nice ball. Turn out onto a floured surface and knead a few times. Continue to work in the flour until you have a smooth ball that isn't sticky. The dough should be very soft but you can add up to .5 cup more flour if needed.
  • After making the dough, divide the dough in half, coat with olive oil and and then let rise covered with a clean cloth for about an hour
  • Place a pizza stone 8 inches (20 cm) from the broiler and heat for 30 minutes at 500°F (260°C).
  • Then turn to broil and heat for 10 minutes.
  • If you're using a baking pan and not a pizza stone, preheat the oven to 425°F
  • While the oven is preheating, place dough on floured surface and roll out to your desired thinness.
  • Transfer to a floured pizza peel and add sauce and toppings. Using a quick, jerking motion, transfer the pizza onto the preheated pizza stone. Broil 3 to 4 minutes until crust and toppings are golden and slightly charred.
  • If you're not using a pizza stone place the dough directly on a baking sheet brushed with olive oil and add the toppings. Bake at 425°F for 12 to 15 minutes until crust and toppings are golden and slightly charred.
  • Cut into wedges and serve.

I found this recipe in the Toronto Star, December 26, 2007, rated one of the best recipes of the year. It is a lovely brunch pizza..."do not use a non-stick skillet for the onions, and don't skimp on the pear; it adds the right touch of sweetness". Preparation time will be longer if using home-made pizza dough.

1 tablespoon unsalted butter
2 tablespoons extra virgin olive oil
4 onions, halved, thinly sliced
1/2 teaspoon kosher salt
fresh ground black pepper, to taste
1 tablespoon balsamic vinegar
2 teaspoons curry powder
1 1/2 lbs pizza dough
extra virgin olive oil, to taste
1/2 lb brie cheese, sliced 1/8 to 1/4 inch thick
1 large bosc pears (about 3/4 lb) or 1 large abate pear, cored, sliced lengthwise 1/8-inch thick (about 3/4 lb)
chives, chopped, to taste

Steps:

  • Heat pizza stone in 400F oven at least 30 minutes.
  • For onions, melt butter with oil in large skillet on medium heat. Stir in onions, salt and pepper. Cook stirring often, 5 minutes or until starting to brown. Reduce heat to low. Cook, stirring occasionally, 25 minutes, until golden brown and very tender. Stir in vinegar. Turn heat to medium-low. Cook, stirring often, 5 minutes. Stir in curry powder. Cool to room temperature. Makes 1 1/4 cups.
  • For pizza, cut dough into 3 pieces. On floured surface, press 1 piece of dough into 8 inch round. Transfer to pizza peel covered in parchment. Spread with about 1/3 caramelized onions. Brush exposed edges with oil. Put 1/3 of pear slices over onions, arranging like spokes on wheel. Arrange 1/3 of brie slices in between pear spokes.
  • Slide pizza on parchment onto pizza stone. Bake 20 to 25 minutes, until bottom is crisp, brie is golden and pears are tender. Garnish with chives. Repeat with remaining dough, onions, pear, brie and chives. (You will have some onions left over).

1/2 recipe for Homemade Pizza Dough
2 - 3 Tbls Fig Preserves, per pizza
2 - 3 oz creamy Brie Cheese, or to taste
1 medium Vidalia (sweet) Onion, sliced
1 Tbls Olive Oil
Several sprigs fresh Thyme, leaves picked
Black Pepper, to taste

Steps:

  • Prepare the Homemade Pizza Dough according to directions.
  • Preheat Oven to 425°F.
  • Roll out on a lightly floured surface until about 1/8 - 1/4 inch thick, allow to rest about a minute. Then place on pizza stone or baking sheet.
  • In a large skillet, heat the Olive Oil over medium high heat. Add the sliced Onions and saute for 5 - 8 minutes or until the onions are translucent. Set aside.
  • Spread the Fig Preserves over pizza base, leaving a border around the edge. Top with the sauteed Onions, add "pinches" of the creamy Brie cheese all over. Sprinkle on the fresh Thyme leaves and Black Pepper, to taste.
  • Bake in the 425°F pre-heated oven for 8 - 10 minutes or until cheese is melted and pizza crust is started to turn golden.
  • Garnish with additional fresh Thyme, if desired.

½ wheel of brie cheese
1 ball of pizza dough
1 tbsp of olive oil
½ cup of red onion, sliced
½ cup of white onion, sliced
1 tbsp of brown sugar
¼ cup of almonds, slivered

Steps:

  • Heat the oven to 375°F.
  • Flour a counter or other surface and spread out the pizza dough. (You can use homemade or store bought dough, either whole wheat or white. Its up to you!) Use your hands and/or a rolling pin to stretch and flatten the dough until it is as thin as you like. (But this kind of pizza is best on thin crust.) Use a docker, if you have one, to get rid of any air bubbles. Now, spread your dough on a baking tray and place it in the oven for about 10 minutes.
  • While the dough is baking, place the olive oil and onions in a pan over low heat and cook for a few minutes. Then, add the brown sugar and cook for a few more minutes or until the onions are clear and beginning to brown. Then toss in the almonds and cook for just a few minutes longer. Remove from heat.
  • Now, slice the brie into large circles and set aside.
  • Once the dough is close to being cooked, remove it from the oven. Place the brie on top of the pizza dough and then the onions and the almonds. Place the pizza back in the oven for another ten to 15 minutes or until the crust is crispy and light brown.
