TORTILLA BREAKFAST WRAP



Tortilla Breakfast Wrap image

Inspired by the Egg and Cheese Bread Omelet, we made a complete breakfast wrap--tortilla, eggs, spinach, cheese and ham included--entirely in one skillet, for a go-to dish you can make in a hurry. Enjoy right out of the pan or with a few dashes of your favorite hot sauce.

2 large eggs
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter
One 8-inch whole-wheat tortilla
1/3 cup lightly packed baby spinach
2 slices American cheese
2 thin slices deli Black Forest ham

Steps:

  • Combine the eggs with a pinch of salt and several grinds of pepper in a small bowl and whisk to combine.
  • Melt the butter in a medium nonstick skillet over medium heat. Pour in the egg mixture and swirl the skillet to coat the bottom. Working quickly, dip the tortilla in the eggs, then flip it over and place it back in the skillet (both sides should be coated in egg). Season with another pinch of salt.
  • Continue to cook the eggs until they are completely set on the bottom, 1 to 2 minutes. Slide a large rubber or silicone spatula under the tortilla and flip the whole tortilla and egg over in one single motion. Scatter the spinach on the half of the tortilla that's closest to you, then top with the cheese and finally the ham. Continue to cook until the bottom is golden brown, about 1 minute more. Remove from the heat and slide onto a plate.
  • Starting with the side that has all the filling, start rolling the tortilla into a tight wrap or burrito. Keep the seam side facing downward so the wrap stays closed. Cut in half crosswise and serve.

1 flour tortilla
1 tablespoon unsalted butter
3 eggs, beaten
Salt and pepper
2 scallions, sliced
1 tomato, seeded and diced
1/4 cup grated cheese
Salsa

Steps:

  • In a heated cast iron skillet heat tortilla and keep warm. Season eggs with salt and pepper. In a nonstick skillet melt butter and pour in eggs. Stir in scallions, tomato and cheese and cook over medium heat until eggs are scrambled. Top heated tortillas with egg mixture. Spoon on salsa to taste and fold in half to serve.

1 tablespoon olive oil
1/2 cup sliced mushrooms
1 small yellow onion, sliced thin
1 small green bell pepper, sliced thin
Kosher salt and freshly ground black pepper
1/2 cup spinach
One 12-inch flour tortilla
1 cup shredded Colby Jack cheese
4 large eggs
2 green onions, sliced thin
Hot sauce, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat the olive oil in a 10-inch cast-iron skillet over medium-high heat. When the oil is hot, add the mushrooms, onions and bell peppers. Cook until slightly charred, 3 to 4 minutes. Season with salt and pepper. Turn off the heat and stir in the spinach. Remove the veggie mix to a plate.
  • Add the tortilla to the skillet, pressing it lightly to touch the bottom. Top the tortilla with two-thirds of the cheese and the reserved veggie mix. Crack the eggs over the top and cover with the remaining cheese. Sprinkle the yolks with salt and pepper.
  • Bake until the cheese has melted and the whites of the eggs have set, 15 to 17 minutes for a runny yolk, 20 to 22 minutes for a firmer yolk.
  • Transfer the tortilla to a cutting board or platter. Top with the green onions and hot sauce. Slice into wedges and serve.

2 package s (8 oz. each) Kraft Philadelphia Cream Cheese,softene
1/3 cup Kraft Three Cheese Ranch Salad Dressing
1 large carrot, finely chopped
2/3 cup finely chopped broccoli
1/4 cup finely chopped red onion
1 package large floured tortillas

Steps:

  • In a bowl, take packages of cream cheese and lightly soften. Add the three cheese ranch salad dressing, carrot, broccoli, and red onion and mix.
  • Once well mixed, put approx. 1 heaping tablespoon in the middle of each tortilla. Evenly spread with knife, once finished rollup each tortilla.
  • Let sit in refrigerator till chilled. Cut each tortilla wrap into bite size pieces, then serve! Enjoy!

1 cup shredded cheddar cheese
1 cup sour cream
1 can (4-1/4 ounces) chopped ripe olives
1 can (4 ounces) chopped green chiles, well drained
1/2 cup chopped green onions
Garlic powder to taste
Seasoned salt to taste
5 flour tortillas (10 inches)
Salsa, optional

Steps:

  • Beat cream cheese, cheese and sour cream until blended. Stir in olives, green chiles, green onions and seasonings., Spread over tortillas; roll up tightly. Wrap each in plastic, twisting ends to seal; refrigerate several hours., Unwrap. Cut into 1/2- to 3/4-in. slices, using a serrated knife. If desired, serve with salsa.

8 flour tortillas (8 inches)
1 carton (8 ounces) soft cream cheese with chives and onion
8 slices (1 ounce each) fully cooked ham
1-1/3 cups shredded cabbage
2/3 cup shredded carrot
1/2 cup honey Dijon salad dressing
1 cup shredded cheddar cheese

Steps:

  • Mix cream cheese, sour cream, green onions, and taco seasoning in a bowl until well blended. Spread a thin layer of the cream cheese mixture onto each tortilla. 1 (1 ounce) package dry fiesta-style ranch dressing mix

  • Spread about 2 tablespoons of filling down center of each tortilla.
