1/2 cup blackberries
1/2 cup blueberries
1/2 cup thinly sliced strawberries
1 cup plus 2 tablespoons Fig Compote, recipe follows
3 cups 2% Greek yogurt
3/4 cup Fruit-and-Nut Trail Mix, recipe follows
3 cups fresh black mission figs (about 20 ounces), roughly chopped
1/2 cup coconut sugar
2 tablespoons white wine vinegar
1 tablespoon orange zest
1/2 cup freshly squeezed orange juice (from about 2 oranges)
1 teaspoon ground cinnamon
Kosher salt
1 tablespoon honey
3 cups walnuts (about 12 ounces)
2 cups cashews with sea salt (about 10 ounces)
1 cup coconut flakes
1/2 cup pepitas (about 2 1/2 ounces)
2 tablespoons melted coconut oil
Kosher salt
1/2 cup banana chips
1/2 cup goji berries
1/2 cup chopped dried pineapple
1/4 cup carob chips, optional

Steps:

  • Mix together the blackberries, blueberries and strawberries in a bowl. Put 2 tablespoons Fig Compote in the bottom of six parfait glass. Top with 1/4 cup yogurt, followed by 1/4 cup of the mixed berries. Add another layer of yogurt, and then top with 1 tablespoon Fig Compote and 2 tablespoons Fruit-and-Nut Trail Mix. Serve immediately.
  • Combine the figs, sugar, vinegar, orange zest and juice, cinnamon and 3/4 teaspoon salt in a medium pot over medium-high heat; bring to a boil. Begin to break down the figs with a potato masher or the edge of a wooden spoon. Continue to boil until the compote has thickened enough to resemble a chutney and a wooden spoon drawn through the mixture leaves a track behind it, 5 to 6 minutes. Remove from the heat and let cool completely, about 15 minutes.
  • Stir in the honey and season with salt. Store in an airtight container in the refrigerator for up to 2 weeks.
  • Preheat the oven to 375 degrees F.
  • Combine the walnuts, cashews, coconut flakes and pepitas in a large bowl; toss with the coconut oil and some salt. Spread the mixture evenly onto a baking sheet. Bake until toasted and fragrant, 10 minutes. Let cool completely, at least 20 minutes.
  • Mix in the banana chips, goji berries and dried pineapple. Stir in the carob chips if you want a bit of "chocolate" with your trail mix! Serve immediately or store in an airtight container at room temperature.

1 can (20 ounces) unsweetened pineapple chunks, drained
1 package (20 ounces) pitted dried plums (prunes)
1 jar (16 ounces) unsweetened applesauce
1 can (21 ounces) cherry pie filling
1/4 cup packed brown sugar

Steps:

  • In a large bowl, combine the first five ingredients. Pour into a 13-in. x 9-in. baking dish coated with cooking spray. Spread pie filling over fruit mixture; sprinkle with brown sugar. , Cover and bake at 350° for 40-45 minutes or until bubbly. Serve warm.

4 large plums , stoned and cut into wedges
200g punnet blueberry
zest and juice 1 orange
25g soft light brown sugar
150g punnet raspberry
thick yogurt and honey, to serve (optional)

Steps:

  • Cook the plums and blueberries in a small pan with the orange zest and juice, sugar and 4 tbsp water until slightly softened but not mushy. Gently stir in the raspberries and cook for 1 min more.
  • Remove from the heat and allow to cool to room temperature. Serve with yogurt and a drizzle of honey, if you like.

1 cup dry white wine
1/4 cup sweet Marsala wine
1 cup granulated sugar
2 teaspoons vanilla extract
1/2 cinnamon stick
1/2 cup dried apricots, quartered
1/2 cup golden raisins
1/2 cup dried cherries
Dash gray sea salt
1 cup Granny Smith apples, diced 1/4-inch thick cubes
1 cup pears, 1/4-inch slices
1 tablespoon lemon zest
1 tablespoon fresh lemon juice
1 wedge sharp Cheddar
1 wedge Gorgonzola

Steps:

  • In a 4-quart saucepan or pot bring the first 6 ingredients to a simmer. Stir slowly to dissolve the sugar in the liquid. Add the remaining ingredients except the lemon juice and the cheese. When the liquid comes to a boil, adjust the heat and simmer for about 20 minutes to marry the flavors and soften the fruit. Turn off the heat then stir in the lemon juice. With a slotted spoon remove the fruit to a bowl. Bring the remaining syrup to a simmer and reduce until lightly thickened or when the bubbles formed on the top become small. Remove the syrup for the heat and when it is cool pour it over the fruit. The compote can be held in the refrigerator for up to 4 days.
  • Serve the compote at room temperature with the cheese.

1/4 cup unsalted butter
1/2 cup brown sugar, packed
1/2 cup orange juice
2 tablespoons lemon juice
1/2 teaspoon ground cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon nutmeg
10 maraschino cherries (optional)

Steps:

  • Preheat oven to 375 degrees F.
  • Combine first 4 ingredients in a 1 1/2 quart casserole.
