GREEN FRITTERS

Steps:
- Squeeze the courgettes between your hands to remove any excess moisture, or tip onto a clean tea towel and twist it to squeeze out the moisture.
- Beat the eggs in a bowl, add the broccoli, courgettes and most of the dill, and mix together. Add the flour, mix again and season.
- Heat the oil in a non-stick frying pan. Put a large serving spoon of the mixture in the pan, then add 2 more spoonfuls so you have 3 fritters. Leave for 3-4 mins on a medium heat until golden brown on one side and solid enough for you to flip over, then flip over and leave to go golden on the other side. Repeat to make 3 more fritters (there is no need to add any more oil to the pan after the first batch). Scatter with the remaining dill to serve.

Steps:
- In a heavy skillet or saucepan, pour the oil to a depth of 2 inches and heat until hot.
- In a medium bowl, combine baking mix, rice, 1/3 cup sugar, 2 tsps orange zest, nutmeg and cinnamon.
- In a cup whisk the water, egg and vanilla together and add to the baking mix mixture.
- Using a fork, stir until the batter is moist and thick.
- Drop by teaspoonfuls into the hot oil and fry for 2-2 1/2 minutes on each side until lightly browned.
- Drain on paper towels.
- Combine the remaining sugar and orange zest in a shallow bowl and stir to mix.
- While the fritters are still very warm, roll them in the sugar mixture to coat.
- Serve immediately with the preserves on the side.

SOUTHERN STYLE APPLE FRITTERS
I love apple fritters. They remind me of my childhood. My dad bringing them home in the brown paper bag...still warm, with a hint of greasiness showing through the bag from just being fried and glazed. Mmmmm. - Mix flour, sugar, and cinnamon together using a fork to break up any lumps. Add in milk, melted margarine, and eggs. Stir well to combine. Peel and dice apples, add to batter, stirring inches Drop by 1/8 cup fulls into hot oil and turn to allow to brown on both sides. Drain on paper towel lined plate. Dust with confectioner�s sugar, if desired. Serve with apple butter.

APPLE & PEAR FRITTERS
Whisked egg whites in the batter give a light, golden coating to the fruit - delicious with vanilla ice cream

- Make the batter (see 'Goes well with', right) but first separate 2 of the eggs and set aside the 2 egg whites. When the batter is mixed, whisk the egg whites in a clean bowl until they just start to hold their shape, then fold into the batter. Peel, core and cut the pears into wedges. Peel, core and cut the apple into rings and toss both in a little lemon juice to stop them going brown. Mix the cinnamon and sugar and set aside.
- Heat the oil in a deep fryer to 180C or in a wok until a drop of batter sizzles and turns golden within 20 secs. In batches, dip the fruit in the batter, then carefully fry in the oil until golden and crisp. Use a slotted spoon to drain onto kitchen paper, then toss in the sugar. Serve with vanilla ice cream.
