One 1-pound tube polenta, sliced 1/2-inch thick

HERB AND TOMATO POLENTA

Herb and Tomato Polenta image

Provided by Katie Lee Biegel

Categories     side-dish

Time 45m

Yield 4 to 6 servings

Number Of Ingredients 13

1 tablespoon olive oil, plus more for drizzling
1 pint grape tomatoes
1 clove garlic, thinly sliced
Kosher salt and freshly ground black pepper
1/2 cup grated Parmesan
2 tablespoons unsalted butter
Cooked Polenta, recipe follows
1/4 to 1/2 cup milk, as needed
Zest of 1 lemon
4 to 6 leaves fresh basil, torn
Pinch of baking soda
Kosher salt
1 1/2 cups medium-grind stone-ground cornmeal

Steps:

  • Heat a large skillet over medium-high heat. Add the olive oil and tomatoes. Cook the tomatoes, stirring occasionally, until they start to blister and release some of their juices, 8 to 10 minutes. Toss in the garlic and season generously with salt and pepper. Cook another 1 minute, then remove from the heat.
  • In a saucepan over low heat, stir the Parmesan and butter into the Cooked Polenta, thinning with milk as desired. Turn off the heat, stir in the lemon zest, taste for seasoning and add salt if necessary.
  • Transfer the polenta to a serving bowl. Use a spoon to create a shallow well and top with the tomatoes, torn basil, some black pepper and a drizzle of olive oil.
  • Bring 6 cups of water to a rolling boil in a heavy-bottomed 4-quart saucepan over medium-high heat. Reduce the heat to the lowest possible setting, add the baking soda and 1 1/2 teaspoons salt and pour the cornmeal into the water in a very slow stream from a measuring cup, all the while whisking in a circular motion to prevent lumps.
  • Cook, vigorously stirring the polenta with a wooden spoon for about 10 seconds once every 5 minutes and making sure to scrape clean the bottom and corners of the pot, until the polenta has lost its raw cornmeal taste and becomes soft and smooth, about 30 minutes. If the polenta looks like it's drying out too quickly, continue cooking with the lid on. Cooked Polenta recipe courtesy of Jeff Mauro.

Polenta Squares with Prosciutto image

Polenta squares with prosciutto and Taleggio cheese can be made in advance and broiled just before serving.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Yield Makes 48

Number Of Ingredients 8

Coarse salt
2 cups yellow cornmeal
2 teaspoons extra-virgin olive oil, plus more for pan
6 slices prosciutto, cut into 1/4-inch pieces
1 garlic clove, finely chopped
Freshly ground pepper
6 ounces Taleggio cheese, cut into 1/2-inch cubes (48 pieces)
Fresh marjoram sprigs, for garnish

Steps:

  • Bring 7 cups water to a boil in a large saucepan; add 4 teaspoons salt. Whisking constantly, add cornmeal a little at a time. Reduce heat to medium-low; cook, stirring frequently with a wooden spoon, until polenta pulls away from sides of pan and is very thick, about 25 minutes.
  • Heat oil in a medium skillet over medium-low heat until hot but not smoking. Add prosciutto and garlic. Cook, stirring, until prosciutto is slightly crisp, about 5 minutes; stir into polenta. Season with salt and pepper, if desired.
  • Pour polenta mixture into a 9-by-13-inch baking pan; smooth with a dampened spatula. Let cool at least 1 hour.
  • If not serving polenta immediately, cover with plastic wrap, and refrigerate until ready to use (or overnight).
  • Trim 1/4 inch from all sides of polenta. Cut polenta into 48 squares. Preheat broiler with rack 5 inches from heat. Lightly brush a metal baking pan with oil; heat under broiler 30 seconds. In batches, broil squares in pan, 2 minutes. Place cheese on each square; season with pepper. Broil until cheese is melted, about 1 1/2 minutes. Garnish with herb sprigs.

39 POLENTA RECIPES FOR CREAMY (OR CRISPY!) AND DELICIOUS …

From epicurious.com
  • Creamy Polenta. No need for constant stirring. Put the lid on this pot of creamy polenta, and the condensation will do most of the work for you. Get This Recipe.
  • Cheesy Baked Butternut Squash Polenta. Butternut squash melts into the polenta as this creamy, make-ahead dish cooks, while chunks of Fontina create melting pockets of cheese throughout.
  • Blood Orange and Poppy Polenta Shortbread Cookies. Polenta adds corny, savory deliciousness to these light and sweet cookies. If you can't find blood oranges, substitute navel orange zest and juice.
  • Wild Mushroom and Parsnip Ragout With Cheesy Polenta. This hearty vegetarian ragout—served on a bed of creamy polenta—gets a boost of rich flavor from umami-packed tomato and miso pastes.
  • Brown Butter-Polenta Cake with Maple Caramel. We love using polenta in our baking. To make sure this cake comes out moist, use finely ground polenta (labeled "quick-cooking" or "instant").
  • Oven Polenta With Roasted Mushrooms and Thyme. Still stirring your polenta? With this nearly hands-off polenta recipe, the oven does the hard work while your stovetop does the bare minimum.
  • Upside-Down Blood Orange–Polenta Cake. A touch of polenta in the batter gives this cake satisfying texture and an extra layer of nutty sweetness. Get This Recipe.
  • Slow Cooker Ricotta-Spinach Polenta with Tomato Salad. Polenta recipes often use the pantry staple as a neutral carb canvas for a rich sauce or braised meat, but here the creamy ricotta-and-spinach-enriched polenta is the centerpiece, with a simple little salad on top for freshness.
  • Polenta Cacio e Pepe. This polenta recipe uses the pressure cooker for a dish that's simple and so delicious. If you don't have Pecorino, Parmesan also works well.
  • Italian Fish and Vegetable Stew. Polenta doesn't need a heavy meat topping. Here, it gets firm white fish (such as mahi-mahi, cod, or halibut) and a bright sauce made with fresh vegetables, plus a bit of red wine vinegar, lemon juice, and mustard.
