5-Ingredient Fix Contest Entry. This is a recipe that I made up myself. It works well for breakfast or as a side dish to tacos, burritos, etc. Serve with sour cream and salsa to really add zip!

Steps:
- Preheat oven to 350 degrees and grease a 9x13 baking pan. Mix together the eggs, diced green chilis and the cheese. Spread the hashbrowns in the bottom of the baking pan and pour the eggs mixture over them. Top with the chopped tomatoes. Bake for 45 minutes or until a knife inserted in the center comes out clean.

- Pour diced potatoes into greased 9"x13" baking pan. Top with crumbled bacon. Sprinkle cheddar cheese evenly over bacon and potatoes. Beat eggs and milk together, then pour over casserole. Place in a preheated oven at 350 degrees. Bake for 30 min or until knife inserted in center come out clean. Remove from oven and let stand 5 min, then serve. Enjoy a quick and easy casserole for breakfast or any time.

BREAKFAST CASSEROLE
This is an ideal breakfast or brunch to assemble up to a day ahead and bake off in the morning. Healthy cooking doesn't always mean using low-fat products. The full-fat Cheddar and Parmesan together are so satisfying in this easy casserole that a little goes a long way, and they're a terrific complement to lean turkey sausage and spinach.

- Heat a large nonstick skillet over medium heat. Add the turkey and scallions and cook, stirring to break up any large chunks, until browned and cooked through, about 10 minutes. Remove from heat and let cool slightly.
- Whisk the eggs, egg whites, milk and 1/2 teaspoon each salt and pepper in a large bowl until combined. Add the cooked sausage, spinach, cheeses and bread and toss to distribute the ingredients evenly.
- Spray a 3-quart casserole dish with cooking spray. Spread the egg mixture evenly in the dish. Cover and refrigerate for at least 6 hours or preferably overnight.
- Preheat the oven to 350 degrees F. Bake the casserole, uncovered, until set and lightly browned on top, about 30 minutes.

- Preheat the oven to 375 degrees. Grease a 9 x 13 casserole.
- Pour in the Simply Potatoes for the 1st layer, then top with bacon or ham, then sprinkle on all the cheese.
- Whisk 9 eggs together in a large bowl, then whisk in the sour cream.
- Pour the egg mixture over the cheese.
- Bake for about 35 minutes. or until light brown on top.
- Let rest 5 minute before cutting into squares.
- My favorite condiment is salsa to serve with it!
