This easy 5-ingredient Slow Cooker Chicken and Stuffing is a satisfying, hands-off comfort food meal your family will love!

1 ¾ lbs (28 ounces) boneless, skinless chicken breasts (this for me was 3 large breasts)
1 (10.75 oz) can of Healthy Request Cream of Chicken Soup
½ cup fat free sour cream
1 (6 oz) box of dry stuffing mix (such as Stove-Top, or you can use 6 ounces by weight of a bagged type like Pepperidge Farm)
1 cup reduced sodium chicken broth

Steps:

  • Place the chicken breasts in a single layer at the bottom of your slow cooker. In a mixing bowl, stir together the Cream of Chicken soup and sour cream until combined and then spread the mixture over the top of the chicken breasts in an even layer.
  • Rinse out your mixing bowl and then add in the dry stuffing mix and chicken broth. Stir together to combine and then spread the stuffing evenly over the top of the cream of chicken soup layer in your slow cooker. Place the cover on the slow cooker and cook on low for 6-8 hours. Stir together (chicken will fall apart into shreds/chunks) before serving.

There are a number of recipes around that are much like this one, but this one has a difference. It is a "scratch" recipe. It does not make use of convenience foods; so it is not "semi-homemade", it is totallly homemade. Is there a difference? I don't know as I never made this dish the other way. But this way is totally good! In fact my MIL's recipe for Thanksgiving stuffing is much like this one, the exception being that she uses hard-cooked eggs. Recipe from Byrn's book, "What Can I Bring?" If desired, you could take the option of using cornbread mix (or commercially prepared) and rotisserie chicken -- Byrn does allow for that, and I won't tell!

4 cups shredded cooked chicken (about 1 pound)
6 cups coarsely crumbled cornbread
8 slices firm white bread, torn into pieces
2 (14 ounce) cans chicken broth
2 (10 1/4 ounce) cans cream of chicken soup
1 cup chopped onion (about 1 medium onion)
3 celery ribs, chopped (about 3/4 cup)
4 large eggs, lightly beaten
1 teaspoon ground sage
1/2 teaspoon black pepper
1/4 teaspoon salt
vegetable oil, spray for misting cooker
8 tablespoons butter, room temperature (1 stick)

Steps:

  • Combine chicken, cornbread, white bread, broth, cream of chicken soup, onion, celery, eggs, sage, pepper, and salt in a large bowl and stir to combine well.
  • Mist a 5-quart crockpot with spray. Add the chicken mixture. Dot with butter.
  • Cover and cook on LO heat for 7 hours or on HI heat for 3-4 hours. Stir before serving.

2-1/2 cups chicken broth
1 cup butter, cubed
1/2 cup chopped onion
1/2 cup chopped celery
1 can (4 ounces) mushroom stems and pieces, drained
1/4 cup dried parsley flakes
1-1/2 teaspoons rubbed sage
1 teaspoon poultry seasoning
1 teaspoon salt
1/2 teaspoon pepper
12 cups day-old bread cubes (1/2-inch pieces)
2 large eggs
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
5 to 6 cups cubed cooked chicken

Steps:

  • In a large saucepan, combine the first 10 ingredients. Simmer for 10 minutes; remove from the heat. Place bread cubes in a large bowl. Combine eggs and soup; stir into broth mixture until smooth. Pour over bread and toss well. , In a 5-qt. slow cooker, layer half each of the stuffing and chicken; repeat layers. Cover and cook on low for 4-1/2 to 5 hours or until a thermometer inserted into the stuffing reads 160°.

4 -6 slices swiss cheese
1 (10 1/2 ounce) can cream of chicken soup
1 (10 1/2 ounce) can cream of mushroom soup
1/4 cup milk
2 cups Pepperidge Farm Herb Stuffing
1/2 cup butter, Melted

Steps:

  • Season chicken breasts with salt and pepper and place chicken breasts in crock pot. Pour Chicken broth over breasts.

1 (6 ounce) box cornbread stuffing mix
1 celery rib, chopped
1 medium onion, chopped
1/2 cup dried cranberries (Craisins)

2 cups chicken broth

Steps:

  • Cook onion and celery in butter until tender; place in crock pot with stuffing mix, craisins, and chicken broth; mix well.

1/2 cup sour cream
