Time 25m

Yield 4 servings

Number Of Ingredients 12

1/4 cup mayonnaise
1 tablespoon Dijon mustard
1 tablespoon drained prepared horseradish
12 ounces ground beef (80-percent lean)
8 ounces bulk Italian sausage
Kosher salt and freshly ground black pepper
1 tablespoon unsalted butter
1/2 cup shredded Cheddar (about 2 ounces)
4 English muffins, regular, sandwich-size or corn, split and toasted
1 vine-ripe tomato, thickly sliced into 4 pieces
1 cup peppery greens, such as baby arugula, mustard greens or watercress
4 large eggs

Steps:

  • For the dressing: Stir the mayonnaise, mustard and horseradish together in a small bowl and set aside.
  • For the burgers: Gently mix together the ground beef, sausage and 1/4 teaspoon each salt and pepper. Divide the meat into 4 pieces and form each into a 4-inch patty.
  • Melt the butter in a 12-inch nonstick skillet over medium-high heat and add the patties. Cook until well browned, about 3 minutes, and then flip. Top with some of the cheese and continue to cook until the cheese is melted and the burger is just cooked through, 2 to 3 minutes.
  • Spread the toasted muffins with some of the mustard dressing and top with a slice of tomato and a burger patty.
  • Crack the eggs into the skillet with the sausage drippings and cook to your preference.
  • Place an egg on each burger and finish with some baby arugula on the top of the English muffin.

Time 30m

Yield 4 servings

Number Of Ingredients 7

8 slices bacon
4 slices white bread
2 tablespoons unsalted butter
4 large eggs
Kosher salt
1/4 cup shredded Jack or cheddar cheese
2 cups strawberries, halved

Steps:

  • Cook the bacon in a large nonstick skillet over medium-high heat, flipping, until browned and crisp, 6 to 8 minutes. Remove to a paper towel-lined plate (reserve the skillet).
  • Meanwhile, use a 2 1/2- to 3-inch star cookie cutter to cut out the center of each slice of bread. Reserve the stars.
  • Wipe out the skillet; add 1 tablespoon butter and melt over medium heat. Add 2 bread slices and 2 stars to the skillet and cook until golden brown on the bottom, 1 to 2 minutes. Flip the bread and stars and crack 1 egg directly into each of the cutout centers. Season the eggs with salt, then sprinkle each star with 1 tablespoon cheese. Cover the skillet and cook until the egg whites are set but the yolks are still runny, 2 to 3 minutes. Remove to plates. Wipe out the skillet; add the remaining 1 tablespoon butter and repeat to make 2 more eggs-in-a-hole.
  • Serve the eggs-in-a-hole, cheesy stars and bacon with the strawberries.

THE GREAT BREAKFAST BURGER

The great breakfast burger image

Start the day with this flavour-packed breakfast sausage burger with bacon, cheese and tomato relish

Provided by Good Food team

Categories     Dinner, Lunch, Main course

Time 1h55m

Number Of Ingredients 10

1 medium onion , roughly chopped
2tbsp tomato ketchup
1 tbsp oyster sauce
1kg sausagemeat , or meat squeezed from 16 large sausages
1 egg yolk
25g pack flat-leaf parsley , leaves chopped
8 slices melting cheese (we used havarti)
8 grilled rashers streaky smoked bacon
8 ciabatta buns, halved
tomato relish

Steps:

  • Put the onion, ketchup and oyster sauce in a food processor, then blend to a coarse paste, scraping down the sides of the processor if you need to. Put the sausagemeat into a mixing bowl, beat in the onion mix, egg yolk and 25ml water (and I mean really beat; if you have a tabletop mixer, do it in that), then add the parsley. Separate the mix into 8, roll into large balls, then flatten into patties. Chill on a plate for 1 hr.
  • To cook the burgers, heat a griddle or large frying pan without adding any extra fat. Fry for 3 mins on one side until golden, turn down the heat for 5 mins, then flip and repeat on the other side.
  • While the burgers cook, fry the bacon and, if you are game, some eggs as well. Heat the grill, then lightly toast the insides of the ciabatta buns.
  • Place the cooked burgers on a baking sheet, put a slice of cheese on each, then pop under the grill to melt. Sit the burgers on their buns, then place the bacon on top. If you feel like them, slide fried eggs on top of the bacon. Serve with a napkin.

  • Heat oven or toaster oven to 375 degrees. (Or if you're just going to use a toaster, have it ready.)
  • Divide sausage into 4 equal pieces and form into rings. Flatten until the rings resemble patties that are just slightly larger than the English muffins. Make sure the hole in the center of each patty is about 2 inches wide, or you risk the egg running over (and taking the yolk with it.)
  • Cook sausage in a large skillet over medium heat until well browned on one side (about 6 minutes.)
  • Split English muffins and place in oven or toaster oven. Cook until heated through, but not crisp.

  • In a large frying pan, cook the bacon until crisp. Reserve 1 tablespoon of the bacon fat. Allow to cool, then chop into pieces no larger than 1-cm x 1-cm.
  • Mix the ground beef with salt and pepper. Divide the meat into three equal pieces. Flatten each piece into a disk about 2-cm thick. Using a round cookie cutter, cut out the middle of each patty. Take the cut outs and form a fourth burger patty. Using a round cookie cutter, cut out the middle of the last patty. You can use the last cut out for a mini slider.
  • Add oil into a medium frying pan and heat on medium heat. Carefully transfer the burger patties onto the pan. Cook for 2 minutes then flip over. As soon as you flip it over, crack an egg into the hole in the burger. Depending on the size of the hole and the size of your egg, the egg white may spill out onto the top of the burger. It's fine if that happens - simply scrape it off the burger using a spatula as it cooks. Cover the frying pan and cook for an additional 3 minutes.
  • Slice each bacon brioche bun in half. Layer avocado slices on the bottom half. Top with the burger patty. If desired, spread mayonnaise and ketchup to the top bun. Close the burger.
