Steps:

  • Place banana in a bowl and top with yogurt.
  • Sprinkle granola or cereal over the yogurt and top with berries.
  • Add a little chocolate or fruit topping syrup if desired.
  • Garnish with some whipped cream and a cherry.

1/4 cup raspberry jam (or strawberry)
nuts
chocolate syrup

Steps:

  • Select smaller, ripe bananas. Cut off one inch, and then slice the banana in half and place on a salad plate curving away from one another and outward. Slice the small piece and place on either side of the curved pieces.
  • Spoon whipped yogurt across the top of bananas. Dribble slightly diluted jam on top of yogurt. Sprinkle nuts on top, if desired. Offer chocolate or fudge sauce. Enjoy!

1 1/2 cups walnuts, coarsely chopped
1 1/2 cups all-purpose flour
3/4 cup semisweet mini chocolate chips
1 tablespoon baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 cup dark brown sugar, packed
1/4 cup canola oil
1/4 cup fat free Greek yogurt, plain
1/4 cup nonfat milk
1 large egg
1 banana, very ripe, mashed (about 1/3c)
1 teaspoon vanilla extract (not artifical)

Steps:

  • Preheat the oven to 375. Coat a 12-cup muffin tin with cooking spray.
  • Measure 1/2 cup of the walnuts into a food processor and grind to a fine meal. Place the ground walnuts, flour, chocolate chips, baking powder, cinnamon, and salt in a large bowl and stir until thoroughly combined.
  • Combine the brown sugar, oil, yogurt, milk, egg, banana, and vanilla extract in a medium bowl and stir until smooth. Add the banana mixture to the flour mixture and stir until thoroughly combined. Stir in the remaining 1 cup walnuts and mix well (the batter will be thick).
  • Fill the muffin cups three-fourths full and bake for 13 to 15 minutes, or until the tops spring back lightly when touched. Remove the muffins from the pan and let cool on a rack.

I did some research before we opened and it seems that this is the most consistently "traditional" split served, even though some have marshmallow, peanuts, crushed cherries and more. I prefer hot fudge over the chocolate syrup, personally :P

1/2 cup scoop vanilla ice cream
1/2 cup scoop chocolate ice cream
1/2 cup scoop strawberry ice cream
1 large ripe banana
2 tablespoons chocolate syrup (or Hot Fudge)
2 tablespoons strawberry ice cream topping (or fresh strawberries)
2 tablespoons crushed pineapple
2 tablespoons wet walnut ice cream topping
whipped cream
cherries

Steps:

  • Line up ice cream scoops next to each other in an oval deep dish or a banana boat.
  • Cut the ends of the banana off (about 1/4 inch) while still in the peel.
  • Slice in half longways.
  • Pop each half of the banana out of the peel onto each side of the ice cream row, pressing down and in a little so it'll stay put.
  • Top the vanilla ice cream with the pineapple, the chocolate with the chocolate syrup and the strawberry with the strawberry sauce.
  • Spoon the wet walnuts over all three scoops of ice cream.
  • Top each scoop with some whipped cream and a cherry for each.
  • Enjoy!

I saw this on Pinterest and knew it would be an instant hit with this crowd. For my dairy-free little people, I dropped a small scoop of coconut milk ice cream on the split instead of Greek yogurt...so their's was more of a "Banana Snack Split". Whether for breakfast with yogurt, or with ice cream for a snack, you can't go wrong with this Banana Breakfast Split! I sure wish I could have this delivered to you right now! ;) (P.S. I'm already seeing great prices on blueberries and blackberries in my stores. This will be perfect later in the spring, early summer when berry prices are at their lowest!)
