PIZZA BAGEL BURGER

1 tablespoon canola or grapeseed oil
12 slices pepperoni
1 pound ground beef
Kosher salt and freshly ground black pepper
4 plain bagels, split
1 cup marinara sauce
1 pound shredded mozzarella cheese

Steps:

  • Preheat a large nonstick skillet over medium-high heat and brush with the canola oil. Fry the pepperoni on both sides until curled, then remove from the skillet. Portion the ground beef into 4 hamburger patties and sprinkle with some salt and pepper. Cook the burgers in the skillet to the desired doneness. Remove to a plate and tent with foil to rest. Wipe out the skillet and return to the heat.
  • Place the bagels in the skillet cut-side down to toast until golden brown, 3 to 5 minutes. Reduce the heat to low. Flip the bagels over and spread marinara sauce across each, then top them with cheese. Cover the pan and cook until the cheese begins to melt.
  • Sandwich burgers and pepperoni between pizza bagels and serve.

BREAKFAST BURGER WITH FRENCH TOAST BUN

4 tablespoons unsalted butter
1 tablespoon pure maple syrup
1 tablespoon hot sauce
1/2 pound bulk maple flavored breakfast sausage
1/2 pound ground beef
3 tablespoons chopped fresh parsley
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
4 slices sharp Cheddar
1/2 cup heavy cream
1/2 cup milk
2 large eggs
4 potato buns
1 avocado, sliced

Steps:

  • For the maple hot butter: Melt butter in a small saucepan over medium-low heat. Whisk in the maple syrup and hot sauce. Keep warm.
  • For the burgers: Combine the sausage, beef, parsley, 1 teaspoon salt and 1/2 teaspoon pepper in a mixing bowl. Use your hands to divide the meat into four 4-ounce balls.
  • Place a large cast-iron griddle over medium-high heat until warm, then add butter to grease the griddle. Place the balls of meat on half of the griddle and smash into round patties, about 4-inches wide, using a flat spatula. Fry until evenly browned, 3 to 4 minutes per side. Lay a slice of cheese over each patty. Invert a metal bowl over the patties to melt the cheese until it fries into crispy lace on the sides of the burgers, about 2 minutes.
  • For the French toast buns: Meanwhile, whisk together the cream, milk and eggs in a bowl. Soak the potato buns briefly in the mixture, about 20 seconds per half.
  • Place on the other half of the griddle (you may have to do this in batches) and griddle until golden brown and cooked through, about 2 minutes per side. Remove to a plate and drizzle with the maple hot butter, reserving some for the patties.
  • Place avocado slices on the bottom French toast buns, then top with cheesy patties. Drizzle the remaining spicy maple butter over the patties. Top with the remaining French toast buns and serve immediately.

BAGEL BREAKFAST CASSEROLE

This dish has everything you love about a traditional bagel breakfast sandwich, but it's all baked into a creamy, cheesy casserole that can be made the night before.

Unsalted butter or nonstick cooking spray, for greasing the baking dish
1 tablespoon olive oil
8 ounces breakfast sausage, casing removed (8 sausages) (see Cook's Note)
2 cups whole milk
3/4 cup half-and-half
Pinch of cayenne
8 large eggs
Kosher salt and freshly ground black pepper
1 1/3 cups packed baby spinach
2 large plain bagels, split and cut into 1-inch pieces
1 1/3 cups shredded provolone
8 ounces cream cheese, cut into 1/2-inch cubes
2 tablespoons everything bagel seasoning

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Grease a 9-by-13-inch baking dish with butter or cooking spray.
  • Heat the olive oil in a large skillet over medium high heat. Add the sausage and cook, breaking up any clumps with a wooden spoon, until brown, about 5 minutes; transfer to a bowl with a slotted spoon.
  • Whisk together the milk, half-and-half, cayenne, eggs, 3/4 teaspoon salt and 1/2 teaspoon pepper in a large bowl. Fold in the sausage, spinach, bagels and 3/4 cup of the provolone, then pour into the prepared baking dish. Dot the top with the cream cheese and sprinkle all over with the everything bagel seasoning and remaining provolone (see Cook's Note).
  • Cover with foil and bake for 45 minutes. Uncover and bake until the casserole is puffed, golden brown at the edges and set in the center, about 45 minutes more. Let cool 15 minutes before serving.

1 stick (8 tablespoons) salted butter, softened
6 everything bagels, split
2 medium yellow onions, halved and sliced
1/4 cup mayonnaise
2 tablespoons yellow mustard
Hot sauce, as needed
Kosher salt and freshly ground black pepper
1 pound bulk hot breakfast sausage
1 pound bulk maple breakfast sausage
12 slices Cheddar
6 large eggs

Steps:

  • Put a cast-iron skillet over medium-low heat. Butter the cut sides of the bagels. Lay the bagel halves in the skillet butter-side down and toast until golden, 2 to 3 minutes. Set aside.
  • In the same skillet, throw in the sliced onions and 1 tablespoon of the butter and cook slowly, stirring occasionally, until the onions are soft and golden, about 20 minutes. Remove to a plate.
  • Meanwhile, in a small bowl, mix together the mayonnaise, mustard, some hot sauce and 1 teaspoon each salt and pepper. Set aside.
  • Mix together the hot and maple sausage in a medium bowl. Form the mixture into six 1/2-inch-thick patties, slightly bigger than the diameter of the bagels (since the burgers will shrink during cooking).
  • Put the same skillet over medium heat, add the sausage patties and fry on both sides until cooked through, 5 to 7 minutes. Top each patty with 2 slices of Cheddar and cover the skillet with a lid to facilitate melting, 1 to 2 minutes.
  • In a separate nonstick skillet over medium-low heat, fry the eggs in 1 tablespoon of butter and sprinkle with salt and pepper. Cook until set on one side, then flip and cook the second side to desired doneness.
  • Build the sandwiches by spreading the mayo/mustard mix on the bottom half of each bagel, then top with a sausage patty, some caramelized onions and a fried egg. Spread more of the mayo/mustard mix on the top half of the bagels and place on top of the eggs to finish. Serve warm or wrap in foil to transport.

50g cream cheese
2 bagels , halved and lightly toasted
100g smoked salmon , cut into slices
1 avocado , sliced
½ lemon , cut into wedges
1 tbsp olive oil
2 eggs
pinch of cayenne pepper

Steps:

  • Spread the cream cheese over both halves of the toasted bagels. Add the salmon to the bottom halves, then top with the avocado. Squeeze over a little lemon juice and season well.
  • Heat the oil in a non-stick frying pan. When hot, crack in the eggs, season and cook for 2-3 mins until the white is set and starting to crisp up around the edges. Sit the eggs on top of each bagel base and sprinkle cayenne on each yolk. Top with the other half of the bagel and serve with lemon wedges on the side, for squeezing over.
