BREADSTICKS
Steps:
- Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or aluminum foil.
- Roll the pizza dough out on a lightly floured surface into a long, thin strip. The dough should be about 4-inches wide, 14-inches long, and less than 1/8-inch thick. Brush the surface of the dough with the oil. Sprinkle with the Parmesan, thyme, and red pepper flakes. Using a pizza cutter, slice the dough into 1/4-inch strips. Place on the prepared baking sheets. The strips can be laid straight or curved into designs. You can also twist 2 strips together. Leave 1/2-inch space between breadsticks.
- Alternately, roll out the dough very thinly and pass through the fettucine cutter of a pasta machine.
- Bake until browned and crispy, 10 to 15 minutes.
- In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
- In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.
- In a small saucepan, combine the garlic cloves and olive oil and bring to a simmer. Reduce the heat and simmer until the garlic begins to turn brown, 10 to 15 minutes. (Do not let the garlic get too brown or the oil will have a bitter taste.)
- Remove from the heat and cool to room temperature. Add the red pepper flakes and infuse for at least 2 hours to allow the flavors to blend. Refrigerate in a covered container for up to 2 weeks.
SOFT GARLIC PARMESAN BREADSTICKS
These are better than the ones served at pizza parlors! I usually have to make two batches, because they go so fast! I use my food processor to do the mixing.

Steps:
- Fit your food processor with a steel blade. Place the bread flour, yeast, sugar, salt, Italian seasoning, garlic, 1/4 cup grated Parmesan and softened butter in the processor; pulse to blend. Stir together hot water, milk and egg. Start the processor and slowly pour in the milk mixture into the feed tube until a ball forms around the blade. Run for 30 seconds to knead. Remove dough from processor and knead briefly by hand. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 1 hour.
- Deflate the dough, and turn it out onto a lightly floured surface. Roll the dough into a 10x12 inch rectangle. Use a knife or pizza cutter to slice the dough lengthwise into ten strips, and then cut these strips in half. Brush tops of strips with 2 tablespoons melted butter, and sprinkle with 1/4 cup Parmesan cheese. Cover, and let rise until nearly double, about 30 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
- Bake in preheated oven for 18 to 23 minutes, or until golden brown. Turn broiler on, and brush breadsticks with remaining melted butter and Parmesan cheese. Broil just until the cheese starts to turn light brown, about 2 to 3 minutes. Serve warm.

BREAD MACHINE BREADSTICKS
The machine does the hard work and the shaping and baking in the oven is easy with this dough. Add your own toppings like dried onion bits if you like, but I like to top with kosher salt to bake and serve them with a roasted garlic butter. From The Bread Machine Cookbook by Donna Rathwell German.

QUICK SOFT BREADSTICKS
Our family likes these breadsticks because they are soft and chewy. I like to make them when I am in a hurry because they rise quickly.

SOFT ITALIAN BREADSTICKS
I use the "dough only" cycle on my bread machine to prepare these melt-in-your-mouth breadsticks that my family of five gobbles up! The soft, chewy breadsticks are irresistible when brushed with butter and sprinkled with Parmesan cheese. - Place all ingredients except topping into your bread machine in order your bread machine recommends. (For my bread machine, the order is: Water, egg white, oil, sugar, salt and flour. Make a well inside the flour and then add the Fleischmann's® RapidRise Yeast into the well).
- Once the dough cycle is complete, remove the dough and place on a very lightly floured surface.
- Cut dough into 12 equal pieces. Roll each piece of dough into a 10-inch rope. Spray hands or counter with cooking spray, if dough is too sticky to handle easily. Place on large greased baking sheet (or use 2 smaller baking sheets, if needed). Brush with toppings mixture. Cover with towel; let rise in warm place until doubled in size, about 30 minutes .

- In your bread machine, add all the ingredients as instructed by your bread machine manufacturer. Usually its the liquids first, followed by seasonings, then flour - and very last you make a well in the flour and add the yeast.
- When the dough is done, pull of pieces of dough and roll into strips. Remember, they will get bigger after they have risen, so roll them out thinner than a typical breadstick to give room for them to grow. Place on a greased baking sheet. Set in a warm, draft-free area & let rise 45 minutes. Preheat your oven to 400 degrees.
