BAKED ORANGE-GLAZED CHICKEN
One of my favorite recipes! The combination of paprika and mustard powder really offsets the sweetness of the orange juice. I tend to eyeball when cooking, so if you cook more breasts or use a large pan, make extra sauce to baste with. I'll frequently use extra glaze when baking just so there's plenty to pour over rice once it's done!

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk orange juice, vegetable oil, orange zest, paprika, mustard, and salt in a bowl. Arrange chicken breast halves in a baking dish; pour orange juice mixture over chicken.
- Bake chicken breasts until no longer pink in the center and juices run clear, 30 to 45 minutes, basting with orange glaze every 10 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

ORANGE GLAZED CHICKEN RECIPE
Steps:
- For The Chicken: In small bowl, stir orange zest, 2 tablespoons rosemary, oil, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Place chicken in zipper lock bag and rub marinade into chicken well. Refrigerate 2 hours, turning bag occasionally.
- Adjust oven rack to upper-middle position and preheat oven to 450°F. Place chicken on rimmed baking sheet skin side up. Roast until skin is deep golden and chicken is cooked through (175°F), about 20 minutes.
- While chicken is roasting, make glaze: In small saucepan, bring orange juice to simmer over medium heat. Reduce orange juice to 1/2 cup, about 10 minutes. Stir in remaining teaspoon rosemary, apricot preserves, and 1/4 teaspoon salt. Cook until syrupy and reduced to about 1/3 cup.
- When chicken is cooked, brush glaze over chicken. Increase oven heat to broil and cook just until glaze browns, 1 to 2 minutes. Transfer to serving plate and let rest 15 minutes before serving.
- For the Spinach Salad : In medium bowl, whisk vinegar, mustard, and salt. Slowly whisk in oil until combined. Toss spinach with dressing, blue cheese, walnuts, and orange slices. ROASTED CHICKEN WITH ORANGE GLAZE

- For the orange citrus glaze: Whisk together the orange juice, orange zest, honey, oregano, sherry vinegar, 2 large pinches of salt and a pinch of pepper. Slowly incorporate the canola oil to create an emulsion. Yield: about 1 cup
- For the chicken: Preheat the oven to 400 degrees F. Line a baking sheet with foil and set a rack over the sheet.
- Pat the chicken dry with a paper towel. Coat the chicken with the canola oil and generously sprinkle with salt and pepper. Place on the rack set over the baking sheet and roast in the oven until cooked through and the internal temperature is 165 degrees F, 40 to 50 minutes depending on the size of the chicken. In the last 10 minutes of cooking, brush the chicken with 2/3 cup of the orange citrus glaze in 5 minutes intervals. Let rest 5 to 10 minutes before serving. - For the asparagus: Place a rimmed baking sheet in the oven and preheat the oven to 400 degrees F.
- Toss the asparagus with the olive oil in a large bowl and sprinkle with salt and pepper. Add the asparagus to the hot baking sheet and cook until tender, about 10 minutes.
- Transfer the asparagus to a serving platter. Drizzle with 1/3 cup of the orange citrus glaze and sprinkle with some orange zest.

- Place chicken breasts into a baking dish. Squeeze juice of 2 blood oranges over chicken. Marinate from 12 to 24 hours; drain and discard used marinade.
- Heat olive oil in a large skillet over medium heat. Season each chicken breast with salt and black pepper. Brown chicken in hot oil on both sides, about 4 minutes per side; transfer to a plate and cover with aluminum foil.

HONEY-ORANGE GLAZED CHICKEN
Good dish to please people with. DH loves it, friends & family love it, finally getting around to posting. There are several recipes for Orange Glazed Chicken out there, but this one uses the chicken in bite-size pieces like you would get at a Chinese restaurant rather than a glazed chicken breast recipe. I also have the luxury of having one of those electric fry-grill pans from HSN and that is what I use every time I make this. Serve over white or brown rice or egg noodles. Sometimes I even stir-in fresh broccoli florets that I've steamed while the chicken in simmering. Prior to serving you could sprinkle with toasted sesame seeds if desired.

- Place the chicken breasts in a single layer in a glass or ceramic baking dish.
- Combine the ingredients for the marinade, and pour over the chicken. Cover the pan, and marinate overnight or longer in the refrigerator, turning the chicken a few times.

Adopted from Kraft Magazine. A nice change of pace from the standard baked breaded chicken. Usually I don't worry about how to serve a dish but they recommended making a really light dressing and placing the chicken on a bed of spinach leaves with this dressing.
