Number Of Ingredients 10

4 cups all-purpose flour
2 tablespoons dried parsley flakes
1 tablespoon dried minced onion
2 teaspoons garlic powder
1-1/2 teaspoons dill weed
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground mustard
1-3/4 cups buttermilk
1 cup shredded sharp cheddar cheese

Steps:

  • In a large bowl, whisk the first 8 ingredients. Add buttermilk and cheese; stir just until moistened. Turn onto a lightly floured surface; knead gently 6-8 times or just until dough comes together. Shape dough into a 6-in. round loaf. Using a sharp knife, score surface with 1-in.-deep cuts in a crisscross pattern. Place in a greased 5-qt. slow cooker., Cook, covered, on high 1-1/2 to 2 hours or until a thermometer reads 190°-200°., Preheat broiler. Remove bread; place on a baking sheet. Broil 6-8 in. from heat 2-3 minutes or until golden brown. Remove to a wire rack to cool completely.

This is a wonderful, healthy dish that's really easy to prepare. The toasted wheat germ in the breading mixture gives some added fiber as well. If panko bread crumbs aren't available where you are, fresh are a great substitute. Also, store bought dried bread crumbs can be easily used instead. If the crumbs are already seasoned, please adjust the amount of dill and garlic accordingly and omit the toasting step. This recipe was adapted from one that I found in my Moosewood Restaurant Low Fat Recipe Cookbook.

1 1/2 lbs firm white fish fillets (cod, haddock or flounder work well)
3/4 cup panko breadcrumbs (Japanese bread crumbs)
3/4 cup toasted wheat germ
3 tablespoons chopped fresh dill (or 1 Tbsp of dried)
1 1/2 teaspoons dried mustard
3 cloves garlic, finely minced
salt & freshly ground black pepper, to taste
2 egg whites
lemon wedge, for serving

Steps:

  • Toast the panko bread crumbs on an unoiled baking sheet sheet in a 350 degree oven for about five minutes, or until lightly golden.
  • This step is optional, but it adds a nice flavor.
  • Increase oven temperature to 400 degrees.
  • Rinse the fish fillets under cold water, pat dry and set aside while you mix the crumb topping.
  • In a large shallow bowl, mix the panko, wheat germ, dill, mustard, garlic, salt and pepper until evenly combined.
  • In a separate bowl, lightly beat the egg whites.
  • Dip the fillets in the egg whites, and then dredge them in the breadcrumb mixture.
  • Be sure to coat both sides evenly.
  • Place the breaded fillets on a baking sheet that's been lightly sprayed with non stick cooking spray.
  • Bake in the oven for about 20 minutes, or until the fish flakes easily with a fork.
  • Serve with fresh lemon wedges.

t3 large garlic cloves, minced or pressed

Steps:

  • 1 Preheat oven to 350 degrees.
  • 2 tRinse the fish fillets, pat dry, and set aside.
  • 3 tToast the bread crumbs on an unoiled baking sheet in the oven for 5 minutes, until lightly golden. Increase the oven temperature to 400 degrees.
  • 4 tIn a large shallow bowl, combine the bread crumbs, wheat germ, dill, mustard, garlic, and salt and pepper.
  • 5 tLightly beat the egg whites in a separate shallow bowl. Dip the fillets in the egg whites and then dredge them in the bread crumb mixture to coat both sides evenly.
  • 6 tPlace the breaded fillets in a lightly oiled or sprayed 8x12-inch baking dish and bake, uncovered, for 20 minutes, or until the fish flakes easily with a fork.
  • 7 tOffer several fresh lemon wedges with each serving and drizzle on the fresh juice to taste.

1/2 kg kingfish
1 cup all-purpose flour
1/2 liter milk
1 (113 g) can cheddar cheese, grated
1/2 teaspoon ajinomoto
100 g butter
1 egg
1 garlic clove
100 g butter
1 loaf French bread
100 g mozzarella cheese, grated
salt
1/2 teaspoon ajinomoto

Steps:

  • Boil the fish in a cup of water.
  • Don't drain the soup.
  • It will be used to make the sauce.
  • To make the sauce, melt butter in a heavy base pan on low heat.
  • Blend in flour.
  • Stir and cook for 2 minutes.
  • Add milk, fish soup, egg, ajinomoto, salt and 50gm of cheese.
  • Boil until thickened.
  • Brush some butter in a baking dish.
  • Arrange the boneless fish pieces in it.
  • Pout the white sauce over the same.
  • Garnish with cheese.
  • Bake for 15 minutes until the surface becomes golden.
  • Garlic bread: To prepare this, crush the garlic and mix it with soft butter, salt and ajinomoto.
  • Add the grated cheese.
  • Bake for 10 minutes until the cheese melts.
  • Serve the bake fish with garlic bread right away!

My Grandma (Grinka!) was an amazing Swede who cooked amazing Italian! LOL Where I grew up if you weren't Swedish, you were Italian, so she must have learned from friends! Anyway, she made this recipe and it was just AMAZING, definitely Italian Garlic Bread, with a Swedish twist (dill) , Everyone RAVES about this... it's the only thing I can serve on Italian night!

1/2 cup butter, softened
1/2 cup mayonnaise
1/2 cup parmesan cheese
1/2 teaspoon salt
1/2-1 teaspoon garlic powder (your flavor)

Steps:

  • soften butter and put in a small bowl, add all ingredients except dill to bowl. mix well. Slather on your favorite loaf of white/whole wheat bread (french, Italian, sliced Italian, sourdough, etc) Usually we get the french bread and slice it in 1/2 length-wise. After butter mix is all over your bread, sprinkle with dill- heavy or light depending on your desire. I usually try to make it an even green color. Bake in a 425 degree oven for 10-15 minutes or until golden brown. Let cool for 5 min, then cut into 1 1/2 inch slices. Try not to eat a whole loaf yourself! :).
  • This mix can be doubled or more depending on how much you need, and will keep in the fridge well, I would say a week -- .

3 -5 drops lemon juice
1/8 teaspoon cayenne pepper
1 teaspoon finely chopped dill
1 1/2 lbs firm white fish fillets (haddock, halibut, cod, etc.)

Steps:

  • Prepare at least several hours before broiling fish (can be made ahead and frozen).
  • Make dill butter by combining first four ingredients and rolling up in plastic wrap or foil.
  • When ready to cook, preheat broiler and spray broiler pan with vegetable oil, or coat with butter.
  • Rinse fish and dry thoroughly.
  • Season with salt and pepper.
  • Place on broiler pan.
  • Sprinkle fish with lemon juice.
  • Place several generous pats of dill butter on fish.
  • Broil on both sides several minutes until fish is opaque and flakes easily with a fork.
  • Don't overcook.
  • (Total time about 10 minutes per inch of thickness).
