50 g dried breadcrumbs
1 teaspoon dried oregano
1/2 teaspoon cayenne pepper
250 ml milk
2 teaspoons salt
675 g cod, fillet cut into 4 pieces
40 g butter or 40 g margarine, melted

Steps:

  • Preheat the oven to 230degrees/450 F/gas 8.
  • Grease a shallow ovenproof baking dish.
  • Combine the breadcrumbs, oregano and cayenne pepper on a plate and blend together.
  • Mix the milk with the salt in a bowl, stirring well to dissolve the salt.
  • Dip the pieces of cod fillet in the milk, then transfer to the plate and coat with the bread-crumb mixture.
  • Arrange the coated fish in the prepared baking dish, in a single layer.
  • Drizzle the melted butter or margarine over the fish.
  • Bake in the preheated oven for 10-15 minutes, until the fish flakes easily when tested with a fork.

Charming fish shacks and salty sea air aren't a weeknight possibility for most of us, but thankfully, this recipe is. It features a clever technique from recipe developer Molly Kreuger: Creamy tartar sauce is spread on the fish to add flavor, keep the fillets moist during cooking and help the bread crumbs adhere to the fish. (Feel free to use your favorite tartar sauce in place of the one below.) The fish is baked until nearly cooked through, then broiled to toast the breadcrumb topping. The end result is crispy, creamy, tangy and moist, all of which is achieved without having to deal with a big pot of oil. Eat with more tartar sauce and a squeeze of lemon.

1 cup mayonnaise
5 tablespoons capers, drained and coarsely chopped
1/4 cup finely chopped pickles (such as cornichons or half sour)
2 tablespoons finely chopped tarragon, dill or parsley
1 teaspoon Worcestershire or soy sauce
1 small garlic clove
1 large lemon
Kosher salt and black pepper
1/2 cup panko bread crumbs
2 tablespoons extra-virgin olive oil, plus more for greasing
4 (6-ounce) thick white fish fillets, such as halibut or cod (skin on or off)

Steps:

  • Heat the oven to 400 degrees and set a rack in the upper part. In a medium bowl, stir together the mayonnaise, capers, pickles, herbs and Worcestershire sauce. Using a Microplane, finely grate the garlic into the bowl, then grate in the zest of the lemon. (Hold onto the lemon; you'll use the juice later.) Stir to combine and season the tartar sauce to taste with salt and lots of pepper.
  • In a small bowl, stir together the panko and olive oil; season with salt and pepper.
  • Pat the fish dry on all sides and season lightly all over with salt and pepper. Transfer to a lightly greased or foil-lined sheet pan. Coat the top with a thin layer of the tartar sauce (a scant tablespoon per fillet). Sprinkle the panko evenly on top (about 2 tablespoons per fillet), pressing gently to adhere.
  • Bake the fish on the top rack until almost cooked through, 10 to 15 minutes for fillets between ½- and ¾-inch-thick (though you should check earlier, if using a thinner fish). An instant-read thermometer should read somewhere between 125 and 130 degrees when inserted into the thickest part of the fish.
  • Meanwhile, add 1 tablespoon juice from the lemon to the tartar sauce and cut the remaining lemon into 4 wedges for serving.
  • When the fish is nearly cooked through, switch the oven to broil. Broil the fish on the top rack until the bread crumbs are golden and the fish flakes easily and registers 140 degrees in the thickest part, 2 to 3 minutes. Eat with a spoonful of tartar sauce, more black pepper and a squeeze of lemon. (Any extra tartar sauce will keep for up to a week in the fridge.)

BEER-BATTERED FISH TACOS

Pile chunks of battered cod, herby tartare and pink pickled onions into tortilla wraps to make these moreish tacos. They serve four, but won't last long!

150g plain flour
75g cornflour
½ tsp fine sea salt
230ml cold beer
vegetable oil, for deep-frying
4 skinless and boneless cod loins, cut in to 3cm pieces
8 small soft corn tortillas
2 Little Gem lettuces, shredded
hot sauce, to serve (optional)
150ml white wine vinegar
1 tsp coriander seeds, crushed
1 tsp peppercorns
2 tbsp caster sugar
1 large red onion, finely sliced
150g mayonnaise
½ small bunch of dill, finely chopped
½ small bunch of basil, finely chopped
½ tsp Dijon mustard
1 tsp capers, chopped

Steps:

  • First, make the pickled onions. Put the vinegar in a pan with 150ml water, the coriander seeds, peppercorns, sugar and 1 tsp salt over a medium heat, stirring until the sugar has dissolved. Scoop the onions into a bowl and carefully pour over the hot pickling liquid. Leave to cool for 15 mins, then cover and chill for at least 1 hr. Will keep chilled for up to two days.
  • For the tartare sauce, mix together all the ingredients, then cover and chill. Will keep chilled for up to two days.
  • Sift the flour and cornflour into a bowl, then stir through the salt. Make a well in the centre and whisk in the cold beer to make a smooth batter. Cover and chill for 30 mins.
  • Heat the oil in a deep, heavy-based pan, no more than two-thirds full, until the oil reaches 190C on a cooking thermometer. If you don't have a thermometer, check the oil is ready by dropping a small cube of bread into the oil - it should turn brown in about 10 seconds.
  • Dip each piece of cod into the batter to fully coat, then gently shake off the excess. Fry the fish in batches for 4 mins per batch, then remove using a slotted spoon and drain on kitchen paper.
  • Warm your tortillas in a low oven or in a dry frying pan. Spread over the tartare sauce, then add the fish and top with the pickled onions and shredded lettuce, plus a dash of hot sauce, if you like. Best enjoyed with a cold beer.

15-20 langoustine or Dublin Bay prawn tails
vegetable or sunflower oil , for frying
140g plain flour
85g cornflour
150ml beer
100ml sparkling water
lemon wedges and chips , to serve
6 tbsp mayonnaise
1 gherkin or 6 cornichons, finely chopped
1 tbsp caper , rinsed and chopped
1 tsp lemon juice
1 tbsp chopped parsley
2 tsp chopped tarragon

Steps:

  • To prepare the langoustines, pull off the head and pincers. Lay the tail flat on a chopping board and use a sharp pair of scissors to cut a line straight down the back of the shell. Carefully peel the langoustine, score down the back, then remove the grit sac.
  • Get the oil heating in a large saucepan or wok - you will need enough to come 2-3in up the side of the pan. For the tartare sauce, mix all ingredients in a bowl and season.
  • Place the flours in a bowl with a good pinch of salt and pepper. Add the beer and sparkling water, and whisk to a smooth batter.
  • To test if the oil is hot enough, put a drop of batter into the pan - it should crisp and brown within 30 secs. Dip each langoustine or prawn tail into the batter, then carefully drop it into the oil. Drizzle a little extra batter over each one while they are cooking - this will give you a really crispy coating. Cook them in batches, making sure you don't overcrowd the pan. When golden and floating to the surface, scoop out and drain well on kitchen paper. Sprinkle the scampi with salt and serve with the tartare sauce, lemon wedges and chips.

  • Make the tartar sauce: Mix mayonnaise, pickle relish, parsley, calamansi juice, and salt to taste in a small bowl. Cover and chill until ready to use. (You can make this ahead of time, up to 5 days in the refrigerator for best results).
  • Prepare the breading station: Season all-purpose flour with salt and pepper to taste in one shallow plate. Beat egg with fresh milk and season with salt and pepper in another shallow plate. Finally, place crushed crackers in another shallow plate. Have another plate for placing the breaded fish fillets.
  • To coat each fish fillet, dredge each fish fillet first in the seasoned flour, dip in egg mixture, then coat with the crushed crackers. Repeat for all three fish fillets and set aside.
  • Heat enough oil in a wok for deep frying, about 2 cups. (If using, attach your deep-frying thermometer to the wok and the tip in the oil. Heat until 160 degrees C or 325 degrees F.) Once hot enough, slip a fish fillet in the hot oil. Cook until the fish is cooked through, about 5 minutes on the first side and another 3 minutes on the other side. Remove from the oil onto a wire rack. Cook remaining fish fillets.
