1 pinch salt
½ cup all-purpose flour
2 (6 ounce) skinless, boneless chicken breast halves
2 tablespoons olive oil
¼ cup dry white wine
¼ cup lemon juice
¼ cup cold unsalted butter, cut into pieces
2 tablespoons capers, drained
2 lemon wedges

Steps:

  • Mix together salt and flour in a small dish or plastic bag, then coat chicken and shake off excess. Heat olive oil in a skillet over medium-high heat. Shake excess flour from chicken, then brown in hot oil until both sides are golden-brown, and the inside has turned white and firm, 3 to 4 minutes per side.
  • Remove the chicken, and set aside in a warm place. Pour white wine into the skillet, and allow to boil as you dissolve the cooked bits from the bottom of the pan. Add the lemon juice, and allow to come to a boil, cook for a few minutes until reduced by half.
  • Sprinkle the cubed butter into the boiling sauce. Swirl and shake the pan vigorously to dissolve the butter, thus thickening the sauce. The butter must never come to rest, or the sauce will separate and become oily. Once the butter has completely incorporated, remove from heat and stir in capers.
  • To serve, pour lemon-caper sauce over the chicken, and serve with a wedge of lemon.

4 boneless, skinless chicken breast halves
1 teaspoon lemon pepper
1 teaspoon salt
1 teaspoon dried dill weed
1 teaspoon garlic powder
3 tablespoons butter
½ cup whipping cream
2 tablespoons capers, drained and rinsed

Steps:

  • Season chicken breasts with lemon pepper, salt, dill weed, and garlic powder.
  • Melt butter in a large skillet over medium heat. Place breasts in skillet, and increase heat to medium-high. Turn chicken frequently, until brown, about 5 minutes. Reduce heat to medium, and cook 5 to 7 minutes, until breasts are cooked through. Remove chicken to a warm serving platter, and cover with foil.
  • Return skillet to stove, and increase heat to high. Whisk in whipping cream, whisking continuously until reduced to sauce consistency, about 3 minutes. Remove from heat. Stir in capers. Pour sauce over chicken, and serve.

1 lb chicken cutlet
1 1/2 cups Italian breadcrumbs
1/4 cup lemon juice, bottled
2 large eggs
1/2 cup milk
1 tablespoon basil
4 tablespoons butter
1/4 teaspoon salt
2 tablespoons complete seasoning

Steps:

  • Rinse Cutlets (if you have regular chicken breast, make sure you cut them into cutlets) and pat dry.
  • Season cutlets with complete seasoning on both sides.
  • Set aside.
  • Mix eggs and milk and put breading in separate plate.
  • Put cutlets into milk mixture and bread them so they are fully coated.
  • Heat up canola oil or you can use butter in a skillet on medium heat.
  • Put cutlets in the skillet and let them start cooking.
  • In a small pot, mix the 4 tbs butter, lemon, salt, and basil until completed melted, then keep on low setting.
  • When chicken is golden brown, remove and pour an adequate amount of lemon-basil sauce over them.
  • Like I said, when I make this at my family's request I always serve mashed potatoes and corn because the sauce is perfect for all three.
  • You can always double the sauce recipe if you serve the same sauce over everything, Not only does it taste great-- it looks pretty.

1 tablespoon vegetable oil
1 teaspoon vegetable oil
1 shallot, minced
1 teaspoon flour

Steps:

  • Adjust an oven rack to the lowest position and heat the oven to 450°F Pat the chicken dry with paper towels and sean with salt and pepper. Heat the oil in a 12" oven-safe skillet over medium-high heat until just smoking. Carefully lay the chicken breasts skin-side down in the skillet and cook until well browned, 6-8 minutes. Turn the chicken breasts and continue to brown lightly on the second side, about 3 minutes.
  • Turn the chicken beasts skin-side down and transfer the skillet to the oven. Roast until the thickest part of the brests registers 160F on an instant read thermometer - about 15-20 minutes.
  • Remove the skillet from the oven (warning: The handles are HOT!). Transfer the chicken breasts to a plate, tent loosely with foil, and let rest while making the sauce.
  • Sauce: Being careful of the hot pan handle, add the oil to the skillet and return to medium heat until shimmering. Add the shallot and cook until softened, about 2 minutes. 2 lbs. chicken breast cutlets (6-8 total, see notes)
1/4 cup all-purpose flour
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoons extra-virgin olive oil
4 tablespoons butter (divided)
1/2 cup dry white wine (such as pinot grigio or sauvignon blanc, or chicken stock/broth)
juice and zest of one lemon
2 tablespoons capers (drained)

Steps:

  • In a shallow bowl, mix together the flour (1/4 cup), kosher salt (1 teaspoon), and black pepper (1/2 teaspoon).
  • Dredge each chicken breast cutlet in the flour mixture, pressing the flour into the surface of the chicken so it's completely coated, and gently shaking off any excess flour. Set on a plate or cutting board as you work to coat them all.
  • Heat up 2 tablespoons of olive oil and 2 tablespoons of the butter in a large skillet over medium-high heat.
  • Add the dredged chicken cutlets to the skillet. Cook for three minutes, then flip and cook for another three minutes (or until browned and fully cooked). Remove to a plate.

16 medium-thin asparagus stalks, ends neatly trimmed, stalks peeled

1 clove garlic, peeled and minced
1/2 teaspoon grated lemon rind

Steps:

  • For the chicken, place 1 piece of chicken between 2 pieces of plastic wrap. Use a meat pounder or the bottom of a heavy pan to pound the chicken into an 1/8-inch thick paillard. Repeat with the remaining chicken. Season the chicken and asparagus with salt and pepper.

  • Set 3 wide, shallow bowls on a work surface. Add flour to the first one, beaten eggs to the second, and panko and Parmesan cheese to the third. Mix panko and Parmesan thoroughly.

2 teaspoons lemon juice.
Half a stick of salted butter.
Several capers.
Italian Fish Breading Mix given as a recipe elsewhere.
1 egg beaten with a little water to make the breading stick.
You can skip the beaten egg, the chicken, and the breading if you simply use a soy, breaded chicken filet substitute from the frozen foods section of your grocery.

Steps:

  • The sauce is easy. Melt the butter in a small sauce pan. Add the lemon and whole capers. Heat them together over a low heat. (The capers are already tender, so focus on letting the flavors merge with a little warming and the time you spend frying the chicken.) I don't like to pound on top of a kitchen countertop, but if you make this out of chicken, you should cut the chicken breast into "fingers" to help it to cook faster and without as much concern that the internal temperature will not become high enough to kill bacteria in a skillet. Dip this in the beaten egg and water mix then into the Italian Fish Breading. Fry this in a frying pan as you would fish. When the chicken is done, and the internal temperature is high enough to kill any bacteria (based on whatever standard is in use when you prepare this recipe) remove it from the pan. Arrange the chicken fingers on a plate and pour the sauce over them. (If you soak the chicken fingers in the sauce, they won't be very crunchy, so don't pour the sauce on until last.) Serve with a side of steamed or roasted vegetables, pasta, or both.

This chicken with preserved lemons and olives is a classic Moroccan dish. This recipe calls for using a Dutch oven or heavy- bottomed pot.

1 whole chicken, skin on or removed, cut into pieces
1/3 cup vegetable oil (or a mix of vegetable oil and olive oil; or a mix of oil and butter)
2 very large white or yellow onions (1 lb or 1/2 kg), sliced as thinly as possible
One small handful of fresh cilantro , chopped
One small handful of fresh parsley, chopped
2 or 3 cloves of garlic, finely chopped or pressed
2 teaspoons ginger
1 teaspoon pepper
1 teaspoon turmeric
1/2 teaspoon salt
1/2 teaspoon saffron threads , crumbled (divided; optional)
For the Sauce
1/2 to 1 teaspoon smen (Moroccan preserved butter - optional)
1 handful green or red olives, or mixed
1 preserved lemon, quartered and seeds removed

Steps:

  • Ahead of time if possible, combine the chicken with the onion, garlic, herbs, and spices, including half of the saffron. (Reserve the rest of the saffron for adding to the sauce at a later time.) If time allows, cover and leave the chicken to marinate in the fridge for a few hours or even overnight. Otherwise, proceed to the next step.
  • When ready to cook, transfer the chicken and onions (scrape every last bit out of your bowl) to a heavy-bottomed pot, deep skillet or Dutch oven. Cover and cook the chicken over medium or medium-low heat, gently stirring and turning the chicken every 15 minutes or so, until the chicken is tender enough to pinch off the bones. (This will take approximately one hour, but longer if using a free range chicken). Keep the heat adjusted so that the chicken doesn't scorch, and only add a little water if you feel you must. Typically the chicken will braise in its own juices.
  • When the chicken is cooked, carefully transfer it to a plate and cover.
  • Continue cooking the onion mixture and sauce over medium-low heat, stirring occasionally, until the liquids evaporate and the onions can be mashed into a blended mass which separates from the oils. If your onions do not appear to be melding, you can give a few pulses with an immersion blender, but do not overprocess.
  • Add the preserved lemon, olives, the rest of the saffron, and a few tablespoons of water, and simmer gently for 5 to 10 minutes. Return the chicken to the pot to heat through, or place under the broiler to brown the skin.
  • Place the chicken on a serving platter, pour the onion sauce over the top and sides, and garnish the top of the chicken with the quartered lemon and some olives.
  • For casual meals, consider garnishing the chicken with a handful or two of french fries (patate frite), which may also be offered as a traditional side.
  • Moroccan tradition is to eat by hand, using crusty Moroccan bread for soaking up the sauce.

4 lbs. chicken cutlets
salt and pepper
~1 cup arrowroot flour
2-8 tbsp. olive oil
1 tbsp. finely chopped fresh parsley
2 lemons
2 cloves garlic, minced
2 1/2 - 3 cups chicken broth
2 tbsp. arrowroot flour
2-3 tbsp. capers (drained)

Steps:

  • Preheat oven to 300 degrees. A chicken cutlet is a chicken breast butterflied open. You can either do this yourself, or purchase it already like this. Once you have your chicken into "cutlets" break them down so that they are cut in half, lenthwise, and no longer attached to each other (It will look like 2 thinner breasts). Season both sides of the cutlets with salt and pepper. Place 1/2 cup of arrowroot flour in a bowl. Lightly dredge both sides of the cutlets in the arrowroot flour to coat them, you just need them lightly coated not caked on (if you run out of the flour you may need to add another 1/4 cup or so). In a dutch oven or large skillet, heat 2 tbsp. olive oil over medium-high heat. In batches, lightly brown both sides of the cutlets (about 3 minutes per side) and as you go, set the browned ones on plate on the side (they won't be cooked through yet, don't worry. They just need a light brown crust on both sides right now). With each batch that you brown the chicken cutlets, if your skillet is dry add another tbsp. of olive oil each time if you need it (arrowroot flour gets rather sticky to the skillet so you need to be sure that it has plenty of oil coating the bottom all times). Once all of your chicken is brown and resting on a plate, lets make the sauce. Reduce heat to med-low in the same skillet or dutch oven. Add garlic to the skillet and saute for 30 seconds, being careful not to burn. Pour in the 2 cups of chicken broth into the skillet and whisk constantly, scraping up all the brown bits on the bottom. In a small bowl, whisk together the remaining 1/2 cup of broth with 2 tbsp. of arrowroot flour and the juice of 1 lemon. Pour that into the skillet and whisk constantly until the sauce begins to thicken. You want to bring it to a light simmer while whisking. Once the sauce has thickened (about 3 minutes) remove from heat. Add the drained capers. At this point, if you think your sauce is looking too thick, go ahead and add in another 1/2 cup of broth. Nestle in all of the browned chicken cutlets into the sauce. **If you are doing this in a Crockpot: pour the sauce and capers into a crockpot and nestle the chicken in. Cook on Low for 4 hours.** Cover the dutch oven, and bake in the oven for 2 hours. Remove from oven and let cool for 10 minutes (the sauce thickens back up a tad). Garnish with parsley and thinly sliced lemon rounds while cooling. Serve and Enjoy!
