EASY CHICKEN SANDWICH MELTS
These chicken sandwich melts are scrumptious and they are an easy company-ready dish that takes minutes to put together. They will win over a crowd every time! This spread is loaded with cheesy chicken and tomatoes and is seasoned to perfection!

Steps:
- Drain canned chicken well and transfer to a large mixing bowl, then break it up lightly with a fork.
- Stir in 3/4 cup mayo or to taste along with Johnny's seasoning to taste (I used a little more than 1/4 tsp seasoning).
- Add diced tomatoes, chopped cilantro and shredded cheddar cheese. Stir to combine.
- Add Sriracha hot sauce to taste. The Sriracha hot sauce gives it a nice kick and it's so good, but if you want it to be kid friendly, you can divide the mixture and only put it into half of the spread.
- Spread generously over good sliced bread (this one's from Costco) and bake uncovered on a cookie sheet at 350˚F for 8 minutes. Garnish with fresh cilantro and fresh tomatoes if desired.
EASY NEVER-FAIL BREADED CHICKEN
This is the most simple chicken recipe I've ever made. My mom came up with it and I tweaked it a tiny bit and we eat it at least 3 times a month. I honestly don't see how anyone could dislike this chicken. I recommend serving it with homemade mashed potatoes!

- Preheat oven to 375 degrees.
- Melt 2 T butter and pour into shallow baking dish.
- Melt remaining 4 T butter in small bowl.
- Dip chicken in butter (in bowl, not baking dish) and then dredge in bread crumbs.
- Place coated chicken into baking dish.
- Sprinkle cheese on top of chicken.
- Cooking times vary according to the thickness of the chicken and your individual oven, so start checking for doneness after about 25 minutes. It takes about 35-40 in my oven.
- Chicken is done when juices run clear and you can easily cut it with a fork.

CRISPY CHICKEN FLORENTINE MELT

- Preheat the oven to 375 degrees F.
- Make a breading assembly line with 3 separate dishes: flour seasoned with salt and pepper, milk and eggs whisked together and panko seasoned with salt and pepper. Season the chicken breasts with salt and pepper, then bread them by dredging in the flour, then dipping in the egg mixture and finally coating in the crumbs. Set aside.
- Melt 4 tablespoons of the butter with 4 tablespoons of the olive oil in a large skillet over medium heat. Brown the chicken breasts on the first side for 3 to 4 minutes, being careful not to burn them. Flip and brown them for another 3 to 4 minutes. Remove to a rack placed over a baking sheet and transfer to the oven to finish cooking, about 5 minutes.
- Remove the chicken from the oven and turn on the broiler. Top the chicken with the mozzarella slices and broil until the cheese is melted.
- Heat a small skillet over medium-high heat and add the remaining 1 tablespoon butter and 1 tablespoon olive oil. Add the tomatoes, sprinkle with salt and pepper and toss to cook quickly until the tomatoes start to break apart, about 2 minutes. Add the spinach and garlic, then stir/toss to wilt the spinach, 2 to 3 minutes. Spoon the tomato/spinach mixture over the chicken and serve.
BREADED CHICKEN MELT
I've had this recipe for years and I can't remember where I got it. It takes a little effort to make but it is soooo delicious that it's worth the effort.

- Using meat mallet or tenderizing hammer, pound chicken breasts to 1/4 inch thickness.
- In shallow dish, mix together cornstarch, cumin and garlic salt. Dredge chicken once piece at a time, coat well.
- In small bowl, mix egg and water.In another small bowl, place cornmeal.
- Dip coated chicken, first in egg mixture bowl and then in cornmeal bowl, turning to coat well.
- In large frypan, place oil and heat to medium temperature. Add chicken and cook 2 minutes on each side.
- Place browned chicken in shallow baking pan. Lay avocado slices on top of chicken and sprinkle with cheese.
- Bake in 325 degree oven for 15-20 minutes or until fork can be inserted in chicken with ease and cheese melts.
- Top each chicken breast with sour cream, sprinkle with green onion and red pepper.

- Preheat oven to 350 degrees F (175 degrees C).
- In a small shallow dish combine the stuffing mix, cheese, parsley, curry powder and seasoning. Mix together.
- In an 8x11 inch baking dish, melt the butter/margarine in the microwave. Dip the chicken breasts in the stuffing mixture, coating both sides of each breast.
- Place chicken in baking dish and sprinkle any leftover stuffing mixture over the chicken. Bake in the preheated oven for 20 minutes, then turn chicken pieces over and bake for another 20 to 25 minutes or until chicken is cooked through. Enjoy!
