This simple preparation of cod has been a favorite for generations. Using pieces of fillet equal in thickness is important for ensuring even baking; if you have any pieces that are particularly thick or thin you may want to bake them in a separate pan to ensure that they are not over or under baked.

Steps:
- Preheat the oven to 425°F. Line a baking sheet with parchment paper.
- Sprinkle cod with salt and pepper and arrange on the baking sheet. Drizzle it with half the butter and half the lemon juice.
- In a small bowl, combine bread crumbs, parsley and chives.
- Sprinkle the mixture over the cod and drizzle with remaining butter and lemon juice.
- Bake just until bread crumbs are crisped and cod flakes easily with a fork, about 12 minutes.

I found this on the internet and it is easy, quick and delicious. Cooking times will depend on the thickness of the fish but I am using the time it took to cook a 3 inch thick piece of cod. I imagine this recipe would work with other light white fish also.

Steps:
- Preheat oven to 450F degrees. Spray jelly-roll pan with nonstick vegetable cooking spray.
- Combine mayo, parmesan cheese, lemon juice, anchovy paste and salt and pepper.
- Combine bread crumbs and parsley.
- Spoon mayonnaise mixture on one side of the cod and dip the coated side in the breadcrumb mixture. Place fish on pan with crumb side up.
- Bake 15 to 20 minutes or until fish is cooked through and bread crumbs begin to brown. Serve with lemon wedges.

BREADED AND BROILED BLUE COD

Steps:
- Preheat broiler.
- Place the garlic cloves in the bowl of a food processor and process until fine. Add the bread slices and process them into crumbs. (You should have 4 cups.)
- Transfer the garlic and bread crumbs to a bowl and mix in the scallions, pepper and salt. Add the oil and rub the mixture gently between your hands to moisten the bread crumbs with the oil. The mixture should be loose.
- Arrange the blue cod steaks side by side on a nonstick baking sheet. Cover with half the crumbs, patting crumbs lightly over the surface of the fillets. Place the fillets under the broiler about 5 inches from the heat and cook about 3 1/2 minutes, until the crumbs are nicely browned.
- Gently turn the pieces of fish over with a spatula and pat the remaining seasoned bread crumbs lightly over their surface. Then place the fillets under the broiler for another 3 1/2 minutes. The crumbs should be thoroughly browned and the fish just cooked through. Since cooking time will vary depending on the thickness of the fillets, check to see if they are cooked by cutting into one. If more cooking is needed, turn off the broiler and let the fish remain in the hot oven for three to four minutes.
- Serve immediately, one fillet steak per person, with a wedge of lemon, if desired.

BAKED COD WITH GARLIC AND HERB RITZ CRUMBS

- Preheat the oven to 400 degrees F.
- Pour 2 tablespoons olive oil in a 9 x 9-inch ceramic baking dish (it should be just big enough to hold the fish) and tilt the dish to coat the bottom with oil. Place the fish fillets in the dish and turn to coat both sides with the oil. Sprinkle the fish with 1 1/2 teaspoons salt and 1/2 teaspoon pepper and bake for 10 minutes.
- Meanwhile, combine the cracker crumbs, panko, parsley, garlic, lemon zest, and 1 teaspoon salt in a small bowl. Add the melted butter and stir until evenly moistened. Set aside.
- Remove the fish from the oven and pour the wine and lemon juice directly on the fillets. Pat the crumb mixture evenly onto the fillets, pressing gently to help them adhere. (Don't worry if some crumbs get into the sauce!)
- Return the pan to the oven for 12 minutes, until the fillets are just cooked through in the center, depending on the thickness of the fish. Sprinkle with salt and serve hot with the pan juices and lemon wedges.
OVEN-BAKED COD WITH BREAD CRUMBS

- Preheat the oven to 400 degrees F (200 degrees C). Lay cod fillets in a baking dish and season lightly with salt and pepper.
- Combine water and fish bouillon cube in a bowl. Stir to combine and pour over cod.
- Mix bread crumbs, butter, parsley, dill, tarragon, salt, and pepper in a bowl with a fork until crumbly. Sprinkle evenly over cod.
- Bake in the preheated oven until fish flakes easily with a fork and the crust is golden and crunchy, about 20 minutes.

- Preheat oven to 350 degrees.
- Rinse off cod fillets well under cool water.
- Sprinkle well with lime juice and set aside.
- Mix together bread crumbs, salt, mace, and cayenne.
- Pour into a shallow dish suitable for dredging.
- Beat together eggs and water.
- Put coconut in a shallow dish suitable for dredging.
- Melt butter and pour into bottom of a baking dish.
