Steps:
- Line 2 baking sheets with waxed paper; set aside. Line 2 additional baking sheets or 1 tray with paper towels; set aside.
- Place 1 1/2 cups of flour in a shallow bowl. Pour the milk into a second shallow bowl. In a third bowl, stir together the cornmeal, 2 cups flour, sugar, salt, paprika, cayenne pepper, thyme, and black pepper.
- Dip the onion rings first into the plain flour, then into the milk, and last into the cornmeal mixture. Place the breaded rings on the wax paper-lined baking sheets.
- Heat the oil in a large heavy skillet over medium-high heat, or deep-fryer to 365 degrees F (185 degrees C).
- Fry the onion rings a few at a time in the hot oil so they are not crowded, until golden brown. Drain on paper towel-lined baking sheets, and serve immediately.

CORNMEAL-FRIED ONION RINGS
Steps:
- Peel the onions, slice them 1/2 to 3/4-inch thick, and separate them into rings. Combine the buttermilk, 1 1/2 teaspoons salt, 1 teaspoon pepper in a medium bowl. Add the onion rings, toss well, and allow to marinate for at least 15 minutes. (The onion rings can sit in the buttermilk for a few hours.) In a separate bowl, combine the flour, cornmeal, 1 teaspoon salt, and 1/2 teaspoon pepper. Set aside.
- When you're ready to fry the onion rings, preheat the oven to 200 degrees F. Line a baking sheet with paper towels.
- Heat the oil to 350 degrees F in a large pot or Dutch oven. (A candy thermometer attached to the side of the pot will help you maintain the proper temperature.) Working in batches, lift some onions out of the buttermilk and dredge them in the flour mixture. Drop into the hot oil and fry for 2 minutes, until golden brown, turning them once with tongs. Don't crowd them! Place the finished onion rings on the baking sheet, sprinkle liberally with salt, and keep them warm in the oven while you fry the next batch. Continue frying the onion rings and placing them in the warm oven until all the onions are fried. They will remain crisp in the oven for up to 30 minutes. Serve hot.
VIDALIA ONION CORNBREAD
This is a gluten free adaptation of Paula Deen's recipe. I've made this several times, and it has quickly become one of my family's favorites. I use organic yellow cornmeal and whole buttermilk. I really could not imagine dill (of all things) in a cornbread recipe, but it is really good with it! This bread also reheats...

Steps:
- 1. Preheat oven to 450 degrees and spray an 8 X 8 baking pan with cooking oil.
- 2. Saute chopped onion in butter for about 3 minutes until tender but not browned. Remove from heat.
- 3. Measure the cornmeal, corn flour, baking powder, salt and dill in a bowl and mix. In another bowl, beat the egg, add the buttermilk, sour cream, and 1/2 cup cheese, and stir to mix. Combine the wet and dry ingredients, add the cooked onion, and stir until well combined.
- 4. Pour into prepared pan, sprinkle with remaining cheese, and loosely cover with foil for approximately 15 minutes of cooking time. Remove cover and cook for the remaining time. Cool briefly before cutting.
SOUTHERN-FRIED SWEET ONION RINGS
Thin enough to flash-fry but thick enough to let the sweet onion flavor shine through, these onion rings work well as a side dish but also are great as a stand-alone snack. Less is more when dipping the rings in the buttermilk mixture and then the flour mixture. Be delicate in the coating process, and make sure to let as much liquid and then as much flour fall off as possible. Less breading means less grease absorption and a crisper finished product. The flour should be as fine as possible, so reserve half of the flour mixture. When the first batch starts to get wet and gummy, replace it with the remaining half. The oil temperature matters, too. Heat the oil to at least 360 degrees, and fry the rings in batches. They cook so quickly it is easy to get through the frying in 10 minutes. Keep them warm in a 200 degree oven until all the frying is done.

Steps:
- Heat oil in a large heavy pot. It should be at least 3 inches deep, but more is better.
- In a wide shallow bowl, whisk together flour, cornmeal, cornstarch and cayenne. In a second bowl, beat egg and buttermilk. Separate onion slices into rings.
- Working in batches, lightly toss the rings in the flour mixture, then dip into the buttermilk mixture. Allow most of the liquid to drip off, then toss again in the flour mixture. Shake off as much flour as possible and place the rings into the hot oil.
- Fry for 2 to 3 minutes or until golden brown, moving the rings around a bit in the oil to keep them separated.
- Put the onion rings on a plate or bowl lined with paper towel and salt. Repeat until the onions are done.

Steps:
- Preheat the oven to 425°F. Grease a large baking sheet with cooking spray.
- Slice the onions into 1/2-inch wide rings then place the rings in a bowl of water.
- In a medium bowl, whisk together the flour, 1 teaspoon salt and 1/4 teaspoon pepper. In a second medium bowl, whisk together the egg whites and the mayonnaise. Add the breadcrumbs to a third medium bowl.
- Remove each onion ring from the water, shaking off any excess and then placing it immediately into the flour, tossing until it's thoroughly coated, then dip the onion ring into the egg white mixture until it's thoroughly coated and then into the breadcrumbs, pressing them firmly onto all sides of the onion ring. Place the onion ring on the prepared baking sheet and repeat the coating process with the remaining onion rings.
- Throughly spray the onion rings with cooking spray (this is optional, but it helps them brown more evenly). Bake the onion rings for 10 minutes then flip them once and bake an additional 5 minutes until they're golden brown and crispy. Serve immediately with your favorite dipping sauce.

Steps:
- Cut off the stem end of the onion, peel back the skin, and cut the onion into 1/2-inch slices. Separate the onion slices into rings and discard or save the ends for making stock.
- Bowl 1: Add the 2 tablespoons of flour to a medium bowl. Set aside.
- Bowl 2: Crack the egg into a medium bowl and scramble slightly. Add the milk, melted butter, and 1/2 cup of flour. Stir to combine and set aside.
- Bowl 3: Combine the panko breadcrumbs, cornmeal, dried parsley, paprika, chili powder, garlic powder, pepper, and salt.
- Preheat the oven to 425˚F, and spray two large baking sheets with cooking spray or layer with parchment paper.
- Drop each onion ring into the flour bowl and coat thoroughly with flour.
- Remove the onion ring from the flour and drop it into the egg mixture. Flip to coat entirely.
- Remove the batter-coated onion ring, let the extra batter drip off, and then drop it into the breadcrumb mixture and coat completely.
- Carefully remove the breaded onion ring without shaking off the coating, and place it on the prepared baking sheet.
- Repeat with the remaining onion rings and place them on the baking sheet without touching each other. You can put little rings inside of big ones to save space.
- Bake the onion rings in a preheated oven until crispy, about 15 to 20 minutes. Turn over about halfway through so each side browns evenly.
- Preheat your air fryer to 425˚F for about 5 minutes. Lay the coated onion rings in a single layer in the air-fryer basket, leaving a little space in between each ring.
- Return the basket to the air fryer and cook 15 to 20 minutes, or until crispy and golden. Flip about halfway through so they cook evenly. Repeat with the remaining onion rings.
- Serve warm with ketchup or your favorite dipping sauce. Serves 2.

Steps:
- Preheat oven to 425°F. Spray two baking sheets with nonstick olive oil spray, line them with parchment paper, and spray with another coating of olive oil spray. Combine the semolina, ancho powder, and two teaspoons salt in a shallow, flat-bottomed bowl and stir gently to combine. In another shallow, flat-bottomed bowl, combine the eggs and ¼ cup water and beat lightly. In a third shallow, flat-bottomed bowl, combine the panko breadcrumbs, chipotle powder, and the remaining two teaspoons salt, and stir gently to combine. Line up the bowls in a row and place them next to the baking sheets. Cut the onions into ⅓- to ½-inch slices. Do not break the rings apart. You'll have about 8 slices per onion. Holding one slice of onion gently so that the rings do not break, place the slice flat in the semolina, and pat some of the mixture on the top to coat the entire slice very well. Still holding the onion slice together, transfer it to the egg mixture and coat it with egg. Transfer the onion slice to the panko mixture and coat well, patting panko liberally and thoroughly on top (but not between the rings). Place the onion on the prepared baking sheet. Repeat with the remaining onion slices and place on the sheet about one inch apart from each other. Bake for 10 to 12 minutes, or until crunchy. These are best served immediately.

- Heat vegetable oil in a 4-quart saucepan or pot over medium-high heat until temperature reaches 360 degrees. Meanwhile, cut off the ends of the onions and remove the thin peel on the onions. Slice the onions into 1/2-inch thick slices and separate them into individual rings.
- Combine remaining 3/4 cup flour and remaining 3/4 teaspoon salt in a medium size bowl. Whisk together the milk and egg in a measuring cup then add to the flour mixture in the bowl. Whisk together until smooth. The batter will be thin.
- Place the breadcrumbs in a dinner plate. Toss each onion ring in the flour and salt mixture, pressing flour on to the rings. With the other hand, dip the ring in the batter. With the first hand, place it in the breadcrumbs and gently press them into the battered ring. Keep one hand for batter and one hand for flour and breadcrumb mixture. This will keep your fingers from clumping with balls of batter and flour/breadcrumbs.

- Heat 1 tablespoon oil in a 10-inch cast-iron skillet over medium-high heat. Use a pastry brush to spread the oil over the bottom and up the sides. When the pan is very hot, add onion and cook, without stirring, until golden brown and even lightly charred on the bottom, 3 to 5 minutes. Drizzle in 1 tablespoon oil and stir so the browned onion is on top and unbrowned onion is on the bottom. Remove from heat.
- Meanwhile, whisk cornmeal, baking soda and salt in a large bowl. Whisk buttermilk, egg and the remaining 1 tablespoon oil in a large measuring cup. Add the wet ingredients to the dry ingredients and stir to combine. Slowly pour the batter over the onion.
- Bake the cornbread until golden brown, 35 to 45 minutes. Run a knife around the edge of the pan to loosen it. Let cool on a wire rack for at least 15 minutes. Place a cutting board over the pan. Wearing oven mitts, turn the pan over to release the cornbread onto the board. Cut into 12 slices.

- Brush 2 tablespoons vegetable oil on the bottom and sides of an 8- or 9-inch cast iron skillet and place in a cold oven.Set the oven to 425 degrees with the skillet in the oven. Set a timer for 8 minutes. This should be enough time to preheat it plus a few minutes. It should take about 8 minutes to prepare onions and batter.
- Meanwhile, remove papery outside skin from onion. Do not cut off the bottom of the onion yet. Slice the onion in half vertically. Slicing from top to bottom, cut 6 or 7 slices about 1/4-inch thick. Cut off the bottom of the remaining onion and other half of onion and dice it (about 3/4 cup).
- Lightly beat eggs in a medium bowl with a fork. Add milk, butter, and remaining 2 tablespoons vegetable oil and stir with a fork. Add cornmeal mix and stir just until all ingredients are combined. (Or prepare just the batter according to your package directions). Let stand about 3 minutes to thicken slightly. This will help prevent the onions from sliding when you add the batter. When the timer goes off, remove the hot skillet from the oven and place on the stovetop. Quickly arrange the onion slices on the bottom of the skillet around the outside edges of the pan.
- With a large spoon, dollop batter over the onion slices. Pouring the batter tends to make the onion slices move around. Place the skillet in the oven and bake for 25 minutes or until a toothpick inserted in the center comes out clean.

- Add the oil to your skillet and heat on medium high heat. Arrange the onion slices in a single layer over the bottom of the skillet, adjusting the slices to fill as much of the surface as possible. Cook the onions, without moving them, for about 8 minutes, or until they are starting to soften and turn golden on the bottom (take care not to let it burn.) Remove from the heat.
- Whisk together the cornmeal, flour, baking powder and salts in a large mixing bowl. Blend in the cheese.
- In a separate bowl whisk together the eggs, buttermilk, and melted butter, mixing well to break up the eggs.
