WALNUT SAUCE WITH PASTA

This quick and delish walnut sauce is perfect for your pasta: it's light, simple, delicious, it comes together in minutes and requires minimal ingredients!

Number Of Ingredients 10

3/4 cup (3oz/80 grams) walnuts, shelled
1/4 cup (30 grams) Parmesan, grated or cut into pieces
1 (1oz/25 grams) small slice of bread without crust, milk-soaked and drained
5 Tbsp (75ml) milk, to blend the sauce (optional)
2 Tbsp olive oil, plus more for drizzling
1 garlic clove
fine salt, to taste
black pepper, to taste
1/2 lb (220 grams) Pasta (spaghetti, fusilli, penne...)
salt, to taste

Steps:

  • Cook your pasta in salty boiling water until al dente.
  • Meanwhile, tear up the bread, place it into some milk, and leave to soak for a couple of minutes.
  • Put the walnuts, garlic, and grated parmesan into a small food processor. Squeeze out the excess milk from the bread and add it to the other ingredients.
  • Add the olive oil, 4 or 5 Tbsp of milk or pasta cooking water*, and a generous pinch of salt and pepper. Blend them all together until well combined.
  • Taste and adjust the seasoning.
  • Drain your pasta and reserve 1 cup of the starchy cooking water.
  • Return the pasta to the pot, stir in the walnut sauce and add as much pasta cooking water as needed to thin out and give a nice and creamy texture to the dish.
  • Serve immediately with an extra drizzle of olive oil, freshly ground pepper and extra grated parmesan cheese you like.

6 ounces shelled walnuts
1/2 clove garlic, minced
1 slice bread, crusts removed
2/3 cup whole milk
1 ounce grated Parmesan, plus more for garnish
3 to 4 tablespoons olive oil (preferably Ligurian)
Salt and pepper
2 pounds any flat short pasta
1/2 cup chopped Italian parsley, for garnish

Steps:

  • Put a large saucepan of water on to boil, and toast the walnuts in a dry frying pan until they begin to make a nutty aroma. Put the bread in a bowl and cover with the milk. Put most of the toasted walnuts (reserving about 1 ounce for garnish) into a blender along with the garlic, bread soaked in milk, and Parmesan. Blend until it turns smooth and creamy, then pour in the oil and season well with salt and pepper before blending again.
  • Pour into a bowl, and set aside.
  • Add pasta to boiling water with salt and cook for the required amount of time. When pasta is al dente, reserve a cup of the pasta cooking liquid and then drain the pasta, but put it in to a large bowl while it's still dripping slightly with water. Sprinkle a little olive oil over the pasta to prevent it sticking together, and then add the walnut sauce, mixing it into the pasta (splash in a little pasta cooking liquid to make the sauce less thick if needed).
  • Roughly chop the remaining walnuts and toss them over the top along with some more Parmesan and the chopped parsley.

1l full-fat milk
1 small onion , finely sliced
50g butter
generous grating nutmeg
3 bay leaves
2 garlic cloves , sliced
8 slices white bread , crusts removed
50g walnut

Steps:

  • Pour the milk into a pan, add the onion, butter, nutmeg, bay and garlic, then bring to the boil. Turn the heat to its lowest setting and infuse the milk for 30 mins. If you have time, do this the day before, leave to cool completely, then chill overnight.
  • To make the sauce, bring the milk back up to the boil and break the bread into large chunks. Fish out the bay leaves, then add the bread and most of the walnuts to the sauce.
  • Blitz everything in a food processor or with a hand blender, then season to taste. Serve the sauce piping hot, scattered with the rest of the walnuts, one of the bay leaves and a little butter melting over the top, if you like.

1 cup chopped walnuts
3 large eggs, lightly beaten
2 cups milk
1/2 cup sugar
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 tablespoon pure vanilla extract
1 cup peeled diced apple (such as Gala or golden delicious)
1/3 cup raisins
3 cups cubed Italian bread (cut into 3/4-inch cubes)
2 cups eggnog
1 tablespoon cornstarch
1 teaspoon pure vanilla extract
1/2 teaspoon imitation rum extract

Steps:

  • Toast walnuts 8-10 minutes at 350°.
  • Reduce oven heat to 325°.
  • Grease 11x7x2-inch baking pan and set aside.
  • Place eggs, milk, sugar, vanilla, cinnamon, allspice in large bowl and stir until well mixed.
  • Add apples, raisins, bread cubes, and toasted walnuts; toss to combine.
  • Spread mixture in prepared pan.
  • Bake 35 minutes, or until firm.
  • To make Easy Eggnog Sauce:.
  • Whisk eggnog into cornstarch in a small saucepan.
  • Stirring constantly, bring to a boil over medium heat and boil 1 minute.
  • Remove from heat, stir in extracts, cool 5 minutes.
  • Serve with bread pudding.

Chicken stock, preferably homemade (page 160), or water as needed
One 3- to 4-pound chicken, trimmed of excess fat
2 medium onions, peeled and quartered
2 carrots, chopped
2 celery stalks, chopped
1/4 cup fresh parsley leaves, stems reserved and tied together
Salt and black pepper to taste
1 thick slice day-old bread
1 cup walnuts, blanched
3 garlic cloves, peeled
1 fresh hot red chile, stemmed and seeded, or 1 teaspoon pure chile powder, like ancho or New Mexico

Steps:

  • Bring a pot of chicken stock or water to a boil (starting with stock will mean even more flavorful chicken and even better stock when you're done). Add the chicken, onions, carrots, celery, parsley stems, salt, and pepper; the liquid should just cover the chicken. Simmer, uncovered, over low heat, until the chicken is cooked through, about 30 minutes. Remove the chicken and cool to room temperature. Strain the stock and set aside.
  • Put the bread in a bowl and saturate it with some of the stock. Squeeze any excess liquid out of the bread, then place it in a food processor with the parsley leaves, walnuts, garlic, and chile. Process until the walnuts are ground, then, with the machine running, pour in enough of the reserved stock to form a creamy sauce, about 2 cups. Reserve the remaining stock for another use.
  • Season the sauce with salt and pepper. Carve the chicken and serve it with the sauce.
  • Walnut Chicken Salad
  • When the chicken is cooked, remove the meat from the bones and chop into small pieces; combine with enough of the sauce to create a chicken salad. Serve at room temperature.

Steps:

  • First melt the butter over medium heat in a 3-1/2 quart saucepan, stir in the brown sugar, and cook until the sugar fully melts.
  • Then rapidly stir in the lemon zest, the vanilla, the walnuts, the cinnamon, and the allspice and cook gently over medium heat until all the ingredients thoroughly come together.
  • Then just before you're ready to serve, slowly pour in the rum, stir it quickly into the sauce, and cook it-slowly stirring all the while-for about 3 minutes to marry the ingredients and to drive off all but the essence of the liqueur.
