CHERRY ALMOND BREAD (BREAD MACHINE)
This bread has a fantastic nutty flavor. Biting into a dried cherry is like a little taste of heaven. It reminds me of the specialty breads I buy from a local breadmaker, Montana Mills... but a lot cheaper! I found this online, where it was posted by Tony van Roon. He also recommends trying it with canned cranberries, although I haven't done that myself because I like it just the way it is.

Steps:
- Add ingredients to the bread machine pan in the order suggested by the manufacturer.
- Use the basic/white bread cycle and the light or medium crust color setting.
- Remove bread from pan; cool on wire-rack.
- To toast almonds: Spread in a shallow baking pan large enough to accommodate a single layer.
- Bake the almonds at 350 F for 6 to 12 minutes or until golden brown; stir a couple of times and check often or they will burn.
- Cool before adding to your bread machine!

BREAD MACHINE ALMOND BREAD
I wanted a bread with some extra protein for breakfast, so I came up with this. This is an excellent very faintly sweet breakfast bread with an unusual but satisfyingly 'bread' texture. The crust has a great flaky/chewy consistency while remaining soft. It is dense but not heavy and the extra protein from the almond flour keeps the mid-morning munchies away. It is very good with a slice of cheese and some fruit on the side. This is not (nor was it intended to be) a gluten-free recipe; the addition of vital gluten is critical to maintain cell structure for the rise. The xanthan gum is only in there because I like the ability to slice my homemade bread and use it for sandwiches.

Love banana bread and I love my bread machine. The pair together is the best thing since sliced banana bread! This is a super moist, cholesterol and fat (except the small amount in the flour) free bread that you can just pop into your bread machine and let it bake! It's the best banana bread I've ever had, and ever made. I hope you'll enjoy it! Note: Recipe does not double well in the bread machine. Should be fine if you want to do it by hand and bake in the oven at 350 for 40-50 minutes.

- Put the items into the bread machine in the order suggested by your manufacturer. I actually prefer the wet ingredients first for quick breads because otherwise the flour sometimes doesn't get mixed all the way inches.
- Set the bread machine for quick or sweet bread.
- Let it go!
- You can use different nuts, add some raisins, whatever you want. I might also add a little cinnamon next time.
- NOTE: Sucanat is dried cane sugar. You can also use half sucanat and half brown sugar.
- In order to make this a clean recipe, choose organic. My flour is milled from grain I purchase from non-gmo sources, but organic works too.
