BREAD AND BUTTER JALAPENOS FOR CANNING
My brother asked me to make these after eating some that a friend had bought commercially prepared. I found this recipe on recipecircus and had to modify due to some problems with the recipe. Once I tried them, I did not want to share! They are spicy and sweet and taste great on sandwiches and burgers. (Prep time includes veggie soaking).

JALAPEñO BREAD AND BUTTER PICKLES
Steps:
- Prep the jalapeños: Cut the stem end off of the jalapeños. Then cut them in half lengthwise. Remove and discard the seeds and the ribs.
- Salt the jalapeños and onions, cover with ice, and chill: Place the jalapeños in a large bowl. Add the onions and stir in the pickling salt so that it is well distributed. Cover the peppers with a clean, thin towel. Put ice over the towel and place the bowl in the refrigerator to chill for at 4 hours.
- Rinse and drain the jalapeños and onions: After the jalapeños and onions have been chilling for 4 hours, rinse the salt off of the peppers and onions. Drain, and rinse and drain again.
- Heat the jars: If you are planning to store your pickles outside of the refrigerator for any length of time, you will need to heat your canning jars in a hot water bath after canning. To heat the jars for canning, place the empty jars on a metal rack in a large, 16-quart canning pot. (Jars must rest on a rack in the pot, not on the bottom of the pot). Fill with warm water at least 1 inch above the jars and bring to a boil. Reduce heat to warm to keep the jars hot and ready for canning. Wash the lids in hot, soapy water.
- Make the pickling brine: In a 4 or 6 quart pot, put the vinegar, sugar, and spices. Bring to a boil to dissolve the sugar.
- Add the jalapeños and onions, then bring to a boil: Add the peppers and onions to the pot with the pickling solution. Bring to a boil again.
- Pack the jars: Watch the jalapeños. As soon as they are all cooked through (you can tell because their color changes from a vibrant to a more dull green), start packing your canning jars with the peppers and onions, using a slotted spoon to remove them from the pan. Pack the jars evenly with the peppers and onions, up to about 1 inch from the top of the jars. Then pour the brine over the peppers, until it covers them. Leave about 1/2 inch headspace between the tops of the pickles and the rims of the jars.
- Seal and process: If you are planning to store pickles outside of the refrigerator, you will want to process the filled jars in a hot water bath. Return filled jars to the same canning pot with its already hot water. The water level needs to be at least 1 inch above the top of the jars. Bring to a boil and boil hard for 15 minutes. Remove jars from the pot using tongs or jar lifters. If you live over 1,000 feet above sea level, adjust your processing time using the directions here . Cover the jars and let cool to room temperature before chilling in the refrigerator.

BREAD AND BUTTER JALAPENOS RECIPE

Steps:
- Scrub a 1 quart glass jar and its lid in hot soapy water. Rinse well and air-dry. Wash and dry the jalapenos. Prick each one several times with a fork. Stuff the jar with as many peppers as you can. In a small pot, combine the remaining ingredients with 3/4 cup water. Bring to a boil, reduce the heat, and simmer until the sugar is dissolved, about 5 minutes. Remove from the heat and carefully pour the hot liquid and spices over the jalapenos to almost the top of the jar. (A large-mouthed funnel may be useful here.) Seal the jar tightly with the lid, label with the date of creation, and refrigerate for a minimum of 1 week. The brine becomes spicier over time and makes excellent vinegar for dressings. The peppers can be stored for up to 2 months in the refrigerator.
BREADED JALAPEñOS
These pickled jalapeño peppers are stuffed with chunky peanut butter, dipped in flour, egg and bread crumbs, then fried. Carlos Jacott, El Parador's owner and maître d'hôtel, is said to have created the dish when, as a college student, he only had jalapeños and peanut butter in his refrigerator.

Steps:
- In a 6-quart saucepan, combine jalapeños, vinegar and 2 cups water and bring to a boil. Reduce heat to low and simmer until jalapeños are tender but not soft, 15 to 20 minutes depending on size. Drain and rinse with cold water. Using a small knife, make a slit along the side of each jalapeño. Keeping jalapeños as intact as possible, carefully remove and discard stems and seeds.
- Using a blunt knife or small spoon, spread 1 tablespoon peanut butter inside each jalapeño, pressing the opening closed. (Do not overlap edges.)
- Spread flour in a wide shallow bowl and roll filled jalapeños to coat them well, roll in egg, then roll in bread crumbs. Set aside on a plate.
- In a large skillet, add enough oil to come about 3/4 inch up the side. Place over medium-high heat until oil is shimmering. Working in batches, fry jalapeños until well browned and crisp on the undersides, 1 to 2 minutes. Turn and brown the other side. Transfer to paper towels to drain. Serve hot.
