2 cups whole milk, chilled
3 tablespoons sugar
2 teaspoons lime juice

Steps:

  • Slice the avocado slowly down the center lengthwise around the seed, starting at the narrower end.
  • Holding the avocado in the palm of one hand, use your other hand to twist and rotate the two halves apart.
  • Using a spoon, slip it under the seed to remove it. Using the same spoon, scrape the green flesh of the fruit and put it in the blender.
  • Next, add all other ingredients to the blender and mix it until smooth. Serve immediately.

½ avocado, peeled and pitted
1 cup half-and-half, divided
½ lemon
1 (14 ounce) can sweetened condensed milk

Steps:

  • Combine avocado and 1/4 cup half-and-half in a blender; blend until smooth. Pour mixture into a bowl, ideally one with a spout. Squeeze lemon juice over avocado mixture and stir.
  • Pour remaining half-and-half in the blender and shake it around to pick up any remaining avocado mixture; pour into the avocado mixture in the bowl. Add condensed milk and whisk until smooth.
  • Pour avocado mixture into ice cream maker and process for 25 to 30 minutes. Turn off machine and pour mixture into a 1 1/2 quart freezer-safe container; place in the freezer until ice cream is set and has increased in size, at least 3 hours.

Note: if you slice and freeze the banana first, you will have a colder and thicker shake. I prefer mine less cold, but I believe I am in the minority on that.

1 avocado
1 banana (not too ripe or it overpowers the avocado)
1/2 cup nonfat plain yogurt
1 cup low-fat vanilla soymilk (try "vita-soy" or "so good")
water or soymilk, to taste

Steps:

  • Halve the avocado, remove the pit, and squeeze each half into the blender (faster than scooping it out!).
  • Add banana, yogurt, and 1 cup of soy milk.
  • Blend on medium or high.
  • If it is too thick (it probably will be) you can add water or ice, or more soy milk if you'd prefer a slightly sweeter drink.
  • Drink within 1/2 hour of blending, or the shake will discolor slightly (flavor will remain the same, it just looks less good.).
