BRATWURST WITH SAUERKRAUT AND APPLE-POTATO HASH

- Preheat the oven to 250 degrees F. Bring a large saucepan of salted water to a boil; add the potatoes and cook until just tender, about 5 minutes. Drain and pat dry.
- Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the bratwurst and cook, turning, until browned, about 4 minutes. Remove to a rimmed baking sheet and keep warm in the oven.
- Add 1 tablespoon butter to the skillet along with the potatoes and apples; toss. Season with 3/4 teaspoon salt and a few grinds of pepper. Increase the heat to medium high and cook, tossing occasionally, until the potatoes and apples are golden brown and tender, 8 to 10 minutes. Add the scallions and sage and cook until the scallions are wilted, about 2 minutes. Add the vinegar, honey and the remaining 1 tablespoon butter. Cook, stirring, until the potatoes and apples are glazed, about 1 more minute.
- Mix the sour cream with the mustard in a small bowl. Serve the bratwurst with the potatoes and apples, sauerkraut and sour cream mixture.

BRATWURST AND SAUERKRAUT
There's nothing wrong with classic grilled brats with some sauerkraut on top, but they can be even better. Baking the sauerkraut with a little brown sugar adds a sweet note you never knew you needed.

- Preheat the oven to 350 degrees F. Drain the sauerkraut. If you like a milder flavor, rinse and drain it again. Place the sauerkraut in the bottom of a baking dish or oven-proof skillet. Sprinkle the sauerkraut evenly with the brown sugar. Prick the bratwurst on all sides with a fork and place them on top of the sauerkraut in a single layer. Season with black pepper, to taste. Place the baking dish in the oven and bake, uncovered, for 1 hour or until cooked through. Serve with hot mustard for dipping or on buns.

My mother used to make this all the time. It's a recipe that's been passed down the German side of my family for many generations, and we've all put our own spin on it over time. Feel free to add your own, too. Use a beer you like to drink, or leave out the sugar and use apple cider, if you prefer.

- Brown sausages and onion slices in oil in a wide skillet. The sausages do not need to be cooked through at this stage, you just want to get some color on them.
- Add sauerkraut, sugar, and beer. Stir as best you can around the sausages.
- Bring to a slow boil, reduce heat, and simmer until sausages are cooked through.
- Spread buns or rolls with mustard, and add a sausage and a bit of the sauerkraut and onion to each.
- This is great accompanied by the same beer you cooked with.

- Heat a large sauté pan over medium-high heat.
- Add the butter, then the brats.
- Brown on all sides, then remove and set aside.
- Reduce heat to medium.
- Add the onions and sauté until lightly browned, about 10 minutes, stirring often.
- Add the apples and toss until lightly golden.
- Add the sauerkraut, brats and beer.
- Stir in the caraway, thyme and pepper along with the water.
- Cover and simmer over medium-low heat until the brats are cooked through and the sauerkraut is tender, about 30 minutes.
- If necessary, remove the lid and cook further to remove excess moisture.
- To serve, spread mustard in each roll.
- Add a brat and top with some sauerkraut.

Had this at a farm sell. The sauerkraut on top of the brat was just great! This can easily be made for a large crowd and keep in a roaster.

- Saute onions in butter.
- When the onions are caramelized add garlic, saute for 1 minute.
- Add undrained sauerkraut, sugar, celery seed and bay leaf.
- Cover and simmer 1/2 hour.
- Add meat and simmer for 45 minutes.
- Serve on bun and top with sauerkraut.

- Position rack in center of oven; preheat to 400°F.
- Place caraway seeds and fennel seeds in small resealable plastic bag. Crush seeds with mallet. Add flour and pepper to bag; shake to blend.
- Spread sauerkraut over bottom of 13x9x2-inch glass or ceramic baking dish. Sprinkle 1/3 of flour mixture over. Arrange onion slices over; sprinkle with half of remaining flour mixture, then lightly with salt. Spread half of apple slices over, then sprinkle with remaining flour mixture. Place bratwurst over apples, then arrange remaining apple slices around bratwurst. Tuck in bay leaves.
- Mix broth, vermouth, and ketchup in measuring cup. Pour broth mixture evenly over. Cover tightly with foil.

- In a large skillet that has a lid, melt butter over medium heat. Add sausages in a single layer and brown 3-4 minutes on one side. Flip the sausages and add the sliced onions and allow the sausages to brown an other 3-4 minutes. Stir the sausages and onions and cook another 3-4 minutes or until the sausages are browned on all sides and the onions are beginning to reduce and caramelize. Add the celery seed, caraway seed, pepper, and brown sugar and continue cooking until the onions are golden and tender.
- Add the apple cider vinegar and mustard and stir to combine. Add the liquid of choice, bring heat to high until the mixture boils, then cover and reduce heat to low for 10 minutes.
- Increase heat to medium, remove cover, and simmer uncovered for 20-25 minutes or until the mixture is reduced and syrupy. Remove the sausages and keep warm (if you’d like, you can finish them off on the grill for a few minutes–this is a very tasty option.) Add the sauerkraut to the pan and heat thoroughly. Serve the sausages on buns with caramelized onions and sauerkraut.
