BRATWURST STUFFED CABBAGE ROLLS

This is adapted from Cook's Illustrated. The original recipe calls for 3/4 pound beef and 3/4 pound bratwurst, but I adjust that to 1 pound beef and 1/2 pound bratwurst, since it's easier to buy beef in 1-pound quantities. It's very good!

1 green cabbage, cored
1 tablespoon vegetable oil
1 onion, chopped fine
3 garlic cloves, minced
1 teaspoon ground ginger
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 (28 ounce) can tomato sauce
1/4 cup light brown sugar
3 tablespoons red wine vinegar
salt and pepper
2 slices white bread, torn into pieces
1/2 cup milk
1 lb 85% lean ground beef
1/2 lb bratwurst, uncooked, casings removed

Steps:

  • Heat oven to 350. Place cabbage in bowl, wrapped with plastic wrap, and microwave until outer leaves are pliable and translucent, 3 to 6 minutes. Carefully remove outer leaves and set aside. Replace plastic and repeat until you have 15 to 17 large, intact leaves.
  • Heat oil in Dutch oven over medium-high heat until shimmering. Cook onion about 5 minutes. And garlic, ginger, cinnamon, and nutmeg and cook about 30 seconds. Transfer half of mixture to small bowl and reserve. Off heat, stir tomato sauce, sugar, vinegar, ½ teaspoon salt, and ¼ teaspoon pepper into remaining mixture in Dutch oven.
  • Pulse bread and milk in food processor to form smooth paste. Add reserved onion mixture, beef, bratwurst, ½ teaspoon salt, and ¼ teaspoon pepper, and pulse to combine.
  • Using a sharp knife, trim tough ribs from cabbage leaves by making one slice down the length of the left and right side of each rib. Roll 2 tablespoons of meat mixture into each leaf and arrange seam-side-down in 9x13-inch baking dish. Pour sauce over rolls, cover with foil, and bake 45 minutes. Remove foil and bake 15 more minutes to slightly thicken sauce. Serve.

2 pounds sauerkraut
Light beer or white wine
3 tablespoons lard, bacon fat, or ham fat
3 tablespoons flour
1 pound ground beef, fine blade, double grind
1 pound ground pork, fine blade, double grind
1 cup cooked rice
1 egg, lightly beaten
1 onion, minced
2 garlic cloves, minced
Salt and pepper to taste
1 head of cabbage

Steps:

  • Make the filling: Put 1 pound each of beef and pork together through the fine blade of a food chopper twice. In a bowl, combine the meat with 1 cup cooked rice, 1 egg lightly beaten, 1 onion and 2 garlic cloves, both minced, and salt and pepper to taste. Remove 12 large outer leaves from a head of cabbage, reserving the remaining cabbage for another use. Dip the leaves briefly in boiling water to soften and spread them out flat on a work surface. Top each leaf with some of the filling and fold the leaves over the filling, tucking in the ends to make neat rolls. Put 2 pounds sauerkraut in a large kettle with light beer or white wine to cover and heat it gently. In a sauce pan melt 3 tablespoons lard, bacon fat or ham fat, blend in 3 tablespoons flour and cook the roux for 1 to 2 minutes. Blend it into the sauerkraut and bring the liquid to a boil, stirring constantly. Arrange the cabbage rolls on top of the sauerkraut and cook them, covered, in a moderate oven (350?F.) for 2 to 3 hours or until the filling is done. Serve the stuffed cabbage and sauerkraut topped with sour cream.;

2 tablespoons extra-virgin olive oil
2 garlic cloves, smashed
1 1/2 quarts crushed tomatoes
2 tablespoons white wine vinegar
1 tablespoon sugar
Kosher salt and freshly ground black pepper
2 tablespoons extra-virgin olive oil
1 yellow onion, chopped
2 garlic cloves, minced
2 tablespoons tomato paste
Splash dry red wine
2 tablespoons chopped fresh flat-leaf parsley
1 pound ground beef
1 pound ground pork
1 large egg
1 1/2 cups steamed white rice
Kosher salt and freshly ground black pepper
2 large heads green cabbage, about 3 pounds each

Steps:

  • To make the sauce:
  • Coat a 3-quart saucepan with the oil and place over medium heat. Add the garlic and saute for 1 minute. Add the tomatoes and cook, stirring occasionally, for 5 minutes. Add the vinegar and sugar; simmer, until the sauce thickens, about 5 minutes. Season with salt and pepper and remove from the heat.
  • Place a skillet over medium heat and coat with 2 tablespoons of the olive oil. Sauté the onion and garlic for about 5 minutes, until soft. Stir in the tomato paste, a splash of wine, parsley, and 1/2 cup of the prepared sweet and sour tomato sauce, mix to incorporate and then take it off the heat. Combine the ground meat in a large mixing bowl. Add the egg, the cooked rice, and the sauteed onion mixture. Toss the filling together with your hands to combine, season with a generous amount of salt and pepper.
  • Bring a large pot of salted water to a boil. Remove the large, damaged outer leaves from the cabbages and set aside. Cut out the cores of the cabbages with a sharp knife and carefully pull off all the rest of the leaves, keeping them whole and as undamaged as possible, (get rid of all the small leaves and use them for coleslaw or whatever.) Blanch the cabbage leaves in the pot of boiling water for 5 minutes, or until pliable. Run the leaves under cool water then lay them out so you can assess just how many blankets you have to wrap up the filling. Next, carefully cut out the center vein from the leaves so they will be easier to roll up. Take the reserved big outer leaves and lay them on the bottom of a casserole pan, let part of the leaves hang out the sides of the pan. This insulation will prevent the cabbage rolls from burning on the bottom when baked. Use all the good looking leaves to make the cabbage rolls. Put about 1/2 cup of the meat filling in the center of the cabbage and starting at what was the stem-end, fold the sides in and roll up the cabbage to enclose the filling. Place the cabbage rolls side by side in rows, seam-side down, in a casserole pan.
  • Preheat the oven to 350 degrees F.
  • Pour the remaining sweet and sour tomato sauce over the cabbage rolls. Fold the hanging leaves over the top to enclose and keep the moisture in. Drizzle the top with the remaining 2 tablespoons of olive oil. Bake for 1 hour until the meat is cooked.

1 slice white sandwich bread, crumbled
1 medium carrot, shredded
3 scallions, trimmed and thinly sliced
2 tablespoons tomato paste
2 tablespoons apricot preserves
1/2 cup reduced-sodium canned chicken broth
1/2 teaspoon dried sage
Coarse salt and ground pepper

Steps:

  • In a pot of boiling water, cook cabbage until outer leaves are bright green and pliable, 6 to 8 minutes. Remove from pot. Pull off 8 leaves. Trim thick core from each leaf.
  • In a bowl, mix pork, bread, carrot, 2 scallions, tomato paste, preserves, 1/4 cup broth, sage, 3/4 teaspoon salt, and 1/4 teaspoon pepper. Place 1 cabbage leaf in a small bowl. Fill halfway with pork mixture; fold leaf over filling. Repeat with remaining leaves. Place rolls, seam sides down, in a single layer on a heatproof plate.
  • In a 12-inch skillet fitted with a round rack, bring 1 inch of water to a simmer over medium heat. Place plate with rolls on rack. Pour remaining 1/4 cup broth over rolls; sprinkle with remaining scallion. Cover; steam until firm, 12 to 15 minutes (add more water as needed). Serve with steaming juices and scallions.

1 medium head cabbage
1 (19 ounce) package mild Italian sausage (such as Johnsonville®)
2 cups marinara sauce
1 (8 ounce) can tomato sauce
2 cups cooked rice
2 teaspoons dried basil, or more to taste
2 teaspoons dried oregano, or more to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Put olive oil on the bottom of a medium-sized baking dish. Remove casings from sausage.
  • Bring a large pot of water to a boil. Cook cabbage leaves until tender, about 12 minutes. Drain.
  • While the cabbage is cooking, remove casings from sausage. Cook and stir sausage in a skillet over medium-high heat, breaking it into pieces as it cooks, until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
  • At the same time, combine marinara sauce and tomato sauce in a saucepan over medium-low heat. Cook until warm, about 3 minutes; set aside.
  • Mix cooked rice, sausage, and 1/2 cup sauce with basil and oregano. Spread filling onto cabbage leaves and roll up like small burritos. The amount of filling in each will vary depending on how big your cabbage leaves are. Place cabbage rolls close together in the prepared dish and spoon remaining sauce over top.

1/2 teaspoon snipped fresh dill or dill weed

Steps:

  • Cook cabbage in boiling water just until outer leaves pull away easily from head. Set aside 12 large leaves for rolls. In a small bowl, combine the beef, pork, 1/2 cup tomato sauce, onion, rice, parsley, salt, dill and cayenne; mix well., Cut out the thick vein from the bottom of each leaf, making a V-shaped cut. 8 cabbage leaves (Savoy, Pointed or Hispi)
200g cooking chorizo, casing removed
200g long-grain rice
1 tsp smoked paprika (we used Spanish)
2 garlic cloves, crushed or finely grated
small bunch of parsley or coriander, leaves picked and finely chopped
2 tbsp olive oil
680g passata rustica (or use regular passata) or finely chopped tomatoes
15g parmesan, finely grated

Steps:

  • Bring a pan of salted water to the boil and prepare a bowl of iced water. Plunge the cabbage leaves into the boiling water for 1 min, then quickly but carefully lift into the iced water using a slotted spoon and leave to cool completely. Drain in a colander and set aside.
  • Crumble the chorizo into a bowl along with the rice, paprika, garlic, herbs and some seasoning. Scrunch everything together with your hands until well-combined.
  • To assemble, first cut away a V-shape around the thick part of the stem on each cabbage leaf. Divide the stuffing into eight portions and roll each into a thick sausage. Working with one sausage at a time, wrap a cabbage leaf around it, rolling it over and tucking in the sides as you go. Repeat the process until all the cabbage leaves are stuffed. Will keep, chilled, for up to a day.
  • Heat the oven to 200C/180C fan/ gas 6. Drizzle a small roasting tin or shallow casserole dish with half the oil, then pour over half the passata and 150ml of water. Nestle in the cabbage rolls, then pour over the rest of the passata. Cover the tin or dish tightly with a lid or foil and bake undisturbed for 1 hr and 10 mins. Remove the lid, scatter over the parmesan, drizzle with the remaining oil and bake for another 10 mins until the parmesan is golden. Serve straight from the dish.

  • Mix together rice mixture and cheese, set aside.
  • Spray an 11 x 9 inch baking dish with cooking spray.

1 pound ground sausage
1 onion, finely chopped
¾ cup uncooked white rice
1 cup water
salt to taste
ground black pepper to taste
1 large head cabbage
1 (32 ounce) jar sauerkraut

Steps:

  • In a large bowl, combine the ground beef, sausage, chopped onion, rice, water, and salt and pepper.
  • Bring a large pot of water a boil. Separate 12 to 15 large cabbage leaves from the head, and place in boiling water. Boil until soft, approximately 2 to 3 minutes. Remove from water, and set aside.
  • Into the center of each leaf, place a small amount of the meat mixture. Fold in the sides, and roll up from the bottom. Secure with a toothpick.
  • Place a layer of sauerkraut in the bottom of a large pot. Arrange cabbage rolls in a single layer over the sauerkraut. Cover with remaining sauerkraut. Pour in enough water to cover the rolls. Bring to a boil, lower heat, and simmer for 90 minutes.
