This recipe is from the package of Liptons Onion Soup, though I have written it in my own words with some tune ups for clarity. The children really like it, though I prefer it using the hot italian sausage rather than the sweet.

1 lb Italian sausage (hot or sweet)
4 medium potatoes
1 package dry onion soup mix
2 cups water

Steps:

  • Cook sausage in a little bit of water until just done.
  • Cook off water, or pour out of pan and pan fry sausage until well browned.
  • Wash potatoes (or peel if desired) and cut into bite sized chunks.
  • Remove sausage from pan.
  • Mix soup mix with water and use to deglaze the pan.
  • Add potatoes.
  • Bring to a boil, cover, then simmer for about 10-15 minutes , until potatoes are done.
  • Cut Sausage into disks about 1/2 inch to and inch thick.
  • Add to pan and stir well.
  • Simmer, with the cover off until sausages are heated through and the liquid is slightly thick.
  • Serve with crisp green salad and saute'd onions and peppers with crusty italian bread.

1/2 teaspoon dried basil
1/4 teaspoon salt

Steps:

  • In a heavy skillet, heat oil over medium-high heat. Add the potatoes; cover and cook for 6 minutes or until browned and crisp-tender, stirring occasionally., Add bratwurst, onion and green pepper. Cook and stir for 5 minutes or until meat is heated through and vegetables are crisp-tender., Combine the soy sauce, orange juice, basil, salt and pepper; add to the skillet. Cook and stir 1-2 minutes longer or until meat and vegetables are evenly coated.

1 1/4 pounds red-skinned potatoes, cut into 1/2-inch chunks
3 tablespoons unsalted butter
6 fully cooked bratwurst, halved lengthwise (about 11/4 pounds)
2 Golden Delicious apples, cut into 1/2-inch chunks
Freshly ground pepper
1 bunch scallions, chopped
1 tablespoon chopped fresh sage
1 tablespoon apple cider vinegar
1 tablespoon honey
1/4 cup sour cream
1 tablespoon grainy mustard
1 cup sauerkraut, drained, rinsed and warmed

Steps:

  • Preheat the oven to 250 degrees F. Bring a large saucepan of salted water to a boil; add the potatoes and cook until just tender, about 5 minutes. Drain and pat dry.
  • Meanwhile, melt 1 tablespoon butter in a large skillet over medium heat. Add the bratwurst and cook, turning, until browned, about 4 minutes. Remove to a rimmed baking sheet and keep warm in the oven.
  • Add 1 tablespoon butter to the skillet along with the potatoes and apples; toss. Season with 3/4 teaspoon salt and a few grinds of pepper. Increase the heat to medium high and cook, tossing occasionally, until the potatoes and apples are golden brown and tender, 8 to 10 minutes. Add the scallions and sage and cook until the scallions are wilted, about 2 minutes. Add the vinegar, honey and the remaining 1 tablespoon butter. Cook, stirring, until the potatoes and apples are glazed, about 1 more minute.
  • Mix the sour cream with the mustard in a small bowl. Serve the bratwurst with the potatoes and apples, sauerkraut and sour cream mixture.

This was really surprisingly good for such a quick and easy meal. The flavors blended well together and Dave added the mustard on the side. I thought this would serve 4 but Dave was hungry so I stated between 2-4 servings. He kept taking the brats out of the pan while I was cooking. From American Home Town Cookbook made my way.

2 teaspoons extra virgin olive oil
2 medium potatoes, cut in half lengthwise and sliced
4 -6 fully cooked bratwursts, cut into bite size pieces (I used Johnsonville)
1 small red onion, sliced
1/2 red pepper, sliced
1/2 yellow pepper, sliced
2 tablespoons teriyaki sauce
1 tablespoon orange juice
1/2 teaspoon dried basil
1/8 teaspoon black pepper (or more)

Steps:

  • In a large heavy skillet heat the oil over medium heat.
  • Cook the potatoes until they are lightly browned and crisp-tender, about 20 minutes turning occasionally.
  • Add the bratwurst, onion, and red and yellow bell peppers.
  • Stirring occasionally, cook until the vegetables are crisp-tender and heated through, 10-15 minutes.
  • Combine the teriyaki sauce, orange juice, basil,and pepper in a small bowl.
  • Stir the sauce mixture into the brats and vegetables, and heat through, about 5-10 minutes.
  • We served this with Stone Ground Mustard on the side for dipping the brats.

2 large yukon gold potatoes, unpeeled and diced
2 tablespoons butter
1 medium onion, finely chopped
1/2 cup shredded carrot, 1 medium
3 large shallots, chopped
1 garlic clove, minced
1 (14 ounce) can vegetable broth, can sub chicken broth
1/3 cup flour
1 cup light cream, can sub whole milk
1 teaspoon caraway seed, crushed
1/4 teaspoon black pepper
16 ounces sharp cheddar cheese, grated
1 tablespoon spicy brown mustard
2 teaspoons horseradish
4 -5 cooked bratwursts, halved lengthwise and sliced
12 ounces beer, plus
1 cup beer

Steps:

  • In small saucepan, boil potatoes til tender, drain, set aside.
  • Meanwhile, in a large saucepan, heat the butter over medium heat.
  • Add onion, carrot and shallots; reduce heat to medium-low.
  • Cook, stirring frequently, for about 10-15 minutes, or until onion is very soft and golden brown. Add garlic during last 5 minutes.
  • In a large screwtop jar, mix broth and flour, shaking until smooth.
  • Stir into onion mixture.
  • Add milk, caraway seeds, and pepper. Cook over medium heat 5 minutes, or until thickened, stirring frequently.
  • Gradually stir in cheese, mustard and horseradish, reduce heat to low.
  • Cook and stir until cheese melts, but do not boil.
  • Stir in brats, 12 oz. beer, and potatoes.
  • Cook, stirring frequently, until heated through. *You can add a little of the beer from cooking the brats if desired. See note below.
  • Garnish with additional shredded cheese, if desired.
  • Garnish with a sprinkling of cayenne or paprika if desired.
  • Makes 4-6 main-dish servings.

1 tablespoon olive oil
1/2 teaspoon garlic powder

1 (14-ounce) package Beddar with Cheddar Johnsonville fully cooked sausage, (cut into slices)
1 medium onion (peeled and chopped)
1/2 green bell pepper (seeded and chopped)

Steps:

  • Preheat oven to 450 degrees.
  • Place potatoes slices on a baking sheet, spreading out as much as possible.
  • Combine melted butter, olive oil, garlic powder, and paprika in a small bowl. Reserve 1 tablespoon and drizzle rest on potatoes. Toss to coat. Season to taste with salt and pepper.
  • Place in oven for 30 minutes, stirring halfway through.
  • On a second baking pan, combine sausage slices, onion, and peppers. Toss with the butter mixture that was set aside. Place in oven for 20 minutes, stirring halfway through.
  • If potatoes do not get browned enough, place under broiler for about 3 minutes.

6 bratwurst links
1 med. onion
6 med. idaho potatoes
3 Tbsp cooking oil

Steps:

  • 1. Take the Bratwurst filling out of the casings and brown in a pan with cooking oil. You can break it up into large or small pieces to suit your taste.
  • 2. As your meat is browning, add chopped onion and season to taste. You can use house seasoning or whatever your preference may be. I prefer Tony's.
  • 3. Cut your potatoes into bite size pieces and add to your meat mixture. Cook on high until the outside of you potatoes are lightly browned.
  • 4. Place in the over on a baking sheet and bake on 425 for about 30 minutes. When your potatoes are tender, turn on the broiler and brown for about 5-8 minutes.

1 lb smoked sausage, (sliced into ¼ inch thick slices)
⅓ cup water
3 lbs red potatoes, (peeled, dice into bite-size chunks)
1 large onion, (chopped)
3 cloves garlic, (minced)
1 cups sharp cheddar cheese, (shredded)
1 cup monterey Jack cheese, (shredded)
1 cup mozzarella cheese, (shredded)
1 tsp Slap Ya Mama seasoning
1 tsp salt
1 tsp black pepper
¼ tsp cayenne pepper
¼ tsp red pepper flakes
10.5 oz can cheddar cheese soup
10.5 oz can cream of celery soup
14.5 oz can beef broth

Steps:

  • Preheat oven to 350° and spray a 3 quart baking dish or 13 x 9 baking dish with non stick spray right before filling.
  • Add diced potatoes to large saucepan, cover with water, and boil for 15-20 minutes. Drain and return potatoes to pan.
  • In a large frying pan, add ⅓ cup of water, smoked sausage and onions. Cook until sausage has browned on both sides. Add more water, if needed.
  • Stir minced garlic into sausage and onions and continue cooking for an additional minute. Remove from heat and place on a plate lined with paper towels, set aside.
  • Mix soups, broth, all three cheeses and seasonings into potatoes. Stir.
  • Add in sausage and onion mixture. Stir until combined.
  • Pour into prepared baking dish and bake for 40 minutes uncovered. Carefully remove from oven, let sit for 10 minutes before serving.
  • Optional: top with sour cream, green onions, cilantro

1 pound sauerkraut (1 can), drained
1 onion, sliced thin
1 tablespoon butter
1/2 cup dry white wine
1 cup chicken stock
1 tablespoon brown sugar
1 tablespoon white wine vinegar
Coarse salt and freshly ground pepper to taste
8 bratwurst sausages
12 small red-skinned potatoes

Steps:

  • Simmer the sauerkraut for 10 minutes in boiling salted water. Drain.
  • Meanwhile, in a large skillet, soften the onions in the butter, browning lightly. Add the sauerkraut, wine, stock, sugar, vinegar, salt and pepper. Bring to boil, turn down, cover and simmer, stirring occasionally, for 30 minutes.
  • Meanwhile, simmer the bratwurst in water to cover for 20 minutes.
  • Add the potatoes to the sauerkraut in the skillet and cook, covered, for 15 to 20 minutes or until tender.
  • While the potatoes are cooking, drain the bratwurst and brown lightly on all sides under a hot broiler.
  • To serve, put the sauerkraut and potatoes on a heated platter and arrange the bratwurst over the top.

2 cups chopped fresh tomatoes

1 -2 tablespoon chopped fresh parsley or 1 -2 teaspoon dried parsley flakes

Steps:

  • Set oven to 350 degrees.
  • Grease a 9-inch square baking dish.
  • In a skillet, cook the sausage until no longer pink; drain fat, can cut in large pieces or leave whole.
  • Place in the bottom of the prepared baking dish.
  • Top/spread evenly with the 3 cups of mashed potatoes.
  • In the same skillet, saute the onion, garlic and green pepper in oil for 5 minutes, or until the veggies are crisp-tender.
  • Stir in mushrooms, tomatoes, olives, basil, salt and pepper; mix to combine (do not cook).
  • Spoon over potatoes to within 1-inch of edge.
  • Sprinkle with Parmesan cheese and the chopped parsley on top.

This Italian sausage & Potatoes recipe is made all in one skillet for an easy dinner with little to clean up! Serve this sausage and peppers recipe on sub rolls or over pasta!

2 tablespoons olive oil, divided
1 pound Italian sausage, mild or spicy
1 large yellow onion, cut in half and thinly sliced
3 bell peppers, thinly sliced
2 pound russet potatoes, cut into a small 3/4 inch dice
1 teaspoon kosher salt
Fresh black pepper to taste
1 teaspoon garlic powder
1 teaspoon dried oregano
1/2 teaspoon smoked or regular paprika
1 tablespoon tomato paste
1/2 cup marsala wine
1/2 cup beef broth

Steps:

  • Add 1 tablespoon of olive oil to a large skillet over medium heat. Add the sausages and brown on both sides, cooking through most of the way but not completely. Remove the sausages from the skillet to a plate and cover with foil.
  • Add the other tablespoon of olive oil to the skillet. Add the peppers, onions and diced potatoes and season with the salt, pepper, garlic powder, oregano and paprika. Cook for 10 minutes, stirring often.
  • Stir in the tomato paste and then pour in the marsala wine. Stir and then cover the skillet and cook for another 10 minutes until the potatoes have softened.
  • Slice the Italian sausage into thick rounds and then add them to the skillet along with any juices from the plate.
  • Remove the cover and add the sausages back to the skillet along with the beef broth. Cook, uncovered for another 7-8 minutes until the sausage and potatoes are cooked through.
  • Serve on sub rolls, with or without cheese or on top of your favorite pasta.

1 pound marble potatoes
1 yellow onion, sliced thin
1 orange bell pepper, sliced thin
1 green bell pepper, sliced thin

1 pound kielbasa sausage, sliced into 1/2-inch rounds
3 cloves garlic, minced
1 cup amber beer
1 tablespoon grainy mustard
3 cups chopped kale
Fresh herbs, to garnish.

Steps:

  • Heat the olive oil in a large skillet over medium heat. Add the potatoes, onions and peppers, then season with a pinch of salt and pepper. Cook until the onions are translucent and the potatoes begin to brown, 5 to 6 minutes.
  • Stir in the kielbasa and garlic. Add the beer and mustard, then stir to combine. Cover and cook until the potatoes have softened and the sausage is heated through, 2 to 3 minutes.
  • Remove the lid and stir in the kale. Cook until the kale has wilted, 5 to 6 minutes. Taste and adjust the seasonings as needed. Garnish with the herbs and serve straight from the skillet.

1/2 onion, diced
4 hard-boiled eggs, cold, diced
3 cups beef broth (whatever you want to use to boil the brats in) or 3 cups vegetable broth (whatever you want to use to boil the brats in)
2 tablespoons pure olive oil
1 1/2 tablespoons prepared mustard (I used grey poupon)
1/8 teaspoon rubbed sage
salt and pepper
paprika (to garnish)

Steps:

  • Begin by boiling the brats in whatever liquid you're using. I used vegetable broth, because it was what I had on hand.
  • Saute the onions in the olive oil until the onions are golden brown.
  • Add the diced potatoes and cover. Add salt and pepper to taste, as well as sage. You will need to stir them occasionally so the onions don't burn. Cook for about 5-10 minutes or until the potatoes are brown and crispy on the edges and flaky on the inside.
  • Add eggs and mustard, mix, and heat through.
  • Brown brats in the same skillet and garnish the potatoes with paprika.
