200 mls skimmed milk
3 tbsp cornflour
3 tbsp cold water
25 ml brandy
3 tbsp granulated sweetener
1 pinch nutmeg

Steps:

  • Place a small saucepan on a moderate heat and add the milk. Bring to the boil.
  • Whilst the milk is coming up to the boil, mix the cornflour and water in a small bowl.
  • Turn the heat down low and, with a whisk at the ready, pour the slaked cornflour into the milk. Whisk until the milk thickens.
  • Continue to stir for 3 minutes to cook out the cornflour. Remove from the heat and add the sweetener and brandy. Mix well.
  • Pour into a jug and serve with a sprinkle of nutmeg if desired!

1 cup water
2 tablespoons cornstarch
2 tablespoons butter
1/2 cup sugar
1 teaspoon nutmeg
1/4 cup brandy
1 teaspoon real vanilla

Steps:

  • Mix dry ingredients and then stir them into a cup of boiling water.
  • Boil for 5 minutes and then add butter, brandy, and vanilla.
  • Serve hot over mince pie or gingerbread.

55g/2oz butter
55g/2oz plain flour
570ml/1 pint milk
4 tbsp brandy or dark rum
55g/2oz caster sugar

Steps:

  • In a small saucepan, melt the butter and stir in the flour. Cook for 2 minutes and then stir in the milk. Bring to the boil, stirring all the time, and simmer gently for 10 minutes.
  • Stir in the brandy (or rum) and the sugar and serve with Christmas pudding.
