A touch of sweet white wine and citrus makes this lovely pear sorbet so refreshing. You can use canned pears when fresh ones aren't available. And lime juice is a nice substitute for lemon.- Deirdre Cox, Kansas City, Missouri

Number Of Ingredients 4

5 small pears, peeled and sliced
3/4 cup sweet white wine or apple juice
1/3 cup sugar
4-1/2 teaspoons lemon juice

Steps:

  • In a large saucepan, combine all ingredients. Bring to a boil. Reduce heat; simmer, uncovered, for 8-10 minutes or until pears are tender. Cool slightly. , Pour into a food processor; cover and process for 1-2 minutes or until smooth. Transfer to a 13-in. x 9-in. dish. Cover and freeze for 4 hours or until firm. , Just before serving, process again in a food processor for 1-2 minutes or until smooth. Spoon into dessert dishes.

This sorbet is refreshing and the color is more pink that that of red wine.

Number Of Ingredients 5

1 cup dry red wine
3/4 cup sugar
1 pound ripe Bartlett pears, peeled, cored, and cut into 1-inch pieces (2 cups)
2 tablespoons fresh lemon juice
Coarse salt

Steps:

  • In a small saucepan, bring wine, 1 1/4 cups water, and sugar to a boil over medium heat, stirring often, until sugar dissolves. Add pears; reduce heat, and simmer until tender, 5 to 10 minutes.
  • Stir in lemon juice and a pinch of salt; cool completely. Transfer to a shallow baking dish. Freeze until solid, about 6 hours (or overnight).
  • With a fork, break frozen mixture into large pieces. In 2 batches, puree in a food processor until completely smooth, 2 to 3 minutes per batch. Transfer to an airtight container; freeze until ready to serve (sorbet will be soft).

⅓ cup brown sugar
⅓ cup water
1 tablespoon fresh lemon juice
3 large pears, peeled, halved, and cored
⅓ cup walnuts, finely chopped
2 tablespoons brown sugar
1 ½ tablespoons brandy
1 tablespoon plain yogurt
1 cup whipping cream
1 tablespoon white sugar
2 teaspoons brandy, sherry, or other liqueur

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • Mix 1/3 cup brown sugar with water and lemon juice together in an ungreased baking dish until sugar is dissolved. Arrange pear halves, core side down, in the dish, and baste with the sauce. Cover with aluminum foil.
  • Bake pears in the preheated oven for 20 - 25 minutes, or until fork-tender but not mushy.
  • Meanwhile, mix nuts together with the remaining 2 tablespoons brown sugar, 1 1/2 tablespoons brandy, and the yogurt; set aside. In a separate bowl, whip cream until stiff peaks form. Sprinkle in white sugar and remaining 2 teaspoons of brandy, or liqueur of choice, and gently whip a few strokes more.
  • To serve, place one pear half in the center of each serving plate and fill core cavity with nut stuffing. Top with whipped cream. Serve warm.

WARM PEAR COMPOTE



Warm Pear Compote image

This compote is delicious served with both pear ice cream and pear sorbet.

Number Of Ingredients 5

4 Bartlett or Anjou pears, peeled and cored
1 tablespoon unsalted butter
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1/4 cup brandy

Steps:

  • Cut pears into 1-inch cubes. Melt butter in a medium saute pan over medium-high heat. Add pears and saute until they start to brown. Add sugar and cinnamon and cook 5 minutes more, stirring often.
  • From a measuring cup (never the bottle), pour brandy over pears. Ignite with a match and cook until flames die down.
  • Place a school of Pear Ice Cream and Pear Sorbet in each of 4 bowls. Divide warm compote among bowls and serve.

MY MODIFIED RECIPE:
¾ cup pear juice from canned pears (in own juice)
½ cup sugar
2 small cans (14 oz each?) or 1 large can or pears in own juice
½ cup juice from canned pears
3 T brandy (I used plain brandy but next time will use pear brandy)

Steps:

  • In a large saucepan, heat ¾ cup juice and sugar until sugar dissolves. Cool. In large bowl, combine pear puree, ½ c juice and the brandy. Stir fruit mixture into sugar mixture. Freeze in ice cream maker according to manufacturer's direction
