APPLE COFFEE CAKE WITH CRUMBLE TOPPING AND BROWN SUGAR GLAZE
Steps:
- Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.
- In a large bowl, cream together the remaining stick of butter and sugar until light and fluffy. Add the eggs 1 at a time, beating after the addition of each. In a separate bowl or on a piece of parchment, sift together the flour, baking soda, cinnamon, and salt. Add to the wet ingredients, alternating with the sour cream and vanilla. Fold in the apples. Pour into the prepared baking dish, spreading out to the edges.
- To make the topping, in a bowl, combine the sugar, flour, cinnamon, and butter, and mix until it resembles coarse crumbs. Sprinkle the topping over the cake and bake until golden brown and set, 35 to 40 minutes. Remove from the oven and let cool on a wire rack for at least 10 minutes.
- To make the glaze, in a bowl, combine the sugar, vanilla, and water and mix until smooth. Drizzle the cake with the glaze and let harden slightly. Serve warm.

Finally, after all these years, I've come up with a solution for people who can't decide whether to make an apple crumble or coffee cake. This features the best things about both of those recipes. It's like baking a crumb-topped coffee cake on top of another coffee cake!

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
- Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
- Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
- Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
- Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
- Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
- Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

YUMMY. I concocted this recipe in an attempt to copy a cake that was served in a deli where I and my co-workers went to have lunch at least twice a week. It comes pretty close to the original, and it keeps well--seems to get better as the days go on, although my family loved it so much it didn't last that many days!!!

- Preheat the oven to 350 degrees.
- Beat the oil and sugars together.
- Add the eggs one at a time, beating well after each one.
- Sift the flour, cinnamon, salt and baking soda together.
- Add half of the flour mixture gradually to the egg mixture, mixing well.
- Add the apple brandy, vanilla and the coconut, mixing well.
- Dredge the apples, raisins and nuts in the remaining flour, coating well.
- Gradually stir into the cake mixture, mixing thoroughly.
- Pour into a well-greased and floured 10 inch tube cake pan.
- Bake for 1 hour and 20 minutes (or until a knife blade comes out clean when inserted into the cake.).
BRANDY APPLE COFFEE CAKE
I got this recipe from a friend of mine and it comes out better than before. The brandy gives it a very nice aroma, and sometimes my hand goes a little heavy when i add it! It's a very simple recipe with amazing flavor. I prefer using honeycrisp apples for this recipe, fuji apples are fine too. And I usually have the apple and nuts soaking in the brandy while I am putting the rest of the ingredients together. Ingredients where you can adjust the amounts: brandy, apples, nuts.

- Heat oven to 325 degrees Fahrenheit. Coat a 10 inch bundt cake pan with cooking spray and flour.
- In a large bowl and electric mixer, beat the oil and sugar until thick and SMOOTH. Beat in the eggs. Mix in the cloves, cinnamon, nutmeg, baking soda, and salt. Then mix in the flour.
- Fold in nuts, apples, and brandy. Let it sit for about 5 minutes. Pour into pan. Bake for 1 hour and 15 minutes, or until knife comes out clean.

- In a small bowl, mix in the ingredients for the glaze.
- Remove cake from pan (it helps to separate the outer edges with a plastic cake spatula before doing so). Pour glaze over it.
