- In a medium bowl, whisk together the mayonnaise, 1/4 cup blue cheese, half and half, sour cream, lemon juice, Worcestershire, and salt, until smooth. Gently stir in the remaining 1/4 cup blue cheese and season with pepper to taste. Use now or store in the refrigerator for up to 3 days.

- Put the Gorgonzola in a small mixing bowl and mash it with a fork. Add the sour cream, buttermilk, mayonnaise, white wine vinegar, Worcestershire sauce and black pepper and whisk to combine. Serve or store in an airtight container, in the refrigerator, for up to 1 week.

MORTON'S BLUE CHEESE DRESSING
From the legendary Morton's Steak House. Simply amazing Blue Cheese Dressing. As much as I love to lighten things, this just isn't the same using light ingredients. This calls for Durkee's Famous Sauce, if you can't locate Durkee's, I have another recipe for a similar sauce called Mustard-Mayonnaise Sauce. Cook time includes overnight chilling.

- In a large mixing bowl, whisk together the mayonnaise and sour cream.
- Add the buttermilk, Durkee sauce, and seasoned salt.
- Whisk until well mixed.
- Season to taste with salt and freshly ground black pepper and whisk again.
- Using a rubber spatula, gently fold in the blue cheese.
- Transfer to a storage container with a tight-fitting lid and refrigerate for at least a day and up to four days.

- In a mixer bowl, blend sour cream, mustard, pepper, salt, garlic powder, and Worcestershire for 2 minutes at low speed.
- Add mayonnaise. Blend 1/2 minute at low speed and 2 minutes at medium speed.
- By hand, crumble cheese into mixture. Blend at low speed no more than 4 minutes.
- Refrigerate 24 hours before serving.

- Get out a medium sized bowl. Measure the mayonnaise into the bowl. Gradually whisk in the evaporated milk. Add the sugar, garlic powder and celery salt. Mix well. Crumble up the blue cheese and stir it in too. Transfer the dressing to a pint sized canning jar. Store in the fridge. Makes about 1 2/3 cups of dressing. Very tasty.
