1/4 cup olive oil
1 lb peeled and deveined large shrimp (raw, 20 to 25 per lb)
4 large garlic cloves, left unpeeled and forced through a garlic press
1/2 teaspoon hot red pepper flakes
1/2 cup dry white wine
1 teaspoon salt
1/2 teaspoon black pepper
5 tablespoons unsalted butter
3/4 lb capellini (angel-hair pasta)
1/2 cup chopped fresh flat-leaf parsley

Steps:

  • Bring a 6- to 8-quart pot of salted water to a boil.
  • Meanwhile, heat oil in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sauté shrimp, turning over once, until just cooked through, about 2 minutes, and transfer with a slotted spoon to a large bowl.
  • Add garlic to oil remaining in skillet along with red pepper flakes, wine, salt, and pepper and cook over high heat, stirring occasionally, 1 minute. Add butter to skillet, stirring until melted, and stir in shrimp. Remove skillet from heat.
  • Cook pasta in boiling water until just tender, about 3 minutes.
  • Reserve 1 cup pasta-cooking water, then drain pasta in a colander.
  • Toss pasta well with shrimp mixture and parsley in large bowl, adding some of reserved cooking water if necessary to keep moist.

Kosher salt
2 tablespoons unsalted butter
2 cups panko breadcrumbs
2 tablespoons finely chopped chives
2 teaspoons finely chopped oregano
1/2 teaspoon lemon zest
2 tablespoons extra-virgin olive oil
2 pounds large shrimp (16-20 count), peeled and deveined
Kosher salt and freshly ground black pepper
12 cloves garlic, finely chopped
1 shallot, finely chopped
1 cup dry white wine
1/4 cup freshly squeezed lemon juice (from 1 to 1 1/2 lemons)
Pinch red pepper flakes
Pinch dried oregano
4 tablespoons (1/2 stick) unsalted butter, cut up
3/4 cup loosely packed fresh flat-leaf parsley, chopped
12 ounces capellini

Steps:

  • Bring a 6- to 8-quart soup pot of generously salted water to a boil.
  • For the topping: In a large stainless steel skillet, heat the butter over medium heat until melted and slightly browned but not burned. Add the breadcrumbs. Using a wooden spoon, stir the breadcrumbs to coat with the brown butter, and toast until golden brown, 2 to 3 minutes. Remove from the heat. Stir in the chives, oregano and lemon zest. Season to taste and set aside.
  • For the pasta: Meanwhile, heat the oil in a large saute pan over high heat until shimmering. Season the shrimp all over with salt and pepper. Add the shrimp to the pan in one layer and cook for 1 minute. Turn and cook 1 more minute. Using a slotted spoon, transfer the shrimp to a bowl.
  • Add the garlic and shallot to the pan and cook for 1 minute. Add the wine, lemon juice, pepper flakes and oregano and simmer for 3 minutes. Whisk in the butter piece by piece, thoroughly incorporating each piece before adding the next. Taste and season with additional salt and pepper as needed. Add the shrimp back to the pan and simmer until completely cooked through, about 2 minutes. Stir in the parsley. Remove the skillet from the heat.
  • Add the capellini to the boiling water and cook until just tender, about 4 minutes. Reserve 1 cup of the cooking water and transfer the capellini to a colander to drain. Toss the capellini with the shrimp and parsley, adding some of the pasta water if necessary to keep it moist. Transfer to a large serving bowl or into small bowls as individual servings.
  • Top with herb breadcrumbs.

1 pound dry pasta (I'm using spaghetti)
1/4 cup olive oil
1 stick (8 tablespoons) unsalted butter
12 cloves garlic, sliced
2 pounds shrimp, peeled and deveined
1 cup liquid (I'm using white wine)
2 lemons, juiced
2 tablespoons chile flakes, optional
2 tablespoons chopped fresh parsley, optional

Steps:

  • Bring a pot of water to a boil and add 2 tablespoons salt . Add the spaghetti, give it a stir and cook until al dente according to the package instructions.
  • Meanwhile, heat a large saute pan over medium heat. Add the oil, butter, garlic and a pinch of salt and sweat the garlic for 2 minutes. Add the shrimp, season with salt and pepper and cook, stirring, 1 minute. Add the wine, lemon juice and chile flakes if using and cook until the shrimp are just cooked through, 3 to 5 minutes.
  • Reserve some of the pasta water, then drain the spaghetti. Add the spaghetti and a little of the reserved pasta water to the pan with the shrimp and toss to combine. Toss in the parsley if using and serve.

2 tablespoons butter
2 tablespoons extra-virgin olive oil
2 shallots, finely diced
2 cloves garlic, minced
1 pinch red pepper flakes
1 pound shrimp, peeled and deveined
1 pinch kosher salt and freshly ground pepper
½ cup dry white wine
1 lemon, juiced
2 tablespoons butter
2 tablespoons extra-virgin olive oil
¼ cup finely chopped fresh parsley leaves
1 teaspoon extra-virgin olive oil, or to taste

Steps:

  • Bring a large pot of salted water to a boil; cook linguine in boiling water until nearly tender, 6 to 8 minutes. Drain.
  • Melt 2 tablespoons butter with 2 tablespoons olive oil in a large skillet over medium heat. Cook and stir shallots, garlic, and red pepper flakes in the hot butter and oil until shallots are translucent, 3 to 4 minutes. Season shrimp with kosher salt and black pepper; add to the skillet and cook until pink, stirring occasionally, 2 to 3 minutes. Remove shrimp from skillet and keep warm.
  • Pour white wine and lemon juice into skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Melt 2 tablespoons butter in skillet, stir 2 tablespoons olive oil into butter mixture, and bring to a simmer. Toss linguine, shrimp, and parsley in the butter mixture until coated; season with salt and black pepper. Drizzle with 1 teaspoon olive oil to serve.

1/2 cup fresh flat-leaf parsley
1 cup arugula leaf, packed
12 -15 fresh chives, coarsely chopped
1/2 cup chicken stock
1 lemon, juice and zest of
6 tablespoons extra virgin olive oil, divided
1 1/2 lbs medium shrimp, shelled and deveined
4 large garlic cloves, grated
1/2 teaspoon crushed red pepper flakes
salt and pepper
1 lb fresh linguine
1/2 cup dry white wine
2 tablespoons butter

Steps:

  • Place a large pot of water over high heat to cook the pasta until al dente.
  • While pasta is cooking, place the basil, parsley, arugula, chives, chicken stock, lemon zest and 2 tablespoons olive oil in a food processor or blender, pulse to grind into a rough paste. Reserve.
  • Place a large skillet over medium-high heat with 4 tablespoons of oil. Add the shrimp and spread them out in an even layer.
  • While the shrimp are cooking, add garlic to the skillet along with the crushed red pepper flakes. Toss to combine, season with some salt and pepper and continue to cook the shrimp for about 4 minutes.
  • Add the white wine to the skillet, cook for 1 minute, then add the reserved ground herb mixture, cold butter and all juice from the lemon to the shrimp skillet.
  • Before draining the pasta remove about a half a cup cooking water and add to the shrimp skillet. Add the drained pasta and toss to combine with the shrimp and the sauce, stirring until the butter has melted. Serve immediately.

This is by far the easiest, fastest, and tastiest shrimp scampi recipe ever! Its great for dinner parties, family gatherings or just a quick fix after a long day at work. It takes about 10 minutes total to fix. If you're like me and keep a lot of the little ketchup and condiment packets from fast food joints, this is right up your alley.

1 tablespoon olive oil
4 packages papa john's garlic butter dipping sauce
1 lb fresh shrimp or 1 lb frozen shrimp, that has been thawed
1/2 lb pasta, of your choice

Steps:

  • Bring a pot of water to boil, cook pasta and drain.
  • In a separate pan, heat oil and garlic butter sauce over medium-high heat just until sauce is hot.
  • Add shrimp (making sure shrimp are thawed completely) and cook about three minutes, stirring once or twice, until done.
  • Toss pasta into the shrimp mixture and serve.
  • For a nice garnish you can sprinkle a little fresh chopped parsley or a lemon wedge on the side.

I prefer the fresh frozen shrimp with the shells on rather than the frozen pealed and deviined, which have a preservative added taste. The recipe is for one serving you can bump it up

2 teaspoons extra virgin olive oil
1 garlic clove, minced
6 shrimp, pealed and devined, tails on
2 tablespoons butter, chefs style, see below
1/3 cup white wine, chablis
2 teaspoons lemon juice, fresh
4 ounces pasta noodles, cooked, your favorite kind and shape
1 tablespoon cheese, grated parmesan
1/3 cup parsley, fresh finely chopped
1 cup butter, lightly salted, room temperature
6 garlic cloves, finely minced fresh

Steps:

  • Preheat saute' pan medium high and add olive oil and minced garlic but dont let the garlicburn, afer a minuet add the shrimp and cook about two minuets each side. Deglaze the pan with the wine, add lemon juice and reduce by half. Turn OFF the heat and add the chefs butter when melted toss with warm pasta, top with grated parm if desired and serve.
