STUFFED MUSHROOM DIP

This creamy dip has all the sausage-and-mushroom flavor of stuffed mushroom caps - perfect for any gathering.

Number Of Ingredients 12

1 tablespoon olive oil
8 ounces ground Italian sausage
2 cloves garlic, minced
1 1/2 pounds white button mushrooms, roughly chopped (about 5 cups)
Kosher salt and freshly ground black pepper
6 ounces cream cheese, cut into cubes
1/2 cup grated Parmesan
1/3 cup half-and-half
2 tablespoons unsalted butter, melted
1/4 cup panko
1/4 cup fresh flat-leaf parsley, chopped
1 baguette, toasted and sliced, for serving

Steps:

  • Preheat the oven to 400 degrees F. Heat the oil in a large nonstick skillet over medium-high heat. Add the sausage and cook, breaking up into bite-size pieces with a wooden spoon, until browned and almost cooked through, 3 to 4 minutes. Add the garlic and cook, stirring constantly, until softened, about 1 minute. Add in the mushrooms, 1/2 teaspoon salt and a few grinds of pepper and cook, stirring occasionally, until the mushrooms are soft and the moisture has evaporated, 8 to 10 minutes.
  • Add the cream cheese and stir until melted, about 1 minute. Add the Parmesan and half-and-half and cook, stirring occasionally, until bubbly 2 to 3 minutes. Pour the mushroom mixture into a 1-quart ramekin. Mix the butter with the panko and parsley and sprinkle on top of the mushroom mixture. Bake until the bread crumbs are golden brown and the dip is bubbly around the edges, 15 to 20 minutes. Let sit for 10 minutes then serve with toasted, sliced baguette.

New York Strip Steak with Brandied Mushrooms and Fresh Thyme image

4 New York strip steaks, each about 1 1/2 inches thick
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
2 pounds wild mushrooms, trimmed, brushed clean with a towel and stemmed, caps left whole
Leaves from 2 sprigs fresh thyme
2 cloves garlic, chopped
1/4 cup brandy
1/2 cup heavy cream

Steps:

  • Heat 2 tablespoons oil in a large saute pan over medium-high heat until smoking. Sprinkle the steaks all over with salt and pepper. Put the steaks in the pan and cook, turning to brown all sides completely, until medium-rare, 8 to 10 minutes depending on how thick the steaks are. Remove the steaks to a platter with tongs and cover loosely with a tent of aluminum foil to keep the meat warm while you make the sauce.
  • Put the saute pan back over medium-high heat and add 1/4 cup olive oil. When the oil is smoking, add the mushrooms and cook, stirring, about 10 minutes, until golden brown. Then add the thyme and garlic, and season well with salt and pepper. Toss a few more times to cook the garlic, then dump the mushrooms out onto a platter. Take the pan off the heat, add the brandy, and cook until almost evaporated. Add the cream and cook that down 2 to 3 minutes until reduced by about one-half and thickened. Return the mushrooms to the pan with whatever juices have collected on the platter and simmer the whole thing another 2 minutes until thickened again. Season with salt and pepper.
  • Slice the steak thin against the grain. Taste the sauce for salt and pepper and serve.

WILD MUSHROOM DIP

2 cups white wine (recommended: Chardonnay)
1-ounce package dried wild mushrooms mixed variety (recommended: Ready Pac*)
1 (10 3/4-ounce) can condensed cream of mushroom soup (recommended: Campbell's)
1 teaspoon dried tarragon
1 (8-ounce) package cream cheese, cut into cubes
1/2 cup sour cream
1 cup shredded mozzarella
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
Crusty bread or crostini, for serving

Steps:

  • In a microwave-safe bowl, heat white wine on HIGH for 4 minutes. Place dried mushrooms in wine and let sit for 10 minutes to rehydrate. Transfer mushrooms with 2/3 of a cup of the liquid to a food processor. Puree to a coarse consistency.
  • In a medium pot combine remaining ingredients and pureed mushrooms. Mix thoroughly and cook over medium-low heat, for about 5 to 10 minutes, stirring frequently. Transfer to bowl and serve hot with crusty bread or crostini.
  • *Pre-packaged dried wild mushrooms are found in the produce department of your local grocery store.

4 bacon strips, diced
1/2 pound fresh mushrooms, chopped
1 medium onion, finely chopped
1 garlic clove, minced
2 tablespoons all-purpose flour
1/4 teaspoon salt
1/8 teaspoon pepper
1 package (8 ounces) cream cheese, cubed
1/2 cup sour cream
2 teaspoons Worcestershire sauce
1 teaspoon soy sauce
Assorted raw vegetables or crackers

Steps:

  • In a large skillet, cook bacon over medium heat until crisp. Remove bacon to paper towels. Drain, reserving 2 tablespoons drippings. In the drippings, saute mushrooms and onion until tender. Add garlic; cook 1 minute longer. Stir in the flour, salt and pepper; cook and stir for 1-2 minutes or until thickened. , Reduce heat. Add the cream cheese, sour cream, Worcestershire sauce and soy sauce; cook and stir until cheese is melted. Stir in bacon. Serve warm with vegetables or crackers.

¼ cup butter
20 button mushrooms, finely chopped
¼ cup finely chopped onion
2 cups torn spinach leaves
1 teaspoon dried parsley
¼ teaspoon garlic salt, or to taste
1 pinch ground black pepper, or to taste
½ cup shredded sharp Cheddar cheese
1 cup sour cream
1 cup shredded sharp Cheddar cheese

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Heat the butter in a skillet over medium heat. Stir in the mushrooms and onion; cook and stir until the mushrooms have softened and the onion is translucent, about 7 minutes. Stir in the spinach, parsley, garlic salt, and pepper. Continue cooking until the spinach has wilted, about 3 minutes. Remove from heat and stir in 1/2 cup of Cheddar cheese. Cool for 5 minutes. Stir in the sour cream, then spread mixture into an 8x8-inch baking dish. Sprinkle 1 cup of Cheddar cheese on top.
  • Bake in the preheated oven until the cheese has melted, about 20 minutes.

  • Slice the mushrooms into fours.

  • Remove from the heat and carefully add the brandy to avoid flame ups.

  • Place the dried porcini mushrooms, water and brandy in a microwave safe covered bowl, making sure the bowl is small enough that the mushrooms are submerged in the liquid and microwave on high for 2 minutes and let sit for 5 minutes.
  • Drain the porcini mushrooms with a small sieve into another bowl pressing the mushrooms with the back of a spoon to get all the liquid out, you will want to save the liquid, chop the mushrooms and set aside.
  • Heat the butter and olive oil over medium/high heat in a frying pan and add the onion, garlic and rosemary, saute for 3 minutes.
  • Add the mushrooms and the porcini mushrooms along with the salt and pepper and saute for 3 minutes stirring occasionally until mushrooms start to brown. Add the reserved mushroom liquid and stir and cook until most of the liquid has been cooked off, this will take an additional 5 or so minutes; set aside to cook for 5 minutes.
