4 tenderloin steaks, 6 to 8 ounces each and no more than 1 1/2 inches thick
Kosher salt
2 tablespoons whole peppercorns
1 tablespoon unsalted butter
1 teaspoon olive oil
1/3 cup Cognac, plus 1 teaspoon
1 cup heavy cream

Steps:

  • Remove the steaks from the refrigerator for at least 30 minutes and up to 1 hour prior to cooking. Sprinkle all sides with salt.
  • Coarsely crush the peppercorns with a mortar and pestle, the bottom of a cast iron skillet, or using a mallet and pie pan. Spread the peppercorns evenly onto a plate. Press the fillets, on both sides, into the pepper until it coats the surface. Set aside.
  • In a medium skillet over medium heat, melt the butter and olive oil. As soon as the butter and oil begin to turn golden and smoke, gently place the steaks in the pan. For medium-rare, cook for 4 minutes on each side. Once done, remove the steaks to a plate, tent with foil and set aside. Pour off the excess fat but do not wipe or scrape the pan clean.
  • Off of the heat, add 1/3 cup Cognac to the pan and carefully ignite the alcohol with a long match or firestick. Gently shake pan until the flames die. Return the pan to medium heat and add the cream. Bring the mixture to a boil and whisk until the sauce coats the back of a spoon, approximately 5 to 6 minutes. Add the teaspoon of Cognac and season, to taste, with salt. Add the steaks back to the pan, spoon the sauce over, and serve.

While the French classic steak au poivre, or peppered steak, is a wonderful idea, steak is expensive and in the winter the original recipe can be adapted to braising - which is far easier for entertaining and tastes every bit as good. I like to serve it with some crispy-skinned, buttered jacket potatoes.

2 lb (900 g) good-quality braising steak, cut into 2 in (5 cm) pieces
2 rounded tablespoons crème fraîche
salt and freshly milled black pepper
1 level dessertspoon whole black peppercorns
15 fl oz (425 ml) red wine
1 rounded tablespoon plain flour
3 tablespoons beef dripping or olive oil
2 large onions, finely chopped
2 fat cloves garlic, crushed in a pestle and mortar with 1 level teaspoon sea salt
2 bay leaves
a large sprig thyme

Steps:

  • Begin by crushing the peppercorns coarsely with a pestle and mortar, then mix them together with the flour on a plate. Now dip the pieces of meat into this mixture, pressing it well in on all sides. Next, heat 2 tablespoons of the dripping or oil in the casserole, and when it is really hot and beginning to shimmer, quickly brown the pieces of meat, about 4 at a time, on both sides, then transfer them to a plate. After that, add the remaining dripping or oil to the pan and brown the onions for 3-4 minutes, still keeping the heat high. Then add the crushed garlic and cook for another minute. Now add any remaining flour and pepper left on the plate to the pan, stirring well to soak up the juices, then add the wine a little at a time, continuing to stir to prevent any lumps forming, and scraping in any crusty residue from the bottom and edge of the pan. When it's at simmering point, add the meat to the sauce, season it with salt, then pop in the bay leaves and thyme. Bring it back to a simmer, then put a lid on the casserole and transfer it to the middle shelf of the oven to cook for 2 hours or until the meat is tender. When you're ready to serve, remove the herbs, add the crème fraîche, stir it in well, then taste to check for seasoning before serving.

Two 6-ounce beef tenderloin filets, 2 1/2 inches thick
Fine sea salt
1 tablespoons olive oil
1 cup heavy cream
1 tablespoon Worcestershire sauce
2 teaspoons green peppercorns in brine, drained
1/2 beef bouillon cube
1/4 cup cognac
1 tablespoon porcini powder
6 sprigs thyme, for garnish
Coarse sea salt, for garnish

Steps:

  • Preheat the oven to 450 degrees F.
  • Sprinkle the filets generously with salt.
  • Heat a medium cast-iron skillet over high heat until it starts to smoke slightly. Add 1 tablespoon olive oil to the pan. Sear the filets on both sides until browned, about 2 minutes per side. Transfer to a rimmed baking sheet fitted with a wire rack. Cook in the oven until desired doneness, about 7 minutes for medium rare.
  • Meanwhile, return the skillet to medium heat. Add the heavy cream, Worcestershire sauce, green peppercorns and bouillon cube. Bring to a simmer and let reduce by about half, about 2 minutes. Add the cognac and porcini powder and let reduce again for 1 minute.
  • Remove the beef from the oven and let rest for 5 minutes. Cut the filets across the grain into 2-inch pieces and top with the au poivre sauce, thyme sprigs and a pinch of coarse salt.

This is an adaptation of the famous French classic, but more economical because it's made with braising steak. It does take longer to cook but it will simmer happily unattended, and there's very little work involved. The flavour is superb!

6-7 oz (175-200 g) braising steak, in one or two pieces
1 small onion, chopped small
¾ level teaspoon whole black peppercorns (or if you like it hotter, use 1 level teaspoon)
1 dessertspoon oil
1 heaped teaspoon flour
1 small clove of garlic, crushed
4 fl oz (110 ml) red wine or dry cider
1 level dessertspoon single cream
salt

Steps:

  • First heat the oil in the casserole and fry the onion in it for 5 minutes. While that's happening, prepare the meat: crush the peppercorns with a pestle and mortar (or with the back of a tablespoon on a flat surface) - they need to be coarsely crushed. Next, mix the crushed peppercorns with the flour on a flat plate and spread the mixture out evenly. Press the meat on to the mixture to get the underside well coated, then turn it over and do the same with the other side, pressing and patting the flour and pepper firmly into the meat. Now remove the onion to a small plate, turn the heat right up and when it's really hot, quickly brown the meat on both sides, scraping any flour-and-pepper from the plate into the casserole as well. Then turn the heat down, return the onion together with the garlic and some salt, pour in the wine, then put the lid on and let it simmer - as gently as possible - for 1¼ to 1½ hours, depending on the thickness of the steak. When it's ready, remove the lid, turn the heat right up and let the sauce bubble and reduce to a more syrupy consistency (about 1-2 minutes). STEAK AU POIVRE AND BROILED STUFFED TOMATOES

4 vine ripe tomatoes, red or yellow, tops trimmed and seeded
Extra-virgin olive oil, for drizzling, plus 1 tablespoon extra-virgin olive oil
Salt and freshly ground black pepper
1/2 cup bread crumbs or 1 slice, 1/2-inch thick, stale crusty bread, torn
1/2 cup grated Parmigiano-Reggiano
1/2 teaspoon crushed red pepper flakes
1 clove garlic, chopped
2 cups arugula leaves, the tops of 1 bunch
4 New York Strip steaks, 1-inch thick
3 tablespoons coarse ground black pepper
Olive oil or cooking spray, to coat skillet
1/4 cup good brandy
2 tablespoons butter

Steps:

  • Preheat the oven to 400 degrees F.
  • Heavy bottomed skillet over medium high to high heat.
  • Arrange tomatoes on a broiler pan. Drizzle tomatoes with oil and season with salt and pepper. Combine bread crumbs, cheese, red pepper flakes, garlic, arugula and 1 tablespoon oil in food processor and pulse grind to form stuffing. Stuff tomatoes to the rims with arugula mixture and place in the center of the oven. Bake 10 to 12 minutes. Let tomatoes stand 5 minutes before serving.
  • Let steaks sit 10 minutes once removed from the refrigerator. Coat steaks liberally on both sides with coarse black pepper. To a very hot pan, drizzle oil to thinly coat the cooking surface. It will smoke. Add steaks immediately. Sear and seal the steaks, cooking them 4 minutes on each side. for medium rare doneness. Reduce heat a bit and cook 5 minutes longer for medium to medium well doneness. Remove steaks and let stand 5 minutes. Add brandy to the skillet and warm, then ignite. Add butter to the skillet, then spoon pan juices over steaks. Serve stuffed tomatoes along side steaks.

SWORDFISH AU POIVRE



Swordfish au Poivre image

Au poivre, the peppery French finish for a steak, is simpler and more versatile than its fancy-sounding name suggests. A quick pan sauce of cream and Cognac enrobes a seared piece of meat fueled with crushed black or green peppercorns. But the preparation doesn't have to be just for meat. At Veronika, a new restaurant in Manhattan that was attracting pre-pandemic attention, the English chef Robert Aikens used the seasoning and sauce to finish a thick fist of tender celeriac, with excellent results. Boneless chicken breasts are another choice. Here I opted for swordfish steaks, though you could use another densely textured slab of fish, like halibut, instead. But producing au poivre is strictly à la minute: Have your ingredients ready to apply so the wait time for serving is minimal. The recipe is easily reduced to serve two for that date-night dinner while sequestered at home with a good bottle of Burgundy to share.

24 ounces swordfish about 1-inch thick, skin removed, in 4 portions
Fine sea salt
1 1/2 tablespoons crushed black peppercorns
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
1 large shallot, minced
1/2 cup Cognac or brandy
2/3 cup heavy cream
1 tablespoon minced flat-leaf parsley leaves

Steps:

  • Heat the oven to 150 degrees. Have an oven-proof platter that can hold the fish in a single layer ready. Dust the swordfish lightly with salt. Sprinkle the pepper on both sides, pressing the grains into the fish.
  • Heat the oil to medium hot in a heavy skillet, about 12-inches in diameter, to hold the fish in a single layer. Sear the fish, pepper and all, until barely cooked through and still a bit pink in the center, about 3 minutes on each side. Transfer to the platter and place in the oven. Turn off the oven.
  • Add the butter to the skillet. When it melts add the shallot and sauté, stirring, until translucent, a couple of minutes. Add the Cognac and swirl in the pan a minute or so until somewhat reduced and syrupy. Add the cream and parsley and continue cooking, stirring, until somewhat thickened. Remove from the heat.
  • Remove the fish from the oven and pour the sauce over it, then serve, or transfer each portion to individual dinner plates, spoon on the sauce and serve.

Add the cream and mustard and gently boil until thickened, about 3 minutes. Stir in any meat juices that accumulated on the plate. Transfer the steaks to plates and spoon the sauce over top.
