KAPUSTA (POLISH BRAISED CABBAGE)
This classic Polish cabbage side dish is easy to prepare and super tasty!

Steps:
- Sauté the diced bacon in a medium sauté pan with a lid, over medium high heat, 2-3 min.
- Add the diced onions. Sauté for 3-5 minutes, until the bacon is crispy and the onions are golden. (At this point, if there is a lot of fat in the pan from the bacon, drain some off, leaving just enough bacon grease to lightly coat the bottom of the pan.)
- Add the garlic and continue to sauté for 1-2 minutes, until fragrant.
- Add the shredded cabbage and water. Cover the pot and simmer for 7-10 minutes, until the cabbage has softened.
- Remove the pan from the heat and stir in the salt and pepper. Taste your kapusta, and adjust the seasonings as desired.
- Serve with polish sausage or pierogies.
UKRAINIAN KOBASA KAPUSTA
This traditional Ukrainian recipe combines sauerkraut and turkey kobasa for an easy to make skillet dish. Can be used as a main course or side dish.

- Remove the skin from the kobasa, and cut into bite sized pieces. Place in a bowl.
- Dice onion and place in a bowl.
- Crush fennel seed using a mortar and pestle.
- Drain and throughly rinse the sauerkraut using a colander. I like to use some boiling water for this.
- Heat a frying pan over medium heat, and add the oil.
- Add the onions and seasonings, and cook until browned (about 5 minutes).
- Add the cut up kobasa and cook until nicely browned (about 6-8 minutes).
- Add the drained and rinsed sauerkraut and cook until heated through (about 8-10 minutes).
- Remove from heat and place in a serving bowl. This is a great main course, or side dish.
- ENJOY!

BRAISED RED KAPUSTA SOUP

- 1. Put about 3 tablespoon oil in a soup pot and get it hot. I add the rind too because it has lots of flavor in it but remove it after the pork is all browned and discard once the salt pork has browned really well and remove it.
- 2. In the same pot brown the sausage, remove it and add it to the salt pork.
- 3. In the same pot { I just love one pot meals, don't you? } put the red onions, garlic and sugar and sauté till the onions are translucent. Let the oil cool down first because you don't want to burn the garlic. Sauté the onions and garlic on a very low heat. At this point if there is a lot of oil in the pot spoon it out but leave the fond.
- 4. Now add the meats back to the pot with the onions and add the tomato puree, water, beef broth, butter beans, tomatoes and wine {remove from the heat before adding the wine} give this a good stir.
- 5. Bring this to a boil and then turn down, add the cabbage and salt { if necessary } and pepper.
- 6. Turn this down to a simmer and cover and cook it for about 1 hour.
- 7. 10 minutes before the soup is done, add the potatoes. You'll only need to get them hot as they are already cooked.
- 8. This is not a meaty soup, but it is hearty and satisfying! The salt pork and sausage gives it a wonderful meaty flavor.
KAPUSTA
Kapusta is a great side dish at any meal and even makes a great main dish for vegetarians. This recipe was passed down by my Polish grandmother. I grew up with it at every holiday meal and just love it. Sauerkraut takes on a whole new flavor when baked and is really delicious! Try it and see for yourself!

- Preheat oven to 350 degrees F (175 degrees C).
- Heat 4 tablespoons of butter over medium heat; saute onions and mushrooms until tender.
- In a medium saucepan over high heat, boil cabbage for 10 minutes.
- In a 9 x 13 inch baking dish combine onions, mushrooms, cabbage, sauerkraut, sugar, thyme, salt and pepper; mix well. Dot remaining 2 tablespoons butter on top. Cover.
- Bake in preheated oven for 1 hour, stirring every 20 minutes.

- Place the cabbage in a large kettle, and add the diced apple, 2 teaspoons of the salt, lemon juice, and 1/2 cup water. Bring to a boil then simmer, covered, about 15 minutes stirring occasionally.
- In hot butter, saute the onion until golden. Add the onion to the cabbage along with 1 teaspoon salt, pepper, vinegar and sausage. Cook, covered, 20 to 30 minutes until sausage is heated through. To serve, spoon the cabbage onto a heated platter, topping it with the sausage.

- Melt the butter in a large saucepan over medium-high heat. Add the apples and the onion and sauté until the onion is tender and translucent, approximately 8 minutes.
- Stir in cabbage and stir until wilted, approximately 8 minutes. Stir in the sugar, vinegar ,salt, cinnamon, allspice, and cloves. Cover and cook until the cabbage is tender, stirring occasionally, aproximately 10 minutes.

RUSSIAN BRAISED CABBAGE

- Shred the cabbage into thin slices using mandolin or by cutting it in half or into quarters, then finely shredding each piece with the flat end of the cabbage against the counter. Place sliced cabbage into a large mixing bowl. Sprinkle 1 tsp of salt on the cabbage and scrunch the cabbage using both hands for 30 sec to soften it.
- Dice the onion and grate both carrots.
- Preheat a large skillet or dutch oven over medium-high heat. Add 2 Tbsp of olive oil. Saute onions and carrots for 5 min, mixing frequently. When almost done, mix in 2 Tbsp of sour cream. Empty contents of the skillet into mixing bowl with the cabbage.
- Cut pork into small cubes.
- Using the same skillet, add 2 Tbsp of olive oil and cook pork for 5 min over medium-high heat, stirring occasionally. When cooked through, add it to the mixing bowl with cabbage, carrots and onion.
- Add 1 Tbsp of brown sugar, 1 tsp of salt, 1/2 tsp of pepper, 4 Tbsp of ketchup and mix all contents of the bowl together.
- Add 2 Tbsp of olive oil to large skillet or dutch oven. And cabbage mixture and set the heat to medium. Add 2 bay leaves.
- Cover and cook cabbage for 35-40 min, stirring every 15 min. Reduce temperature to medium-low after 20 min. Add more ketchup or salt to taste, if desired. Remove bay leaves before serving.

- Bring a big pot of water to a boil over high heat adding 2 to 4 tablespoons of salt to make the water taste like the sea. Add the vinegar, and then the cabbage and boil over high heat until the cabbage is wilted (don't overcook it - it should still have tooth), 2 to 3 minutes. Drain, then toss in a bowl with the butter, oil, the parsley, chives, and salt and pepper, to taste.
