1 medium head red cabbage (about 2 pounds), shredded
8 bacon strips, chopped
1 small onion, quartered and thinly sliced
2 tablespoons all-purpose flour
1/4 cup packed brown sugar
1/2 cup water
1/4 cup cider vinegar
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a large saucepan, place steamer basket over 1 in. of water. Place cabbage in basket. Bring water to a boil. Reduce heat to maintain a simmer; steam, covered, just until tender, 6-8 minutes., Meanwhile, in a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Remove with a slotted spoon; drain on paper towels. Discard drippings, reserving 2 tablespoons in pan., Add onion to drippings; cook and stir over medium-high heat until tender, 4-6 minutes. Stir in flour and brown sugar until blended. Gradually stir in water and vinegar. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Stir in cabbage, bacon, salt and pepper.

We're going to cook a very beautiful, super easy cabbage side dish. All ingredients are totally to taste. It's a little bit sweet and a little bit tangy, with a tiny hint of caraway to interest you.

2 tablespoons butter
1 small head red cabbage, cored and thinly sliced
salt to taste
⅓ cup water
¼ cup red wine
2 tablespoons red wine vinegar, or to taste
2 tablespoons white sugar
1 pinch caraway seeds

Steps:

  • Melt butter in a large skillet over medium heat; cook cabbage in the hot butter until it begins to soften, 1 to 2 minutes. Season with salt. Pour in water, red wine, and red wine vinegar. Stir to combine. Mix in sugar and caraway seeds.
  • Continue to cook and stir until liquid has evaporated and cabbage is tender, about 5 minutes. If cabbage isn't quite tender, add a splash of water and continue cooking a few more minutes.

4 slices bacon, thinly sliced
2 medium yellow onions, thinly sliced
1 cinnamon stick
2 bay leaves
4 teaspoons kosher salt
1 large or 2 small heads red cabbage (about 3 pounds), cored and thinly sliced
1 Granny Smith apple, cored and cut into bite size pieces
2 to 3 cups low-sodium chicken broth
1/2 cup red wine vinegar
2 tablespoons sugar
1/2 teaspoon freshly ground black pepper

Steps:

  • Cook the bacon until crisp, over medium heat in a large Dutch, that has a lid, about 4 minutes. Add the onions, cinnamon, bay leaves, and 1 teaspoon of the salt. Cover, and cook, stirring occasionally, until the onion is tender, about 8 minutes.
  • Increase the heat to medium-high, add the cabbage and cook, stirring, until wilted, about 8 minutes. Add the apple, broth, vinegar, sugar, the remaining salt, and pepper, and cook, covered, stirring occasionally, until the cabbage is tender, about 1 hour.
  • Uncover; bring to a boil, and cook, stirring, until the liquid has reduced to a sauce-like consistency, about 5 minutes. Transfer to a serving dish and serve.

1 small red cabbage (about 900g)
1 sliced red onion
70g soft light brown sugar
70ml cider vinegar
150ml red wine
a large knob of butter
1 cinnamon stick

Steps:

  • Quarter the red cabbage and remove the core, then finely shred. Tip into a large pan with the red onion, brown sugar, cider vinegar, red wine, butter and cinnamon stick and season well. Bring to a simmer, then cover with a lid, lower the heat and cook for 1 1/ 2 hrs, stirring every so often. Remove the lid and continue cooking for 30 mins until tender. Will keep for two days, or can be frozen for two months. Reheat until piping hot.

1 tablespoon sugar
1 large yellow onion, finely chopped
kosher salt & freshly ground black pepper, to taste
1 large granny smith apple, peeled, cored, and coarsely chopped
1/3 cup port wine
1/4 cup red wine vinegar
1 large red cabbage, cored and finely shredded (about 3 lbs.)
2 cups chicken stock
1/4 cup red currant jelly

Steps:

  • Cook bacon in a large wide pot over medium-high heat until just crisp, about 5 minutes. Add sugar and cook, stirring constantly, for 30 seconds more. Add onions and salt and pepper and cook, stirring occasionally, until onions are golden and soft, about 10 minutes. Stir in apples, reduce heat to medium-low, cover, and cook until tender, 6-8 minutes.
  • Add port, vinegar, and cabbage to the onion-apple mixture; stir to combine. Cover the pot and cook until cabbage is bright purple and slightly wilted, 5-7 minutes. Add stock and salt and pepper. Increase heat to medium-high and bring to a boil. Reduce heat to medium-low, cover, and cook until cabbage is tender but still red, about 1 1⁄4 hours. Stir in red currant jelly, season with more salt and pepper, and cook briefly, 4-5 minutes more.

A comforting family supper dish of mustardy pork and fruity cabbage

500g red cabbage , finely shredded
2 ripe pears , peeled and cut into chunks
small piece fresh ginger , grated
250ml vegetable stock
2 tbsp balsamic vinegar
50g walnut , roughly chopped
450g pork fillet , trimmed of all visible fat
2 tsp olive oil
2 tsp wholegrain mustard

Steps:

  • Put the cabbage, pears, ginger, stock and vinegar into a pan. Bring to the boil, then reduce heat. Cover, then gently cook, stirring occasionally, for 40 mins. Stir in the walnuts.
  • Split the pork fillet almost in half down its length, then open out like a book. Rub on all sides with the oil and smear with mustard. Grill for 15 mins, turning once, until the pork is browned and just cooked. Cover with foil, rest for 2 mins, then slice and serve with the cabbage.

1 large red cabbage , quartered, cored and thinly sliced
1 large onion , sliced
200ml port
1 large cinnamon stick
pinch ground cloves
2 star anise
2 tbsp soft brown sugar
1 tbsp red wine vinegar
4 pears , diced

Steps:

  • Put all the ingredients except the pears in a large pan and cover with a tight- fitting lid. Cook on a low heat for 1 hr, then stir through the pears. Cover and cook for 1 hr more until the cabbage is really tender. If at any point the cabbage looks dry, add a splash of water. If there is still liquid in the pan at the end, turn the heat right up to evaporate it. Season with a little salt and serve. The cabbage can be prepared ahead and either chilled or frozen. Then reheat in the pan or in a microwave.

4 slices bacon
1 medium cabbage, sliced into rough wedges
1 tablespoon unsalted butter
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup pecans, chopped
1 teaspoon sugar
2 large garlic cloves, minced

Steps:

  • Boil the cabbage for about 10 minutes until soft but still crisp and green. Drain and keep warm. ( I usually use a large slotted spoon or strainer and just go from the pot to my skillet when I am ready for the cabbage).
  • In a large texas skillet; cook the bacon until crisp then remove to a paper towel to drain. Remove most of the bacon grease from the skillet, leaving just enough to saute the garlic.
  • Saute the garlic for about 1 minute then remove it to the paper towel with the bacon. When cool enough to handle, crumble the bacon into little pieces.
  • Add the butter to the hot skillet and allow it to melt then add the cabbage and seasonings. Stir a bit then add back the bacon and garlic plus the pecans.
  • Heat everything thru then serve.
