OAT-BRAN BREAD
I was a novice at break making when a neighbor gave me this recipe 15 years ago. Now bread making is one of my favorite things to do. This recipe won a blue ribbon at the Clackamas County Fair in 1993.

Steps:
- In a large bowl, dissolve yeast in 1/2 cup warm water. Add oil, sugar, molasses, salt, wheat germ, bran and remaining warm water; mix well. Add oats, whole wheat flour and 2 cups all-purpose flour; beat until smooth. Add enough remaining all-purpose flour to form a soft dough. Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Punch dough down and shape into four loaves. Place in a greased 8x4-in. loaf pans. Cover and let rise until doubled, about 30 minutes. Bake at 350° for 30-35 minutes. Remove from pans and cool on wire racks.

WHEAT GERM BREAD
My favorite wheat germ bread was no longer available I had to try to copy it, this is what I came up with. Its great toasted.

Steps:
- In a small measuring cup add warm water, yeast and honey, stir well,set aside for 10 minutes until foamy.
- In a skillet toast wheat germ, on medium heat for 5-8 minutes, stirring constantly, cool.
- Either in a food processor or stand mixer add flour, whole wheat flour, cornmeal, salt and cooled wheat germ.
- Add olive oil and proofed yeast mix well. Mix until a smooth ball forms.
- Take out of mixer and knead on slightly floured board (4-5 minutes).
- Put dough in a large greased bowl and cover with a clean towel.
- Let rise in a warm place for 60 minutes until double in bulk.
- Punch down and form into loaf, placing in a well greased 9x5-inch loaf pan.
- Let rise for another 30-45 minutes.
- Bake at 375°F for 25 minutes.
- Take out of oven brush with butter, let cool on wire rack.
QUICK BANANA WHEAT GERM BREAD
IF you have not prechopped your nuts and Cranberries, I would wait to preheat my oven, till that is finished. less it is cold and the extra heat is a plus. (I can be very slow.) Here in Florida, I put a much loved GE Table Top Oven outside and bake in the summers, but in the cold, I am happy to bake inside, sort of a combo of heating my home, making it smell wonderful and of course baking this quick bread. Also, I am very slow chopper of stuff, so you might be very quick.... so time to prepare is so unknown. And I do all with just a knife.... no fancy machines.

- Preheat oven to 350 Have all ingredients at about 75 F Sift before measuring: 1 1/2 C all purpose flour Resift with: 2 1/4 t double acting baking powder 1/2 t salt Add: 1/4 C wheat germ
- Blend till creamy 1/3 C shortening (I use unsalted butter) 2/3 C sugar 3/4 t grated lemon rind
- Beat in: 2 beaten eggs 1 to 1 1/4 C ripe banana pulp 1 t lemon juice
- Add the sifted ingredients in about 3 parts to the sugar mixture. Beat the batter after each addition till smooth. Fold in 1/2 C broken nuts 1/4 C finely chopped Apricots, chopped Cranberries or?
- Place the batter in a greased loaf or bread pan. Bake about 1 hour or till done. Cool before slicing.
BANANA WHEAT GERM MUFFINS
This was found on the back of Roger's Wheat Germ, but I have changed the all purpose flour to whole wheat. DS has been going through some testings for Celiac and we were told to up his fibre intake. Everyone enjoys these very much.

- Preheat oven to 375°F.
- Grease muffin tins.
- Combine whole wheat flour,wheat germ,bown sugar,baking powder,baking soda and salt, stir well.
- In another bowl blend bananas, milk, lemon juice, vegetable oil and eggs.
- Add the banana mixture to the dry ingredients and stir until just blended.
- Spoon into prepared muffin tins and bake for 20-25 minutes.

Steps:
- Preheat oven to 350. Spray 8x4" loaf pan with nonstick cooking spray. Measure 2 Tbsp wheat germ; set aside.
- Combine remaining wheat germ, flours, sugar, baking soda, baking powder and salt in large bowl. Add raisins; stir until coated. Beat buttermilk, butter and egg in small bowl until blended. Stir into flour mixture. Pour into prepared pan; sprinkle with reserved 2 Tbsp wheat germ.
- Bake 40-50 minutes or until toothpick inserted into center comes out clean. Cool in pan on wire rack 10 minutes. Remove from pan and cool 30 minutes on wire rack. Serve warm or at room temperature.

- Preheat oven to 400°F. Line 16 muffin cups with foil muffin papers. Sift first 4 ingredients into medium bowl. Mix in wheat germ. Combine bananas, milk, eggs, oil and vanilla extract in large bowl and whisk to blend. Mix in dry ingredients. Spoon batter into prepared muffin cups, dividing equally.
- Bake muffins until tops are golden brown and tester inserted into center comes out clean, about 25 minutes.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking pan.
- In a mixing bowl, beat together the peanut butter, brown sugar, and butter with an electric mixer until smooth and fluffy. Beat in the egg and vanilla extract, then the banana. Stir in the oats, flour, wheat germ, and baking soda until completely combined. Spread in prepared baking pan.

- Preheat oven to 350. Spray a 4 x 8 1/2 inch nonstick loaf pan with nonstick spray.
- With a wooden spoon, beat the sugar, and butter in a large bowl until creamy. Add the eggs, bananas, buttermilk, and vanilla; beat until combined. Combine the flour wheat germ, baking powder, baking soda, cinnamon, and salt in another bowl. Add the flour mixture to the banana mixture; stir just until blended.
- Scrape the batter into the pan. Bake until a toothpick inserted in the center comes out clean, 45-55 minutes. Cool in the pan on a rack 10 minutes, remove from the pan and cool completely on the rack.
