Steps:

  • Slice liver finely and coat with flour, slice onions ½ inch thich, chop parsley, crush garlic and preheat oven to 350℉ (180℃). Method of cookery: Brown onion in clarified butter in casserole with crushed garlic. Dot with butter, add wine, parsley, bay leaf, thyme, salt, pepper and water. Cover and bake at 350℉ (180℃) in oven for 30 minutes. 3. Shallow fry floured liver slices quickly to color only, lay them on top, cover, and bake 10 minutes at same heat, basting two or three times with red wine mixture. Remove cover, bake further 5 minutes, then serve.

Steps:

  • Season flour and coat liver. Fry in onion in oil until brown -remove to casserole dish now fry bacon lightly and place in casserole dish. Fry liver until golden brown but not cooked through. Place the liver in casserole dish. Add peas, gravy and teaspoon of dried sage. place lid on casserole dish and place in oven at 180c for one hour.

4 rashers smoked streaky bacon
2 tbsp plain flour, seasoned
pinch dried sage (optional)
6 slices lamb's livers (about 400g/14oz)
1 tbsp olive oil
1 onion, thinly sliced
300ml beef stock
2 tbsp ketchup

Steps:

  • Cook the bacon in a large non-stick frying pan until crisp. Meanwhile, mix the flour and sage, if using, and use to dust the liver. Remove bacon from the pan and set aside. Add the oil to the pan and brown the liver for about 1 min on each side. Remove from the pan, then fry the onion until softened. Stir in stock and ketchup, then bubble for 5 mins.
  • Put the liver back in the pan and cook for 3 mins until cooked through. Serve with the bacon broken over the top and some mash. (see related recipes)

1 lb beef liver
1 cup milk
3 tablespoons flour
1/2 teaspoon salt
4 tablespoons oil or 4 tablespoons bacon grease
1 onion
2 cups beef broth
2 tablespoons lemon juice
1 tablespoon sugar
1/4 cup sour cream

Steps:

  • Cut liver into 1 in strips.
  • Soak in milk for one hour.
  • Remove from milk and dredge in flour/salt mixture.
  • Saute in hot oil until browned on all sides.
  • Remove and set aside.
  • Brown onions in same pan.
  • Remove onions and set aside on top of liver.
  • Add beef broth, lemon juice and sugar to hot pan and deglaze.
  • Place liver and onion back into pan and cook for 5 minutes.
  • Turn off heat and add sour cream.
  • Serve with parsley whipped potatoes and your favorite green vegetable.

8 slices pancetta (or streaky bacon)
1 tbsp vegetable oil
500g calves' liver , sliced into 4 steaks
50g butter
small bunch sage , leaves picked, most roughly chopped
½ small bunch thyme , leaves picked
4 shallots , finely sliced
300g mixed wild or chestnut mushroom , cleaned
zest and juice ½ lemon
4 thick slices of rustic bread , toasted (preferably sourdough)

Steps:

  • Put the pancetta in a large frying pan and cook until crisp, then lift out with a slotted spoon and drain on kitchen paper. Heat the oil in the pan. Sear the liver steaks for 1-2 mins each side - so they're just still pink in the middle - using half the butter towards the end to baste the meat. Remove the liver to a plate using the slotted spoon and leave to rest, covered with foil, for 10-15 mins.
  • Add the chopped sage, thyme leaves, shallots, mushrooms and lemon zest to the pan. Fry on the highest heat for a few mins, then add the lemon juice and some seasoning. Cook for 3-5 mins until slightly saucy and the mushrooms are soft.
  • Heat the remaining butter in your smallest saucepan until just foaming. Add the remaining whole sage leaves and fry for a few mins until crisp. Drain on kitchen paper with the pancetta. Sit the liver on toast, spoon over the mushroom mixture and scatter over the pancetta and crisp sage. Serve immediately.

4 tablespoons all-purpose flour
1 teaspoon salt
1 teaspoon fresh ground black pepper
6 -8 sage leaves, finely chopped
2 tablespoons peanut oil

Steps:

  • Peel any membrane from the liver and trim out any tough ventricles.
  • Using a sharp knife, finely slice the liver about 1/2in thick, or even thinner if you prefer.
  • Mix the flour with the salt, pepper and sage. Dip the liver slices into the seasoned flour and shake off the excess.
  • Heat the oil in a large, heavy frying pan over a high heat and, when very hot, add the liver slices.
  • Cook for a minute or two on each side, depending on the thickness and how you like your liver.
  • Transfer to four warmed plates and serve with creamy mash potato.
