1/2 cup good olive oil
2 teaspoons grated lemon zest
1/4 cup plus 1 tablespoon freshly squeezed lemon juice (3 lemons)
2 tablespoons minced shallots
1 teaspoon celery seed
1/2 teaspoon celery salt
1/2 teaspoon anchovy paste
Kosher salt and freshly ground black pepper
5 cups thinly sliced celery hearts, tender leaves included, sliced on an angle (about 12 stalks)
4-ounce chunk aged Parmesan cheese
2/3 cup toasted walnuts, coarsely chopped
Whole flat-leaf parsley leaves

Steps:

  • At least 1 hour before you plan to serve the salad, whisk together the olive oil, lemon zest, 1/4 cup of lemon juice, the shallots, celery seed, celery salt, anchovy paste, 2 teaspoons salt, and 1 teaspoon pepper. Place the celery in a mixing bowl and toss it with the remaining 1 tablespoon of lemon juice and 1/2 teaspoon of salt. (Even though these ingredients are in the dressing, believe me-this step makes a difference.) Add enough dressing to moisten well. Cover and refrigerate for at least an hour to allow the celery to crisp and the flavors to develop.
  • When ready to serve, arrange the celery on a platter, shave the Parmesan onto the celery with a vegetable peeler, then sprinkle with walnuts, parsley leaves, salt, and pepper and serve immediately.

1 head celery with leaves, ribs separated
1 cup chicken broth, low-sodium canned or homemade, or water
2 tablespoons extra-virgin olive oil
8 to 12 whole cloves garlic, peeled
1/2 teaspoon celery seeds, optional
1 sprig thyme, optional
Kosher salt
Freshly ground black pepper
2 tablespoons freshly grated Parmesan

Steps:

  • Peel the tough, fibrous layers from the outer celery ribs. Split the ribs lengthwise and cut into 2 to 3-inch long pieces. Chop 2 tablespoons of the celery leaves, save the rest for other uses¿they are great in salads.
  • Put the celery, broth, olive oil, garlic, celery seeds, and thyme in a medium skillet. Season with salt and pepper. Bring the liquid to a boil over high heat, and then adjust the heat to maintain a gentle simmer. Place a circle of parchment paper directly on the vegetables or set a lid slightly ajar on the skillet. Cook until the celery is tender but not mushy, about 15 minutes. Transfer the vegetables to a serving dish, and reduce the cooking liquid to a saucy glaze. Remove the thyme sprig, and pour the cooking liquid over the celery, sprinkle with the cheese, and serve.

Steps:

  • Keeping celery ribs attached at base, peel outer ribs of celery hearts with a vegetable peeler, then trim ends and halve hearts lengthwise.
  • Melt butter in a 12-inch heavy skillet over moderate heat. Add celery and cook, turning with tongs occasionally, until pale golden on all sides, about 8 minutes. Add remaining ingredients and cook, covered, until liquid is evaporated and celery is tender and golden, about 20 minutes. Serve warm.

8 stalks celery, rinsed and trimmed, leaves chopped and reserved
1 tablespoon unsalted butter
Pinch kosher salt
Pinch freshly ground black pepper
1/2 cup good quality beef stock or broth

Steps:

  • Peel any of the fibrous outer stalks of celery with a vegetable peeler and slice into 1-inch pieces on the bias.
  • Heat the butter in a 10-inch saute pan over medium heat. Once melted, add the celery, salt and pepper and cook for 5 minutes until just beginning to soften slightly. Add the beef broth and stir to combine. Cover and reduce the heat to low. Cook until the celery is tender but not mushy, approximately 5 minutes. Uncover and allow the celery to continue to cook for an additional 5 minutes or until the liquid has been reduced to a glaze. Transfer to a serving dish and garnish with the reserved leaves.

1/2 cup dry vermouth
3 tablespoons unsalted butter, small pieces
1/4 teaspoon salt
1/4 teaspoon celery seed
1/8 teaspoon black pepper
1 head celery
2 tablespoons celery leaves, minced
2 tablespoons fresh parsley, minced
1/4 cup parmesan cheese (optional)

Steps:

  • Trim celery. Reserve leaves. Separate stalks, rinse, and remove outer fibers with a vegetable peeler. Halve each stalk lengthwise, cut on an angle into 2-inch lengths.
  • Bring 1 cup water and vermouth, butter, salt, celery seed, pepper, and celery to boil in medium saute pan, covering surface of celery with parchment or waxed paper circle. (Liquid should come about 3/4 way up the celery pieces). Reduce heat to simmer; cook until celery is tender, but not mushy, 15-20 minutes. Remove paper; stir in celery leaves. Continue to simmer until broth reduces to light glaze, 5-7 minutes. Sprinkle with parsley, adjust seasonings, and serve.
  • Glazed celery with parmesan cheese:.
  • Follow recipe for Braised Celery above, adjusting oven rack to upper middle position and heating broiler. Transfer glazed celery to ovenproof dish, sprinkle with 1/4 cup Parmesan cheese, and broil until cheese browns, 1-3 minutes.

to taste ground black pepper

Steps:

  • Clean and chop celery into 1 inch pieces.
  • Blanch the celery for 1 minute in boiling salted water.
  • Drain and place in a buttered casserole with the butter and good grinding of pepper.
  • Mix the chicken stock in the cup of boiling water until dissolved, then pour over the celery.
  • Cover and bake at 325F for 1 hour.

Braised celery has a much milder flavor than raw celery, and needs a robust, lemony sauce. I was introduced to this dish in France and I've always loved it. It's a great starter or side dish, and it keeps for a few days in the refrigerator.

3 celery hearts, cut in half lengthwise, ends trimmed
2 tablespoons extra virgin olive oil
1/2 medium onion, sliced
Kosher salt
4 garlic cloves, sliced
1 cup chicken or vegetable stock
2 tablespoons lemon juice plus 1 large lemon, sliced
1/4 cup dry white wine
Freshly ground pepper
1 tablespoon finely chopped flat-leaf parsley

Steps:

  • Preheat the oven to 400ºF. Bring a large pot of generously salted water to a boil and drop in the celery. Boil until partially cooked, about 3 minutes. Drain, pat dry and lay side by side, cut side up, in a baking dish.
  • Heat 1 tablespoon of the olive oil in medium skillet over medium heat and add the onion and 1/2 teaspoon salt. Cook, stirring, until the onion softens, about 5 minutes, and add the garlic. Stir together for a minute, until fragrant, and add the stock, lemon juice, and the wine. Bring to a boil on top of the stove and pour over the celery. Season the celery with salt and pepper and lay the lemon slices on top. Cover tightly and place in the oven. Braise for 40 minutes, or until the celery is thoroughly tender but still holds its shape. Remove from the heat and allow the celery to cool in the liquid.
  • Using tongs, remove the celery from the pot and cut the halved bunches lengthwise in half again. Transfer to a platter or a wide serving dish. Pour the liquid into a saucepan and bring to a boil. Reduce by about half. Pour over the celery. Drizzle on the remaining tablespoon of olive oil, grind on some pepper, sprinkle on the parsley and serve, or chill and serve cold or at room temperature. Spoon liquid from the platter over each portion.

1 tbsp butter
4 whole celery hearts, halved lengthways
3 carrots , chopped
4 bay leaves
few thyme sprigs
6 garlic cloves , skin left on
600ml fresh chicken stock
1 chicken , weighing 1.5kg/3lb 5oz
small bunch parsley , chopped

Steps:

  • Heat oven to 200C/180C fan/gas 6. Heat the butter in a large shallow ovenproof casserole dish and fry the celery and carrots on a medium heat for 4-5 mins. Add the bay, thyme, garlic and seasoning, then pour over the stock. Bring to a simmer, then turn off the heat.
  • Sit the chicken in the dish, nestling it into the veg. Season well, transfer to the oven and roast for 1 hr 40 mins until the skin is golden. Remove to a board to rest for 20 mins.
  • To serve, reheat the celery and sauce, scatter with parsley and tip into a serving dish. Carve the chicken into portions and serve on a board with the celery for everyone to help themselves.

  • Heat the oven to 350 degrees. Butter a medium (about 12-inch-by-9-inch) gratin dish. If using whole celery bunches, remove the tough outer stalks and trim the dark, dried out parts of the base, leaving enough of the base that the stalks will hold together. Trim the tops so the bunch is about 5 to 6 inches long; set the trimmed tops aside for another use.
  • Blanch the celery hearts in a big pot of simmering, well-salted water for 10 minutes. Don't let the water boil too hard, or the celery will start to break apart.
  • Cut the leek in quarters lengthwise, leaving it attached at the base, and rinse away any sand under cold running water. Slice the leek finely into crosswise strips and scatter across the bottom of a well-buttered gratin dish.
  • When the celery hearts are cool enough to handle, cut each bunch in half lengthwise and arrange in the gratin dish. Pour over the stock. If necessary to thoroughly moisten the leeks add a little more stock or water (the leeks should be moist but not swimming in liquid; the celery should be mostly above the liquid). Season with three-fourths teaspoon salt, or to taste.
