Coconut Chicken Curry with Potatoes image

This coconut chicken curry with potatoes is made from scratch in the Pakistani & North Indian style and uses coconut milk to give it a korma-like finish. This recipe uses clean, wholesome ingredients and good-for-you spices that you likely have on hand!

1 lb boneless chicken breasts or thighs (cut into 1"cubes)
2 tbsp refined coconut oil or other neutral oil
1/2 tsp cumin seeds
1 small cinnamon stick
2 green cardamom pods (optional)
1 medium yellow onion (finely chopped)
5 cloves garlic (crushed)
1/2 inch piece of ginger (crushed)
1 green chili pepper (slit in half lengthwise)
1 medium tomato (roughly chopped)
1 medium to large russet potato (peeled and cubed into 1" cubes)
1 green bell pepper (cubed)
1 tsp coriander powder
1/2 tsp cumin powder
1/2 tsp turmeric powder
1/4 tsp black pepper
1/4 - 1 tsp red chilli flakes (1/4 will be mild)
1 1/2 tsp kosher salt (or to taste)
1 14-oz can unsweetened full fat coconut milk
1/4 cup plain whole milk yogurt
2 tbsp cilantro leaves (chopped)

Steps:

  • Heat a large non-stick sauté pan over medium-high heat and add the oil. Once hot, add the whole cumin seeds, cinnamon stick, and cardamom pods, if using. Let these spices sizzle and immediately add the onions. Sauté until lightly browned, about 7-8 minutes. If needed, deglaze the pan with 1-2 tbsp of water and allow the water to evaporate.
  • Add the garlic and ginger and cook for 30 seconds or until the raw smell disappears. Add the green chili pepper, tomatoes and sauté for 2-3 minutes until the tomatoes become soft. Add the potato, green bell pepper, spice powders (coriander, cumin, turmeric, black pepper, and red chili flakes), and salt and stir.
  • Increase the heat to high. Add the chicken and stir-fry for 3-4 minutes or until the chicken changes color. Add the coconut milk and yogurt and bring the mixture to a light boil.
  • Lower the heat to low-medium, cover and allow to simmer for 15-16 minutes, or until the chicken is tender and vegetables are cooked through. Uncover and raise the heat to allow the sauce to thicken for 2-3 minutes, if desired.
  • Taste and adjust salt and seasoning. Garnish with chopped cilantro and serve with white basmati rice.

2 teaspoons cumin seed
1 teaspoon coriander seed
1 teaspoon ground turmeric
1/2 teaspoon ground fenugreek
1/4 cup vegetable oil
4 whole cloves
4 green cardamom pods
1 cinnamon stick
2 medium onions, chopped (1 cup)
2 tablespoons grated gingerroot
4 cloves garlic, finely chopped
2 dried bay leaves
1 jalapeño chile, seeded and finely chopped
1 cup canned coconut milk (not cream of coconut)
8 boneless skinless chicken thighs (2 lb)
3 medium Yukon Gold potatoes (1 lb), cut into 1 1/2-inch chunks
1 can (14.5 oz) diced tomatoes, undrained
1 1/2 teaspoons salt
2 cups packed fresh spinach leaves

Steps:

  • In 8-inch skillet, heat cumin and coriander seed over medium-high heat 5 minutes, stirring constantly, until fragrant and some seed pops. Remove seed from skillet to a plate and cool completely.
  • In spice or coffee grinder (used for grinding spices only), grind roasted seed to a fine powder. (If you don't have a grinder, place seed in resealable plastic food-storage bag and pound with flat side of meat mallet; mixture will be not as finely ground but will still be delicious.) Stir in turmeric and fenugreek; set aside.
  • In 12-inch skillet, heat oil over medium-high heat until shimmering and hot. Add cloves, cardamom pods and cinnamon stick. Cook 4 minutes, stirring occasionally, until cinnamon stick uncurls. Use slotted spoon to remove spices from oil; discard spices.
  • Add onions to oil and, stirring occasionally, until soft and slightly brown. Add gingerroot, garlic, bay leaves and chile and cook 3 minutes. Add coconut milk, chicken, potatoes, tomatoes, dry spice blend and salt. Reduce heat to medium. Cover and simmer 25 to 35 minutes or until potatoes are tender and juice of chicken is no longer pink when center of thickest part is cut (180°F). Remove and discard bay leaves.
  • Simmer uncovered 5 minutes longer to reduce sauce a bit. Add spinach and cook uncovered 1 minute or just until spinach is wilted.

One-Pot Braised Chicken With Coconut Milk, Tomato and Ginger image

Bone-in chicken thighs are a favorite go-to for weeknight meals, as they cook relatively quickly, are versatile and impart a lot of flavor in a short amount of time. Here, they are browned, then braised in a fragrant tomato-coconut broth flecked with ginger, garlic, cumin and cinnamon. The result is a rich, stew-like dish, which works nicely served over white rice. By cooking the rice as the chicken finishes braising, you can get everything on the table at the same time. A good squeeze of lime is not required, but it does give the dish a bright finish. Serve any remaining sauce at the table, with crusty bread for sopping.

1 1/2 to 2 pounds bone-in, skin-on chicken thighs, at room temperature
Kosher salt and black pepper
2 tablespoons grapeseed or canola oil
1 medium red onion, thinly sliced
3 garlic cloves, finely chopped
1 (2-inch) piece fresh ginger, peeled and finely chopped
1 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1/2 teaspoon red-pepper flakes
1 (14-ounce) can cherry or diced tomatoes with their juices
1 (13-ounce) can full-fat coconut milk
Steamed white rice, for serving (optional)
3 tablespoons roughly chopped cilantro
1 lime, quartered, for serving (optional)

Steps:

  • Pat chicken thighs dry and season with salt and pepper. In a deep 12-inch skillet, heat the oil over medium-high. When the oil shimmers, add the chicken thighs, skin-side down, and cook, undisturbed, until nicely browned, 5 to 6 minutes. Flip and brown the other side, 4 to 5 minutes more. Transfer to a plate and set aside.
  • Turn heat to medium-low, add the onion and cook until softened, 2 to 3 minutes. Add the garlic, ginger, cumin, cinnamon and red-pepper flakes, and cook until the garlic and the spices are fragrant, about 1 minute. Season with salt.
  • Add the tomatoes with their juices and the coconut milk, and stir until combined, scraping up any brown bits that have formed at the bottom of the pan. Nestle the chicken back into the skillet along with any juices that have accumulated. Simmer, uncovered, until the chicken is cooked through and the sauce has thickened slightly, 15 to 20 minutes. Season to taste with salt and pepper.
  • Divide the rice, if using, among bowls and plate the chicken on top, spooning additional sauce over it. Scatter with cilantro and a squeeze of lime, if you like.

I used to think the only reason to buy a whole chicken was to actually cook it whole. Why buy one for a recipe calling for parts when the supermarket will cut up the bird for you? Then one day my mother set me straight. It's one thing to buy a package of thighs or drumsticks when you need a specific part, but you might as well cut up your own bird if you need a variety. You can use your cut-up chicken to make this ginger-and-lime-scented curry with coconut milk, sweet potatoes and chiles. Or substitute your favorite part, be it wings or legs or bone-in breasts. The bright, spicy and gently sweet flavors work well with any pieces of fowl in the pot. When the chicken in this recipe is nearly done braising, you can fry up the liver, then coat it in some of the luscious sauce. If your mother is anything like mine, she'd be proud.

1 (3 1/2 pound) whole chicken, cut into 8 pieces
2 1/2 teaspoons kosher salt, more as needed
Black pepper, as needed
2 tablespoons peanut, safflower or vegetable oil
1/4 cup finely chopped scallion
1 1/2 inches fresh ginger, peeled and grated (1 1/2 tablespoons)
3 garlic cloves, finely chopped
1 to 2 jalapeno or Serrano chiles, to taste, seeded and finely chopped
2 tablespoons red curry paste
1 (15 1/2-ounce) can coconut milk
2 medium sweet potatoes (1 pound), peeled and cut into 1 1/2-inch chunks
3/4 cup coconut flakes
1 tablespoon black or brown mustard seeds
Fresh cilantro leaves
Lime wedges

Steps:

  • Heat oven to 325 degrees. Pat chicken dry with paper towels and season with salt and pepper.
  • Heat a large Dutch oven over medium-high heat. Add oil. Brown chicken pieces, in batches if necessary, until golden all over, 6 to 8 minutes per batch. Transfer chicken to a plate.
  • Stir scallion, ginger, garlic and chiles into pot and reduce heat to medium. Cook, stirring, until soft, 1 to 2 minutes. Stir in curry paste and cook 1 minute. Stir in coconut milk and sweet potatoes. Arrange chicken pieces on top of potatoes, placing breast meat on top. Pour in enough water to come halfway up the sides of chicken. Bring to a boil. Cover pot and transfer to oven. Bake until chicken is cooked through, about 40 minutes.
  • Meanwhile, in a large dry skillet over medium heat, toast coconut flakes until golden, 2 to 3 minutes. Add mustard seeds and toast until they begin to pop, 1 minute more. Transfer to a bowl and season with a pinch of salt.
  • Transfer chicken and sweet potatoes to a platter. Return Dutch oven to the stove and simmer over medium-high heat until cooking liquid has thickened to a saucelike consistency, 5 to 10 minutes. Pour over chicken and potatoes. Sprinkle with the coconut and mustard seed mixture and cilantro. Serve with lime wedges for squeezing.

  • Preheat oven to 300°. Pat 6 bone-in, skin-on chicken thighs dry with paper towels. Moisture is the enemy of well-browned meat, so it's super important to get them as dry as possible before searing them. Season generously on all sides with 1 Tbsp. salt.
  • Okay, this is going to seem a little bit out there, but trust us: It works. Place a cold, dry large Dutch oven on the stove—no heat yet! Nestle all of your chicken thighs in there, skin side down, so that there is as much skin-to-pan contact as possible (it's fine if they're crowded together). As the pan becomes hotter and hotter, the skin will start to release some of its fat and then get extra crispy and brown, a process that will probably take around 15–20 minutes.
